• Ecology Unit shall consist of Kitchen Extract Fan, double stage pre filter, double pass electrostatic precipitator (ESP), ultra violet (UV),
odour control unit, carbon filter & bag & hepa filter are optional.
• Tenant is to required design , supply, install , commissioning , balancing and testing of the Kitchen extract Fan and system.
• Backward inclined Belt Driven SISW Centrifugal with motor, belts etc. out of air stream especially configured for food service
applications. Fan shall in accordance with be UL705 & UL 762 & NFPA96 for kitchen applications and rated to 400 0F. All steel fan
components shall be epoxy coated and suitable for outdoor installation. Motor insulation classification shall be Class H. Fan shall be
supplied pre-wired weather proof junction box, grease collector , Ventilated curbs, integral galvanized Curb cap, Fully welded inlet
box, Vented Weather Cover, High temperature Sealant Provided between Scroll casing and sides, grease collection box, curb cap
mounting base and Disconnect switch Box.
• Fan shall also be AMCA certified. Static pressure drop calculations based on shop drawings shall be submitted by Contractor for
approval. The above Fan shall meet commercial kitchen application (Grease) and construction shall be as NFPA 96 . Fan shall be
selected for grease removal must include a weather hood, bolted access door and 25mm drain connection. An out let guard is
strongly recommended, an up blast discharge is recommended. The fan discharge must be a minimum of 1016 mm above the roof
line . Fan out let velocity to limit to 10.5 m/s, select efficiency at 70 to 80%Tenant has to provide 1 working and 1 stand by fan. Use
fire rated flexible connection between Fan and extract duct.
• Total static pressure (TSP) for Kitchen Extract Fan shall be minimum 1250 Pa and tenant is required to submit TSP calculations for
approval , if as site conditions TSP is required more than 1250 pa, the highest TSP shall be considered to select the kitchen extract
fan.
• Kitchen Extract Fan Shall be mounted on vibration spring isolator rated with Fan load and sufficient deflection.
• The Tenant is responsible for providing a purpose-made, proprietary Double-skin (Combination) canopies operate by combining
extract with supply to improve performance of the ventilation. kitchen exhaust canopy of reputable manufacturers, such as
Halton, Gaylord, Vianen International, Greenheck , Cantech or equal approved type. Locally manufactured Hoods are prohibited.
• The location, size and design of the canopy must be determined by a specialist. The following Landlord’s specifications apply
• Canopies are to be designed and installed in accordance with the applicable NFPA, ASHRAE and HVCA standard DW171 codes.
Where the codes conflict, the higher specification will apply.
• Canopy to include stainless steel Cyclonic / high performance baffle type grease filter (Primary and secondary filters are mandatory)
UL/ ULC classified.
• Canopies shall have fresh air make up air plenum with all around sufficient thickness acoustic lining and plenum front face finished
with perforated diffusers to have a minimum face velocity of 0. 50 m /s
• Canopies must be inclusive of a grease eradication prevention system, being either, UV lights with / without hot water wash system
with UV lights or ESP , UV & Carbon filters with / without hot water system in line within the localized ductwork
• Tenants may not install any supplementary extract fans
• A maximum pressure drop across the canopy and filter of 250 Pa, but the pressure drop added to the system by the Tenant’s Works
must not exceed 450 Pa (Including hood pressure drop , ducting , VCD and etc.
• Canopy to be selected by specialist.
Charcoal Cooking
• Tenants who cook with charcoal, will be permitted to do so only on condition that the Landlord is fully satisfied with both the
Tenant’s ventilation design and operational plan for storing, handling and disposing of hot charcoals.
• The following additional technical specifications apply:
• High performance type hood complete with odor control , spark arrestors by specialist for heavy duty application
• Combined Kitchen extract Hood incorporating water wash with a cold water mist arrangement provided in the kitchen extract
duct work down stream of the kitchen hood.
• Moisture separator and condensate drainage piping with stain less (SS) tray shall be installed in the Kitchen duct work.
• Velocity at across the canopy shall not exceed 2.5 m/s and Canopies shall have fresh air make up air plenum with all around
sufficient thickness acoustic lining and plenum front face finished with perforated diffusers to have a minimum face velocity of
0.60 m/s.
Charcoal used shall be of good quality and suitable for supplied hood.
• A maximum pressure drop across the canopy and filter of 250 Pa, but the pressure drop added to the system by the Tenant’s Works
must not exceed 450 Pa (Including hood pressure drop , ducting , VCD and etc.
