Squeeze the juice from 4 of the lemons, limes and oranges; pour into a gallon container.
Thinly slice the remaining fruit and set aside for garnish. Add water and sugar to
juices; mix well. Store in the refrigerator. Serve on ice with fruit slices.

Combine chocolate, orange peel, cinnamon and 3 tablespoons of milk in a saucepan and heat
very gently until chocolate melts, stirring frequently.
Add remaining milk and heat through gently until piping hot, stirring frequently. Whisk
whipping cream until soft peaks form.
Pour hot chocolate into mugs or heatproof glasses. Top with whipped cream.
Sprinkle with grated chocolate and add a cinnamon stick to each one for stirring.
NOTE: Wind a curly strip of orange peel around cinnamon sticks for a pretty effect, if
desired.

Squeeze juice from lemons into a bowl. Set lemon rinds aside; strain lemon juice into a
large pitcher. Add sugar and ice water; stir until sugar is dissolved. Set aside.

Discard rinds, add water to picher and stir well. Refridgerate until well chilled.

Ice Cream Non-Alcoholic Drinks
Whisk the eggs in a large bowl until frothy. Mix in the orange and lemon juices, sugar,
cinnamon, ginger, and cloves. Spoon the ice cream into a large punch bowl; stir in the

Chocolate Ice Cream
In the top of a double-boiler over hot water, melt the chocolate squares.
Stir in the sugar. Gradually stir in hot coffee, mixing thoroughly. Add the milk and
continue cooking until all particles of the chocolate are dissolved and the mixture is
smooth, about 10 minutes. Pour into a jar.
Cover and chill. When ready to serve, stir in the chilled Coca-Cola. Serve over ice
cubes in tall glasses.
For a beverage, top with whipped cream. For a dessert, add a scoop of vanilla ice
cream. Makes 5 cups.

2. In a medium bowl, whisk the egg yolks, the remaining 1/3 cup
sugar, and salt until blended.
4. Remove the pan from the heat and immediately strain through a
fine-meshed sieve into a stainless steel bowl. Place the bowl over
a larger bowl of ice water and stir the custard for 5 to 10
minutes, or until cool. Stir in the vanilla. Remove the bowl of
custard from the bowl of ice water. Cover the surface of the
custard with plastic wrap and refrigerate for at least 6 hours, or
overnight until very cold.

2. Dissolve the cornstarch (cornflour) in the water and combine with the cocoa-sugar
mixture in a medium-sized saucepan. Stir this until it is a smooth paste.
3. Begin heating this mixture, continuously stirring it with a whisk. Gradually pour in
the milk. Continue stirring as you bring it to a simmer.
4. Simmer, stirring often, for about 10 minutes. The cocoa is ready when it thickens and
is glossy and smooth.
Author's Notes:
I first tasted this wonderful beverage while touring in northern Spain with a choir.
It's not like any hot chocolate I've had anywhere else, and I was delighted to find a
recipe in The Vegetarian Epicure Book Two. It is the best hot chocolate in the world (at
least to me.)
The consistency of the finished product should resemble chocolate pudding that didn't
quite set. If you halve this recipe, you'll get just the right amount for two large mug-
fulls. This cocoa is especially fantastic when you dip churros into it (a churro is a
sugary, deep-fried, doughnut-like stick, and if anyone wants to send out a recipe, I'd be
most grateful).

1. In a glass jar, combine the tea, water, sugar and mint sprig.
Screw on the cap and shake gently. Place the jar in a warm, sunny
location for 3 hours.
2. Blend the orange juice and lemon juice into the tea mixture.
Strain the mixture through a sieve, and add the orange pieces.
Refrigerate for several hours before serving, with orange slices
and mint leaves for garnish.
Makes 4 servings.
Variations
1. For thirst-quenching Early Mint Sun Tea, use 2 rounded tablespoons
Earl Grey tea, and a sprig of mint, and omit the orange and lemon
juice. Chill after straining the loose tea and mint.
NOTES:
Here's a quick way to brew tea, whether it's on the sunny beaches of
California's Catalina Island or on a sunny windowsill. The addition of
fresh orange and lemon juice makes this a refreshing summertime drink.

Fill machine with cold water up to water level for desired number of cups.
Do not cover safety valve hole with water. Fill brew basket to rim with coffee. For 9
cups, remove the reducer from the brew basket and fill entire basket. For 3 or 6 cups,
use the reducer as follows: long stem facing down for 3 cups; short stem facing down for
6 cups. Clean off excess grounds from brew basket rim and o-ring. Close and tighten down
knob as far as possible. Close steam valve. Place machine on high heat and put a carafe
under valve to catch coffee. Coffee will begin to drip out slowly after 3-10 minutes,
and appear very dark. As brewing process continues, stream will become strong and steady,
and coffee will lighten. When coffee stops and becomes noisy, close coffee valve and
remove carafe.
If you are making cappuccino, close valve and let steam build up. Put cream or milk in
cup and open steam valve to froth.

