e India.

Besan Laddo and Besan Burfi are two one of evergreen sweets from North India.
I remember having it every tuesday after we devoting it to Shri Hanuman Ji as a
prasad.
I also remember these were distributed on the occasion of marriage as a return g
ift to all attendees.
I am sure you also have some memories of these laddoos and burfi in some way. Th
ey are the basic item on any Desi Halwai in India.
Here we are trying to present an easy way of making them at home. I miss all the
se sweets being here in USA and the only way we can enjoy them is making at home
. I hope you will also try this recipe at home and share your comments/suggestio

Ingredients:

2 Cup (Our 1 Cup = 240 ML) Gram Flour (Besan)
1+1/2 Cup (Our 1 Cup = 240 ML) Granulated/Powder Sugar (if you like to eat less
Sugar, use 1 cup only)
1/4 Cup (Our 1 Cup = 240 ML) Semolina (Sooji)
1/4 Cup (Our 1 Cup = 240 ML) Sliced Almonds (You can add any dry fruit of your c
hoice like Pistachio/Cashew)
1/4 Tsp Green Cardamom Powder
3/4 Cup (Our 1 Cup = 240 ML) Desi Ghee (Pure Ghee. You can use Unsalted Butter i
nstead of Desi Ghee)

15 lbs. Besan / Chana Flour (6.80389 Kilogram)

Ghee Mysore Pak :It is a awesome and famous sweet in south India.There are two t
ypes of mysore pak, one is the traditional hard mysore pak and the second is sof
t ghee version.Ghee mysore pak just melts in your mouth and tastes so heavenly!.
This tastes similar to the Krishna Sweets Ghee Mysore pak. So Lets see how to ma
ke this delicious Ghee Mysore pak.

Directions :
To Roast Besan Flour :In a non stick pan, add the besan flour and roast until yo
u feel a nice aroma.Do it in medium low heat. It will take about 5 to 7 minutes.
Once done,Use a Siever, sieve the roasted besan flour nicely.This is a must step
as it will give a smooth texture to the mysore pak.
To make Besan - Ghee paste:In a Bowl,mix the sifted besan flour with 1 cup of Gh
ee .Make a smooth paste out of it.
To make Sugar syrup:In a pan,Add the sugar and add water.Stir until the sugar ge
ts dissolved completely and boil till you reach a one string consistency.
To check one string consistency,When we rub a drop of sugar syrup between our th
umb and index finger, it should form a single thread .
To Make Mysore Pak: To that sugar syrup,Add the besan, ghee paste and stir conti
nuously .
Incorporate the remaining 1/4 cup ghee at frequent intervals.Start adding ghee s
lowly and add like 1 - 2 tbsp at a time. Keep stirring until the ghee mixes with
the besan flour mixture and then add the next batch of ghee and repeat until yo
u finish the ghee.
Stir it nicely till it leaves the sides of the pan and doesn t get stick to the bo
ttom.The mixture becomes slightly pale and we get a nice aroma of ghee and cooke
d besan. The consistency is more important else you will get hard or crumbled my
sore paks.
At this stage transfer it to the greased tray and level it with a greased spatul
a.
Wait until warm and cut into desired shape. Let it cool down completely.
Enjoy the soft Ghee Mysore Pak!!!
