OPENING CEREMONY
We’d like to extend a special welcome to our keynote speakers and panel
speakers from Switzerland (Mr. Victor Jaton), from Georgia (Chef Elahe
Forghani), from Malaysia (Mr. Patrick Daya), from Australia (Dr. Noel Scott)
and of course from the Philippines (Dr. Alvin Nuqui). Let us all give them a
warm virtual applause.
Just a little reminder about our house rules before we get started.

WELCOME MESSAGE
Host 1 (AR): Thank you very much Dean Prime for your kind and warm
welcome message. Without further ado, let us again listen to our very own
Dean of the Hospitality Management, Dean Prime for the presentation of
delegates.
Host 2 (JV): To introduce our 1st Keynote Speaker it will be initiate by Dr.
Leonardo O. Munalim, Dean and Director of Research and Development
Office, Philippine Women’s University.
Dr. Leonard O. Munalim: Thank you Mr. Villacrucis. Our 1st Keynote Speaker
is Adjunct Professor of Tourism Management, in the Sustainable Research
Centre, University of Sunshine Coast, Queensland, Australia. His research
interests include the study of tourism experiences and destination
management and marketing. He is a frequent speaker at academic and
industry conferences. He has over 300 academic publications including 17
books. He has supervised 30 doctoral students to successful completion of
their theses. He is on the Editorial Board of 10 journals, a member of the
International Association of China Tourism Scholars and a Fellow of the
Council for Australasian Tourism and Hospitality Education. It is my
pleasure to welcome, DR. NOEL SCOTT to present “Tourism and
Hospitality and Research Trends Emerging from the Covid-19
Pandemic.
Let us call on Dr. Ephraimuel Jose - Abellana and Ms. Georgina Bejar to
award the Plaque of Recognition to Dr. Noel Scott for taking part on this

Host 2 (JV): Now, let us pay our attention to our 2nd Keynote Speaker to be
introduce by Dr. Ephraimuel Jose – Abellana.
Dean Abellana: Thank you Mr. Villacrucis. Our 2nd Keynote Speaker is the
current District Supervisor of Department of Education in Region 3-Malolos
City, Bulacan. He is a Professorial Lecturer in Graduate School, Consultant
and He is also connected to different professional affiliations one of which is
being a PACUCOA Accreditor. He is also a frequent keynote speaker and
organizer of academic and industry conferences. He was awarded as the
Outstanding Asian Researcher by the Philippine Association of Institutions
for Research Inc. in September 2019 and a recipient of Gawad Dangal ng
Lipi 2017 sa Larangan ng Edukasyon by the Provincial Government of
Bulacan in September 2017. He was able to present his paper not only here
in the Philippines but also in other countries. He provides schools and
learning centers in a district with relevant and timely service through the
conduct of instructional supervision; provision of technical assistance in
school management and curriculum implementation; establishing a
conducive physical environment for learners and school workers; sustaining
strong and harmonious partnerships and collaboration among stakeholders
in order to improve access to and delivery of quality basic education; and
providing technical assistance in improving the schools’ research culture. He
has a total of 65 International Research Publications and Citations. It is an
honor to welcome Dr. Alvin Nuqui to present “Research Best Practices
and Ethics in the Advancement of the Digital World”.

presentation about the research best practices and ethics in the digital world.

Host 2 (JV): After hearing invaluable information from our (2) keynote
speakers, let us now listen and pay attention to Mr. Jason Santos for the
synthesis of this morning session of this 1st SHM International Research
Conference.
Host 1 (AR): Thank you very much Mr. Santos for that comprehensive and
well delivered synthesis of today’s morning session. This morning’s
presentation was truly filled with renewed research ideas and practices and
would surely be beneficial to everyone.

Host 1 (PQ): Good afternoon ladies and gentlemen. Now, we are back for
the continuation of today’s 1st SHM International Research Conference
Event 2021 entitled “BREAKING BARRIERS: Surviving to thrive through
Research Innovation, Synergism of Trends, Challenges and Agility” here at
Philippine Women’s University organized by Master of Science in Hotel and
Restaurant Management Students.
Host 1 (PQ): To introduce our 1st Panel Speaker, let us hear it from Ms. Jezza
Duazo, Master of Science in Hotel and Restaurant Management Student.
Ms. Jezza Duazo: Thank you Ms. Quinto. Our 1st Panel Speaker was
awarded a Professional Master’s in Hospitality and Tourism by the University
of Toulouse, France. He earned a certification “train the trainer program
organized by HRDF Malaysia in 2019. He co-authored a book named
“Essentials to Food & Beverage Operations in 2014. He was able to present
his papers in Thailand in 2013 and in Taiwan in 2014. He was also a frequent
resource speaker in the academic and hospitality industry. His journey into
this Industry began back in 1987 with Hyatt Kuantan. After completing his
SPM, He worked on a part time basis before being offered the opportunity to
join the School Leavers Apprentice Program. He was trained in all operations
and support departments including Management. Due to his nature of being
an adventurous person, Singapore was his next destination for his hotel
experience, the first being Boulevard Hotel, followed by Shangri-la Rasa
Sentosa Resorts and Singapore Marriott in the Food & Beverage
Department, his area of interest due to the consistent change and innovation
in the products. While he was connected to the Shangri-la Rasa Sentosa
Resort, He was appointed as the restaurant Food & Beverage Trainer and
decided to pursue and embark on another path by venturing into Hospitality
Education after experiencing the need for learning and training. He joined
Taylor’s College as Food & Beverage Lecturer, teaching various subjects
like Food & Beverage, Restaurant Practical Service, Restaurant Theory,
Entrepreneurship, Sales and Marketing, Conducting F& B Training. Let us
all welcome Mr. Patrick Daya to get some of his insights into the topic
“The Future of Hospitality Management Education in the Post-
Pandemic Times”.

Host 1 (PQ): Now, let us move forward to our 2nd Panel Speaker. It will be
initiate by Ms. Rina Medrano, Master of Science in Hotel and Restaurant
Management Student.
Ms. Rina Medrano: Thank you Ms. Quinto. Our 2nd Panel Speaker is a
Founder, Director and Executive Chef of Elaci Culinary Institute, Tbilisi,
Georgia from October 2017–Present. She is a Personal Chef with more than
15 years of experience and multiple certifications in the food-service industry
from front of house to back of house. Five years working on cruise ships,
seven days a week for 10 months each year, preparing lunch and dinner
buffet for more than 4500 guests. Three years as the entrepreneurial creator
of a culinary institute, bakery and catering business, responsible for directing
classes, managing chefs and custom cake decoration. Customizing menu
items for special dietary requirements, like Ketogenic Diet. Specializing in
French, American, Persian, Georgian, Italian, Japanese, and Armenian
cuisines. Everyone, let us all welcome Chef Elahe Forghani to share with
us her proficiency into the topic “Accepting and Adapting the
Challenges in the Food Industry through Research and Innovations”.

Chef Juby Ocampo, Master of Science in Hotel and Restaurant Management
Student.
Chef Juby Ocampo: Thank you Ms. Quinto. Our 3rd Panel Speaker
developed 5 years of experience delivering mandates and business activities
in over 5 countries worldwide. He spent 6 months in India-Bodhgaya and
another 6 months in Kathmandu-Nepal. During this time, He was in charge
of the pre-opening and opening of the Hospitality Vocational Training
Centers. Prior to joining EAS, He had several roles in business development
such as the BCV, Banque Cantonale Vaudoise, and improved his practical
experience in culinary at Grand Hyatt Berlin and the Nestlé Alimentarium in
Switzerland during his study at EHL, Lausanne. His competencies are :
