DAY 1
Checked the learning materials, equipments and
utensils
INTRODUCTION
Good morning Trainees May I request everyone to please stand

Welcome once again to Provincial Training Center - Jagna.

PASTRY PRODUCTION NC II. For the period 141 hours.
My name is Baby Jane F. Mira and I will be your trainer in this
qualification.

This time, I will administer to you the pre assessment tools, this
will be used on preparation and scheduling of your activities.
I have here the Data Gathering Tools for Trainee’s
characteristics to help me determine your background,
experiences, and knowledge. I will give you 10 minutes to do it.

I also have the Self-Assessment Checklist so this will help
me determine current competency which is relevant to this
qualification. I will give 10 minutes again to answer. Please

Lastly, we have here the Pre-Test, consist of 50 item test, this is
used to determine and measure your prior knowledge about
the qualification. I will give you 1 hour to do it. Okay, your time
is up. Please pass.

we go round and familiarize the different areas of our training
center.
So, this is the contextual learning area, where the foundation
of knowledge in the training is given.
Next, we have the institutional learning area, where the
recognition of prior knowledge take place.
Then, we have the learning resource area, where we can find
the learning materials, print and non- printed references can be
found.

information sheet 1.1-1. Prepare bakery product. After reading,

Ms. Aclon I have a question why is mis en place important?
Ms. Aclon: mise en place gives you the idea of all the
ingredients you have to prepare. It also avoids you from
rushing during the preparation of food of pastries.

demonstration you did well despite the time I give to you did

better next time to master the steps and familiarize the tools
you’re using because during your demonstration you did not
use proper tools, we have the testing pin use that to test the
doneness of your product instead of using fork, because when
you use the fork to test the doneness of the product there will
be a possibility that it will ruin your product since the edge of
the fork is too thick right? So next use the tester. Nonetheless
you answer the oral question correctly.
