Proper digestion, absorption, and metabolism take place in the body because of the liver, gallbladder,
and pancreases. Any disorder or injury to these organs may have a great impact on one’s health.
I. OBJECTIVES
Disorder of the liver, gallbladder, or pancreas may greatly affect to the nutritional status of
an individual. It is important to emphasizes the medical nutrition therapy as part of the
treatment of any disorder affecting these organs.
At the end of the 3-hour laboratory session, you should be bale to:
1. Identify food items allowed to those who have disorders of the liver, gallbladder, and
pancreas; and
2. Plan and prepare meals for patient with disease of the liver, gallbladder, and pancreas.
II. PROCEDURES
Group 1 and 2: Case 1. Hepatitis
Group 2 and 3: Case 2. Carbohydrates
Group 4 and 5: Case 3. Cystic Fibrosis

Seafood Basil Baked Tilapia Place the fillet over the basil and
put on a preheated oven for 12
minutes. Serve at once.
Vegetable Broccoli with cheese sauce Half bowl. Less oil. Must be pure
vegetables. Add cheese for extra
calories.
Rice Chinese Fried Rice 1 cup of cheese fried rice. Sprinkle
with sesame seeds, green onions
and drizzle with 2-3 tablespoons
of teriyaki sauce.
