Bread Pudding

1/2 cup raisins 1/2 cup brandy or 1/2 cup water 1/4 cup butter or 1/4 cup margarine, melted 8 -10 slices dry bread 1 cup packed brown sugar 1 teaspoon cinnamon 1/4 teaspoon allspice 3 eggs 1/4 teaspoon salt 1 teaspoon vanilla 3 cups milk, scald & cooled

Directions:
1. 2. 3. 4. 5. 6. 7. 8. Cover raisins with brandy or water. Set aside. Melt butter or margarine. Break up bread, set aside. Combine brown sugar, cinnamon, allspice. Reserve 3 tablespoons of this mixture for topping. Toss bread with remaining sugar mixture. Pour melted margarine on before you toss the bread crumbs. Your sugar mixture will stick better that way. 9. Place 1/2 of bread mixture in a lightly greased 1 1/2 quart baking dish. 10. Drain raisins, place 1/2 raisins over bread crumbs. 11. Repeat layers. 12. Combine egg, salt, and vanilla in a bowl. 13. Beat for 1 minute. 14. Add milk slowly. 15. Pour over mix in dish. 16. Let stand for 5 minutes. 17. Sprinkle reserved sugar mix on top. 18. Bake at 325F for 45 to 50 minutes.

5 slices bread, toasted 2 tablespoons butter, approximately 1/2 cup raisins 1/4 teaspoon salt 3/4 cup sugar, approximately 3 eggs 3 cups milk 1/2 teaspoon cinnamon 1/2 teaspoon vanilla, double strength

Directions:
1. Toast bread. 2. Butter one side only; cut into 16 cubes per slice. 3. In mixing bowl, add eggs, salt, cinnamon, vanilla, and sugar, whisk until well blended. 4. Add milk to the egg mixture and whisk until well blended. 5. Put the bread cubes into a buttered 1 1/2 quart casserole dish. 6. Sprinkle the raisins over the cubes of bread. 7. Pour the egg/milk mixture slowly over the top. 8. Bake in a 350 degree oven for approxiately 45-55 minutes, until a silver knife inserted into the center of the pudding comes out clean.

Directions:
1. 2. 3. 4. 5. 6. Heat oven up to 350F. Cut slices of bread into cubes. In a saucepan, heat the milk, and butter but do not allow to boil. To this, add the vanilla, beaten eggs and sugar, when a bit cooled. Add the baking powder and blend until smooth. In an ovenproof tray, layer the cubes of bread and pour over it the liquid prepared above, until the bread is saturated. 7. If desired, sprinkle your choice of nutmeg, cinnamon or raisins. 8. Bake for approximately 30 minutes or until it browns.

Fresh Peach Cobbler

1/4 cup melted butter 1 cup flour 3/4 cup sugar 2 teaspoons baking powder 3/4 cup milk 5 -6 peaches, sliced 3/4 cup sugar

Directions:
1. 2. 3. 4. 5. 6. 7. Preheat oven to 350. Pour melted butter into an 8x8 pan. Whisk together the flour, 3/4 cup of sugar, baking powder and milk. Pour over melted butter. Cover with peach slices. Cover with 3/4 cup sugar (I know this will seem like a lot, but use it all.). Bake until batter rises to top and forms a nice brown crust, about 20 - 30 minutes.
