RASPBERRY WALNUT LINZER BARS



Classic linzer cookies are a real delight, but this easier rendition has all the basic elements in a pan that you can bake, cut into bars and serve! 

A cookie winner for sure, so tasty delicious!


This is an adaptation of Claudia’s Linzer Bars over at What’s Cookin’ Italian Style Cuisine.  She used pistachios, I had a plethora of walnuts on hand and incorporated them.  


These bars are based on the Austrian Linzer torte.  It’s believed to be the oldest known cake in the world, named after the city of Linz in Austria ~ with these bars copying those nutty and fruity elements of the classic pastry ~ fill them with your favorite preserves or jam. 
 








I made a double batch, one raspberry and the other batch blueberry, my favorite.  They’re all soft and buttery with nuts and lemon zest, and filled with delicious preserves.  


They’re simple, easy make to make and not a fussy cookie with the same scrumptious taste as the real deal.

The house filled with the intoxicating aromas of walnuts, lemon zest, and buttery sweetness ~ that means Christmas cookie season to me!

RASPBERRY WALNUT LINZER BARS

ingredients:

  • 1⅓ cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon almond extract
  • 2½ cups flour
  • ½ teaspoon salt
  • 2 cups ground walnuts
  • 1 teaspoon lemon zest
  • 1 cup raspberry seedless preserves, or blueberry or, your choice

instructions:

How to cook RASPBERRY WALNUT LINZER BARS

  1. Preheat oven to 350°.
  2. In a large bowl, using an electric mixer, cream butter and sugar, until light and fluffy.
  3. Beat in egg, and lemon zest.
  4. Stir in flour and ground nuts.
  5. Spread 2 cups of dough onto a parchment-lined 13 x 9-inches pan.
  6. Spread with preserves.
  7. Crumble remaining dough on top.
  8. Bake until lightly browned, about 35 to 40 minutes.
  9. Cool completely.
  10. Cut into bars, sprinkle with powdered sugar.
  11. Makes 30 bars

  5. How does the saying go? 'Simply delicious, and deliciously simple'. That applies to the above bars, reminder of the famous Linz torte.
    There are people who're allergic to nuts, so I suppose there are some good replacements.
