DARK RICH CHOC CUPPIES

DARK RICH CHOC CUPPIES

Bahan A
1 cawan butter [cairkan]
2 cawan susu segar
2 biji telur [pukul sedikit]
1 s/k esen vanilla

Bahan B
3 cawan tepung gandum ]
1/2 cawan serbuk koko ] ayak 2 kali
2 s/k baking powder ]
1/2 s/k soda bikarbonate ]
2 cawan gula perang
coklat chips secukupnya (optional)
kertas muffin



Cara2nya

  1. Panaskan oven pada suhu 190'C selama 10 - 15 minit.
  2. Alaskan kertas muffin dalam mangkuk muffin atau loyang muffin.
  3. Masukkan Bahan B dalam mangkuk dan gaulkan rata.
  4. Masukkan pula Bahan A dalam mangkuk Bahan B dan kacau rata gunakan whisker atau senduk kayu.
  5. Masukkan dalam kertas muffin sehingga 3/4 mangkuk kertas.
  6. Taburkan coklat chips diatas adunan (optional).
  7. Bakar dalam oven yg telah dipanaskan selama 20 minit.8. Sejukkan dan hidangkan.

MINI CHOC CUPPIES

MINI CHOC CUPPIES

Ingredients :
1 1/4 cups all-purpose flour
1/2 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup granulated sugar
1/3 cup vegetable oil
1 egg
1 teaspoon vanilla essance
3/4 cup buttermilk
* 1/2 cup chocolate chips (optional)




Method
  1. In a small bowl, mix together flour, cocoa powder, baking soda and salt.
  2. In a large bowl, whisk together sugar, oil, egg and vanilla essance until smooth.
  3. Alternately whisk in flour mixture and buttermilk, making 3 additions of flour mixture and 2 of buttermilk, beating until bater is smooth. Stir in chocolate chips.
  4. Scoop bater into prepared pan. Bake in preheated oven at 180 celcius for 22 - 27 minutes or until top of cupcakes spring back when lightly touched.
  5. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack.

VANILLA CUPCAKES WITH SWISS MERINGUE BUTTERCREAM

Ingredients
  • 1 3/4 cups cake flour, not self-rising
  • 1 1/4 cups unbleached all-purpose flour
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cut into 1-inch cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract

Method

1. Preheat oven to 325 degrees. Line cupcake pans with paper liners; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.

2. In a large glass measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping down sides of bowl before each addition; beat until ingredients are incorporated but do not overbeat.

3. Divide batter evenly among liners, filling about 2/3 full. Bake, rotating pan halfway through, until a cake tester inserted in the center comes out clean, 17 to 20 minutes.


Swiss Meringue Buttercream

Ingredients
  • 4 large egg whites
  • 1 1/4 cups sugar
  • 1 cup (2 sticks) unsalted butter, at room temp
  • 2 teaspoons vanilla extract

Methods

1. Put egg whites and sugar into the top of a double boiler over a pan of simmering water. Whisking constantly, cook until sugar has dissolved and mixture is warm (about 160 degrees).

2. Pour heated egg whites into the bowl of an electric mixer fitted with the whisk attachment. Beat egg white mixture on high speed until it forms stiff (but not dry) peaks. Continue beating until fluffy and cooled, about 7 minutes.

3. Switch to the paddle attachment. With mixer on medium-low, add butter two tablespoons at a time, beating well after each addition. Increase speed to medium-high; continue beating until frosting appears thick, about 3 minutes. Reduce speed to low; add vanilla extract and continue beating 2 minutes to eliminate air bubbles.
