Standardization (Fat-3.3%, SNF-11.5%)

Homogenization

Heat treatment (90°C and holding for 10 min)

Cooling to 42-45°C

Transfer to inoculation tank

Addition of culture ( Delvo culture @10.5g for 300L of milk)

Filling and Sealing in cups, pouches or Bucket as per needed

Transfer to incubation room (temp-42-45°C for 5-6 hr)

Q.A Testing (Acidity test : Range for acidity of dahi is: 0.6-0.8% of
Lactic acid)

As soon as pH is achieved , transfer to product cold room(4°C)

• In Medha dairy paneer is packed in vacuum packaging
machine at 0.9 bar

• Vacuum packing is a food preservation technique that


involves removing air from the pack before sealing the
product in the low-oxygen permeability pack.
Refrigeration
• Refrigeration is a process of lowering the temperature of a
substance less than that of its surroundings.

• Capacity of refrigeration is expressed in ton

• A ton of refrigeration is defined as the quantity of heat to


be removed in order to form 1 ton of ice at zero degree
Celsius in 24 hours

• Ammonia 717 (R-717) act as refrigerant


Refrigeration
Working- It works on Vapor Recompression cycle

Component of refrigeration cycle

1. Evaporator- It convert vapour refrigerant at low pressure and


temperature from liquid refrigerant
2. Compressor-It converts low pressure and temperature
refrigerant from evaporator to high pressure and high
temperature
3. Condenser-It consist of coils of pipe which the high pressure
and temperature vapor refrigerant is cooled and condensed
4. Receiver-The condensed liquid refrigerant from the condenser
is stored in a vessel known as receiver
5. Expansion valve-It control the flow rate of refrigerant
BOILER
Boiler is a closed vessel in which the heat produced by the combustion of fuel is transferred to
water for its conversion into steam at the desired temperature and pressure
Boiler accessories and mountings function
1. Feed pump: Its is a pump which is used to deliver feed water to the boiler.

2. Injector: The function of an injector is to feed water into the boiler.

3. Economizer: economizer is a device in which the waste heat of the flue gases is utilized for heating
the feed water

4. Air preheater: The function of the air pre-heater is to increase the temperature of air before it enters
the furnace. It is generally placed after the economizer.

5. ID Fan: to draw out and remove flue gases from combustion chambers

6. FD Fan: Forced Draft Fan pushes air into the furnace for combustion

7. Mechanical dust collector: equipment which extract dust from the boiler & retains dust particle
inside the dust collector and lets clean air left to the atmosphere
BOILER

• Capacity- 2 ton (2 boilers each)
• 3.5 kg /cm square is used in the plant
• PRS (Pressure Reduction Valve) reduces steam
pressure 7 kg/cm sq. to 3.5 kg/cm sq.

Efficiency of Boiler
Efficiency of a boiler may be defined as the ratio of heat utilized
for the generation of steam to heat supplied due to the burning
of fuel.
