 This is an Open book assessment which you will do in your own time but complete in the time designated by your
assessor. Remember, that it must be your own work and if you use other sources then you must reference these

Assessment Task 1: Instruction

Performance objective

For this task, you will demonstrate the skills and knowledge required to establish and maintain a WHS
management system.

Assessment description

The purpose of this assessment is to assess your underpinning knowledge to complete the tasks outlined
in the elements and performance criteria for this unit of competency and relating to the following aspects:
 personal and professional reasons for maintaining personal hygiene in hospitality service
environments:
o reduction of and healing from personal illness
o optimal health and sense of well being
o social acceptance
o prevention of spread of illness to others
o maintenance of organisational image and service standards
 personal hygiene practices to care for personal health and wellbeing prior to and during service
periods:
o bathing or showering
o brushing and flossing teeth; using mouthwash
o cutting or manicuring fingernails
o treating skin allergies, conditions, or wounds
o using deodorant and washing clothes regularly
o washing hands or using hand sanitiserregularly
o washing scalp and hair
o wearing clean clothing and personal protective equipment
 meaning of:
o airborne diseases
o infectious diseases
 ways of transferring microorganisms and spreading airborne and infectious diseases and illness
to self and others:
o blowing nose, coughing, spitting, or sneezing
o drinking
o scratching skin and hair
o touching wounds

Procedure

Question 1

You are cleaning a guest room. When you pick up the used guest towels from the floor your uniform
comes into contact with a towel with blood stains.

What should you do?

If such things happen then I should be first calm and cool down and should control the situation
without panic. I should immediately inform to my superior or housekeeping manager about the
situation properly. I should also help to investigate the truth of the situation with my supervisor or
housekeeping manager. I should clean my all uniform and change my uniform and should continue my
work .

Question 2
You and your new colleague Mary-Lou have finished cleaning a guest room. During the final inspection of
the room Mary-Lou notices smear marks on the lounge table. She fetches a used guest towel from the
trolley and polishes the table. You tell Mary-Lou that this is a hygiene risk and the table needs to be
cleaned and sanitised correctly but she ignores you.

What is the risk here? What is your responsibility in this instance?

During the final inspection of the room, lounge table should be clean and wipe with the fresh and
clean towel .once the towel is used it should be sent to the laundry immediately for cleaning because
used towels becomes dirty and it contains lots of germs and bacteria which are very harmful and risky
for the health of both staff and guest .although it also affect the entire environment of hotel.

My responsibilities will be I should suggest my new colleague not doing such things with the
consequences arrive from that kind of things .I should tell her about the health and sanitation, food
poising, may occur to the both staff and guest if we do such things .If she still ignore me even I
suggest then I should complain to manager or supervisor about the bad things she is doing.

Question 3

Whilst you are working in the reception area you notice Timothy the porter moving luggage through the
foyer. He seems to have a heavy cold and sneezes frequently into the sleeve of his uniform and coughs
without protecting his mouth. A guest approaches reception and complains that this is the worst hygiene
practice he has ever witnessed from hotel staff and that he will not consider booking at this hotel again in
the future.

What should Timothy have done before the start of his shift?

IF such an unhygienic things done by timothy that is common things guest will behave like that way.
Timothy should be aware of his own health first. If he is not feeling well he should take a leave by
telling to his supervisor about the health condition of him. He should go for the check up at hospital or
clinic wherever suitable for himself after that he should take rest at home and should take care of his
heath with consolation of doctor or health assistant where he had gone to check up. Then he should re-
join the duty only being healthy.

What are the potential risks from Timothy’s actions?

There will be many risks not only for guest appearing there also the all the staffs will at risk of their
health. If such things happening the germs and bacteria will catch the all the others staff and guest
too .Then there will be high risk in communicable diseases. That will affect not only guest, staff but
also affect entire the environment of the hotel.

Mr and Mrs Donaldson enter a busy restaurant to enquire about a table for 2. Whilst the staff member is
talking to them she frequently touches her face and moves hair strands out of her face. They notice that
her finger nails are very dirty and she has a strong body odour smell. At this moment a waiter approaches
the staff member at reception to confirm a table for 4 guests which have just arrived. Mr and Mrs
Donaldson take this opportunity to turn around and leave the restaurant quickly.

Why did Mr and Mrs Donaldson leave the restaurant?

Mr and Mrs Donaldson leave the restaurant because the staff member's finger nails are very dirty and
she has also strong body odour smell. From that its shows the restaurant are unhygienic and serving
food like that. It also shows that there is no cleaning and hygienic behaviour and habit in the staff
restaurant .This is the reason Mr and Mrs Donaldson leave the restaurant.

restaurant?

From that its shows the restaurant are unhygienic and serving food like that. It also shows that there is
no cleaning and hygienic behaviour and habit in the staff restaurant. They indicates very unhygienic
procedure in the restaurant. They will be very disappointed by observing that kind of unhygienic
behaviour and habit of staff and restaurant.

You have been on annual leave. During your absence a new staff member, John, has been employed.
You noticed that he is often unshaven, his hair seems greasy and his body odour is quite strong. Many of
your colleagues strive to avoid working on the same station as John.

How is John’s social acceptance affected?

John's physical appearance had a direct impact on the impression that the visitor would get. He should
have a pleasing appearance and be well-kept. He needs to keep up with keeping his hair looking
beautiful and smelling well. If he is untidy and smells terrible, it may affect his relationships with guests
and other hotel personnel, who may find it difficult to work with him.

Question 6

A guest orders some beverages and snacks from the menu. You process the order and send the food
order to the kitchen. Meanwhile you prepare the beverages. When you deliver the order to the table the
guests reject the order as they have noticed that a Band-Aid you wear on your right thumb looks like it is
seeping.

What procedures should you have followed in order to prevent this incident?

Whatever the cause, if I discover it was my error, I should say I'm sorry right away and promise to make
it right in front of the visitors. Additionally, I shouldn't push the visitor. My main responsibility as a
server is to effectively serve customers and stay on target. After some time, it will be feasible to create
the right solution.

What potential hygiene problems could have occurred as a result of this?

If such things occur, he should be cautious with his bandage and immediately put on a new one
because the germs and bacteria on his thumb could infect not only visitors but also other staff
members. He should therefore tend to this thumb's injury case the bandage comes off due to frequent
hand washing, replacing it till the wound has healed.

It can result in a lengthier or more severe disruption of business operations or services in


hotel, negatively affecting data security, information systems, personnel, clients, or other crucial
business operations of the hotel's service organization. There shouldn't be any negligence. Every
employee should be exceedingly intelligent and keen. They should keep the hotel's surroundings and
themselves clean. That contributes to keeping regular business operations and retaining happy
customers.
