2. Spiced apple crisps with greek yogurt dip! Heat the oven to 160C/ 140C
fan/ gas mark 3. Core the apple and slice through the equator into very thin
slices 1 - 2mm thick. Dust with cinnamon and lay flat on a baking sheet lined
with parchment paper. Cook for 45 mins 1 hour, turning halfway through and
removing any crisps that have turned brown. Continue cooking until the apples
have dried out and are light golden. Cool, store in an airtight container and
enjoy as a snack. With Greek yoghurt as a dip.
3. Egg stuffed tomatoes : 2 hard boiled eggs, 2 large tomatoes (top off and
insides took out) 2teaspoons of fresh chives and greek yoghurt. Mix together
the eggs chives and yogurt together with salt a pepper, put the mixture into
your eggs and enjoy or put tops back on store in air-tight container and have
later (keep refrigerated)you could also do this with many different egg ways,
or tuna or mackerel. The ways of doing these are endless!!!
4. Spiced nuts and seeds : Mix 3 cups whole nuts with 1/4 cup each
flaxseeds, quinoa, and sunflower seeds. In a separate bowl, whisk 2 egg
whites with 2 tablespoons honey, 1 1/2 teaspoons coarse salt, and 1/4
teaspoon each cayenne, cumin, and cinnamon. Toss with nut mix. Spread in a
single layer on a baking sheet; bake at 325 degrees until dry, stirring
occasionally, about 30 minutes. Scrape from pan while cooling, to avoid
sticking. Makes 16 servings (178 calories each). You do not need to use the
seeds could just be the nuts. Crush some up and top your fruits+greek yogurt
with these for extra crunch and flavour!

Sweet:
Half a banana greek yogurt and sprinkle cinnamon

Greek yogurt top with blueberries, few chopped mint leave and drizzle of

Poached pear slices greek yogurt and crushed hazelnuts
Salads:
Greek salad : Cherry tomatoes, cucumber, red onion, crumbled feta. Finished
with a drizzle of olive oil.
Put the eggs in a pan of cold water and bring to the boil. Boil for 3 mins, then
lift into a bowl of iced water and cool completely. Very carefully peel away the
shells. Leave the eggs in the iced water until you finish the recipe, or for up to
1 hr ahead.
Mix the shallot with the vinegar and a pinch of salt, then set aside for a few
minutes to soften. Whisk in the mustard, oil and chives, if using, to make a
dressing.
Heat the grill to low-medium and cook the turkey rashers until crisp right
through. Remove the turkey
Just before serving, bring the pan of water back to the boil and add the eggs.
Boil for 1 min to reheat. Toss the dressing with the watercress and divide
between 2 plates. Top with an egg and 2 rashers of turkey. The egg yolks will
still be runny inside.
shredded duck watercress and orange salad serves 4
2 duck legs
1tsp five-spice powder
5 tbsp rice vinegar
5 tbsp soy sauce
2 big oranges, segmented, juice reserved
2 x 100g bag watercress
200g bag radishes, thinly sliced
140g pack chicory, leaves separated
small bunch spring onion, sliced diagonally
Heat oven to 200C/180C fan/gas 6. Pat the duck legs dry with kitchen paper
and rub in the five-spice and some seasoning. Pour the vinegar, soy and
orange juice into a small roasting tin and put the duck on top. Cover with foil
and cook for 30 mins, then remove the foil and increase oven to 240C/220C
fan/ gas 9, or put under the grill and cook until the skin is crisp. Remove and
strain the liquid through a sieve. Let the duck cool until you can shred the
meat from the bones. Skim fat from the liquid.
Meanwhile, gently toss together the oranges, watercress, radishes, chicory
and spring onions. Pour over reserved cooking liquid, then add the duck and
arrange on a platter.
Stand each orange on a board and cut away the peel and pith with a sharp
knife. Cut the oranges into 1cm slices.
Arrange the lettuce on 2 plates. Halve, stone and peel the avocado, then slice.
Place the avocado on top of the lettuce leaves and scatter the prawns on top.
Divide the orange slices, onion and coriander leaves between each plate and
toss together very lightly. For the dressing, mix oil chillies and lime juice
together and season with black pepper. Spoon over the salad and serve.
Caesar Salad: but use goats/feta cheese instead of parmesan: Pure minced
garlic and anchovies, lemon juice, Worcestershire sauce, salt, pepper and 1
egg yolk; with machine running, slowly add 1/4 cup olive oil. Toss with lettuce

Greek cucumber Salad: Mix red onion slices, chopped cucumber, dill and
feta. Dress with olive oil and lemon juice; season with salt and pepper.

Fruit salads with full fat greek yogurt on top with some crushed pistachio nuts,
mixed nuts through your fruits.
1tbsp Peanut butter on 2oat/rice cakes topped with 1/2 banana
2 Oatcakes 1 poached egg and spring onions
Asparagus spears with 1 poached egg and lots of pepper.
Turkey rashers, feta cheese red onion salad.
Dip your fruit into the full fat greek yogurt that has caramel/orange/vanilla
extract through it. Optional to freeze once dipped.