• Hood Manufacturer shall submit the following documents.
• Hood extract calculation sheets, Shop drawing of the kitchen hood drawings with hood dimensions, extract / make up air stub out
sizes , face velocity across the grease / canopy and velocity and free are a of front face perforated diffuser and etc.
System Description:
• The system shall be an automatic fire suppression system using wet chemical agent grease related fires.
• The system shall be capable of suppressing fires in the following areas associated with cooking equipment : ventilating
equipment including hoods, ducts, plenums and filters; fryers; griddles and range tops; upright, natural charcoal or chain
type broilers; electric, lava rock, mesquite or gas radiant char - broilers
• The system shall be the pre-engineered type having minimum and maximum guidelines established by the manufacturer and
listed by Underwriters Laboratories Inc., (UL).
Wet Chemical Agent:
• The extinguishing agent shall be specially formulated, aqueous solution of organic salts with a pH range between 7.8 - 8.2,
designed for flame knockdown and foam securement of grease related fires.
Distribution piping:
• Distribution piping shall be schedule 40 black iron, chrome plated or stainless steel pipe conforming to ASTM A 120 A 53
or A 106.
Detectors
• The Detectors shall be the fusible link style designed to separate at a specific temperature.
• Cartridges:
• The cartridge shall be a sealed steel pressure vessel containing either carbon dioxide or nitrogen gas. The cartridge seal
shall be designed to punctured by the releasing device supplying the required pressure to expel wet chemical agent
from the storage tank.
Discharge Nozzles
• Each discharge nozzle shall be tested and listed with the R-102 System for a specific application. Nozzle tips shall be
stamped with the flow number designation (1/2, 1, 2 and 3). Each nozzle shall have a metal or rubber blow-off cap to
keep the nozzle tip orifice free of cooking grease build-up.
Regulated Release Mechanism
• The regulated release mechanism shall be a spring loaded, mechanical/pneumatic type capable of providing the expellant gas
supply to one or two agents tanks depending on the capacity of the gas cartridge used. It shall contain a factory installed
regulator deadest at 100 PSI (6.9 Bar) with an internal relief of approximately 145 psi (10.0 bar).
• It shall have the following actuation capabilities: Automatic actuation by a fusible link detection system and remote manual
actuation by a mechanical pull station.
• The DX Ducted split air-conditioning comprising external condensing unit with internal fan coils, interconnection copper pipe
work with weather proof insulation, control, power supplies etc.
• System to have its own control.
• Condensate pipe work to be connected to the nearest drainage stack within the unit.
• Temperature is be controlled (within Design limits) through wall mounted thermostats.
• The use of R22 as a refrigerant is unacceptable in this development. Acceptable refrigerants R410A.
• Scroll type compressor to be used condensing unit. Rotary and Reciprocating Compressors are unacceptable.
• All copper piping to be insulated with elastomeric insulation Aluminium 32mm thick thickness elastomeric insulation and
finished with Aluminium cladding.
• Weather proof isolator to be installed at roof for condensing unit.
• Land lord encourages to Use VRF (VRV) (Variable Refrigerant flow system ) .

• Luminaires shall be rigidly constructed in corrosion-proof materials and designed not to distort when suspended or installed.
•
• Lamp holders shall be formed of insulated high temperature mouldings rigidly mounted on the luminaire body.
•
• The cable terminations shall be fixed in the lamp holder in such a way that the plunger contacts maintain free movement and no
strain is placed on the cables.
•
• All joints shall be thoroughly filled and finished flush and smooth and the metalwork shall be etched, two coat primed and two coat
finished to the color required. All low-pressure discharge luminaires shall be finished pure white internally.
•
• All luminaires shall be supplied incorporating full provision for support, located in the appropriate places and allowing full
adjustment of mounting, compressing, fusing holes, brackets as most suitable.
•
• The luminaire enclosures shall permit full access to a component for maintenance through purpose incorporated quickly detachable
disassembly means, without unnecessarily disturbing other components and without the removal of the luminaire or adjacent
finishes.
•
• Each luminaire shall incorporate provision for circuit cable and conduit entry comprising an entry standardized to BS 4568 and
25mm conduit piercing, made in the centre of the luminaire or control box back, singly for square luminaires, but dual in-line for
linear luminaires.
•
• Luminaires for mounting on suspended ceiling shall have their entries together on a detachable plate mounting the main terminal
block such that each luminaire can be readily detached without disturbing the looping-in circuit wiring system. A plug and socket
system shall be used for this purpose.
