Ingredients:
1 Cup Butter
1 ¼ cup Brown Sugar
1 T Coffee Powder
¾ Cup APF
1 ½ Tsp Baking powder
1/8 cup Vegetable Oil
375 grams Dark chocolate
1 T Vanilla
5 pcs Whole eggs
½ cup Cocoa powder
1/8 tsp Salt
Parchment Paper
Procedure:
1. Melt the butter and cocoa together
2. Add brown sugar, Vanilla, coffee powder, flour, salt, cocoa, and baking powder and stir until
well blended
3. Add the egg 1 at a time and continue stirring until well blended
4. Add the oil and stir once more
5. Pour in a prepare pan and bake for 25-30 minutes
Oatmeal Cookies
Ingredients:
1 cup butter
1 cup brown sugar
½ cup white sugar
2 whole eggs
1 tsp Vanilla
1 ¾ cup of APF
1 tsp baking soda
1 tsp salt
½ tsp cinnamon
2 ¼ cup oatmeal
1 ½ cup chocolate chips
1 ½ walnuts

Procedures:
1. Cream the butter (soft) and sugar for 7 – 10 minutes until light and fluffy texture
2. Add the eggs one at a time and vanilla until well combine
3. On a separate bowl, combine the dry ingredients Flour, baking powder, salt, cinnamon and
oatmeal
4. Fold in your dry and wet ingredients. Mix until well combined
5. Add the chocolate chips and walnuts (only 80 percent, the rest will be for toppings)
6. Chill for 1 hour
7. Using a scooper, scoop the cookie dough in a pan with parchment paper
8. Baked for 12-15 minutes in 350 F
Ingredients:
125 Grams butter
250 grams brown sugar
50 grams fresh whole eggs
2 grams Salt
275 grams cake flour
15 grams baking poweder
150 grams chocolate chips (dark)
50 grams milk
4 grams Vanilla extract
Procedures:
1. In a mixing bowl fitted with puddle attachment, cream the butter, sugar and vanilla extract
on medium speed until light, gradually add eggsscrapping side down if the bowl, then beat
until smooth
2. Add the dry ingredients, fresh cream and beat on low speed, add chocolate chips until fully
incorporated
3. Spread on a floured-dusted tray and refrigerate for 35 minutes, scoop out and place on a
sprinkle with chocolate chips on top if necessary
4. Baking on the oven about 15-20 minutes until golden brown, cool down

50 grams cocoa powder
180 grams confectioner sugar
75 grams butter
3 pieces whole eggs
5 grams Vanilla extract
8 grams baking soda

Mise en place:
1. Preheat the oven to 160-170C
2. Combine sifted APF, cocoa powder and baking soda together, stir to incorporate
3. Melt the chocolate in a microwave or warm bath
Method:
1. In a mixing bowl, fitted with paddle attachment, combine soft butter, confectioner sugar
and vanilla extract then beat on medium speed until light and creamy
2. Gradually add eggs scrapping side and bottom of the bowl. Add warm melted chocolate
chips and beat until smooth
3. Reduce to low speed and add dry ingredients, beat until smooth and transfer it on a clean
mixing bowl
4. Scoop out and rolled by hands to a small ball around 25 grams each, then roll in a
confectioner sugar and arrange in a baking tray with parchment paper
5. Bake for 10 minutes
BUTTER COOKIES
Ingredients:
1 cup all-purpose flour
1/4 teaspoonsalt
1/8 teaspoon baking powder
1 sticks (1/2 cup) unsalted butter, softened
1/2 cup sugar
1 small egg
1/2 teaspoon vanilla
Direction:
1. Into a bowl sift together flour, salt, and baking powder. In a large bowl with an electric mixer beat
butter until creamy. Gradually add sugar, beating until mixture is light and fluffy. Add
egg and vanilla and beat until combined well. Gradually add flour mixture, beating
until mixture just forms a dough.
2. Wrap dough with wax paper and chill until firm, at least 1 hour. Preheat oven to 375°F. and lightly
butter a baking sheet.
3. Place on a piping bag attached with a star tip.
4. Bake for 3-5 minutes or until golden brown.
Note: You can top the cookies with jam before baking. Dip in a melted chocolate, and top with
sprinkles
Butterscotch
Recipe:
1/4 cup butter (58g)
3/4 cup brown sugar
1/4 cup honey
1/2 tsp vanilla
1 large egg
1 cup + 1 tbsp all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
Chopped cashew nuts
Parchment paper
Procedures:
1.Chop the cashew nuts then set aside
2. Cream the butter and sugar until smooth then add eggs
3. Make sure that sugar completely dissolved before adding the honey then add the vanilla extract
4. Add all dry ingredients (sifted) mix until completely combine and add the cashew nuts
5. Pour in a prepare pan and bake for 25-30 minutes
