Healthy Breakfast Recipes

1. Sunshine OATMEAL
Ingredients
- Oats
- Maple Syrup/ Honey

Toppings :
- Almond slice
- Coconut flakes
- Chia seeds
- Cinnamon/greek yoghurt
- Orange/Lemon zest or rind
- Strawberries
- Bananas
- Mango
- Blueberries

2. Gluten-free Pancakes
Ingredients
Gluten-Free Chocolate Pancakes
- 1.5 cups all-purpose gluten-free
flour blend
- 1/2 cup raw cacao powder
- 1.5 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons coconut sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups non-dairy milk

Chocolate Syrup Garnish:


- 1/2 cup melted dark chocolate - strawberries
- 1/2 cup maple syrup - blueberries
- 1 teaspoon espresso powder (optional) - caster sugar
3. Pan fried Egg-spinach
Ingredients
- 2 whisked eggs
- 100/200g of Spinach
- Mushroom slices

Spices
- Salt and pepper
- Cayenne/garlic powder

4. Ultimate Omelette
Ingredients
- 2/3 eggs
- Chopped bell peppers
- Chopped serrano or jalapeno or green chili
- Chopped onion and red onion
- Juicy tomato slices

Variation
- Salt & black pepper to taste
- Mushroom slices
- Ham cubes/slices
- Fried potato wedges as a side-dish
- 1 tbsp milk
- Crumbled goat/parmesan/ feta cheese
- Hot sauce (optional)
- Parsley and coriander

Tips
- Beat the eggs/ use a mixer for fluffy texture