Combine cranberries, water and lemon slices in a stainless steel or enamel saucepan.

Add sweetener, stir until dissolved. Strain, stirring and mashing berries until a
fairly dry pulp remains in strainer. Store concentrate in refrigerator.
OR Freeze in a shallow square pan. Cut it into 8 equal blocks, then wrap and store them
in the freezer. OR freeze in a plastic ice cube tray that holds 2 cups and makes 16
cubes.
CRANBERRY REFRESHER Dilute 1/4 cup concentrate (1/8 recipe or 2 ice cubes) with 3/4 cup
water, sugar-free ginger ale or soda water.

Espresso:
A single portion of espresso, about 1-1/2 ounces, served in a two
ounce, pre heated espresso cup.
Espresso Ristretto:
A short or "restricted" espresso, where the flow of water through
the brew head is stopped at about 1 ounce.
Espresso Lungo:
A single serving of espresso, diluted with hot water (not from
the brew head) to produce a milder or "long" espresso.
Espresso Doppio:
A double serving of espresso, about 3 to 4 ounces. Use the two
cup coffee basket in the filter holder and serve in a five ounce
cappuccino cup.
Espresso Macchiato:
A single serving of espresso "marked" with one or two tablespoons

Espresso Romano:

Known by the french a Cafe au lait and the spanish as Cafe Con
Leche. A double serving of espresso with steamed milk, roughly 3

Latte Macchiato:
A glass of steam milk into which a single serving of espresso is
slowly dribbled, to "mark" the milk with espresso.
Mocha:
A mixture od 1/3 espresso brewed into 1/3 frothed milk where 1/3
cocoa has been dissolved, seved in a five ounce cappuccino cup or
glass. Quick and dirty: Add Hersheys syrup to taste.

Mix cocoa and flour in 2-quart saucepan. Stir in brown sugar, milk, cloves, and 1 stick

Soften the gelatin in the water. Stir over low heat until dissolved. Mix in the juices,
sugar and sliced fruit, and place in the freezer until almost set. Beat with an electric
mixer on high speed until creamy, but fluffy.
Cover and return to the freezer. If fruit ice is made some time before serving, it must
be rebeaten and then returned to the freezer for a brief period.
Yields 16 Servings

Mix 1/2 cup unsweetened Dutch-process cocoa and 3/4 cup sugar in a medium
saucepan. Stir in 10 tablespoons low-fat (1 percent) milk to form a smooth

dissolves. Pour mixture into ice cube trays; cover and freeze for at least
6 hours. (Mixture can be frozen up to one week.) Break frozen cubes into
chunks with a table knife. Process mixture with 2 tablespoons milk in
a food processor fitted with a steel blade until smooth. Serve immediately
in frosted goblets. If desired, garnish with candied orange zest.

Make a syrup of water and sugar; when cool add lemon juice and orange juice; freeze and
when half frozen add egg white, beaten well with sugar. Thoroughly beat it with the ice,
finish freezing and serve.
Strawberries or slices of pineapples gently stirred through just before serving (if
added too long before, they freeze and are unpleasant to eat) make a delicious variety.
*Pineapple Ice* may be made of canned pineapple using pint of juice, and gill lemon
juice with above proportion of syrup, adding the pine-apple cut in dice just before
serving, if wished. With all ices if is always add a gill of lemon juice, as the acid
assists in the freezing and also adds to the flavor.
Any proportions of the recipe may be made; above makes about two dozen dishes.

This home-brew remains a favourite party drink in a Welsh household for both adults and
children. You will need eight pint bottles or four quart bottles. They should be of a
strong material and have firm caps with metal springs to imprison the effervescent liquid
~ it's more explosive than champagne. Makes 1 gallon.
Roughly crush the ginger root. Wash and slice the lemons into thick rings.
Put the ginger, lemon, cream of tartar and sugar in a large bowl. Pour the boiling water
over. Stir and leave to cool to blood temperature. Stir in the yeast. Leave to ferment
for 24 hours. Skim off the yeast. Strain and bottle the liquid. Leave for three days
before broaching it.

of top of bottle. Cap securely. Place bottles on their sides in a warm place for a least
five days, longer in cooler weather. Chill and taste.

Mexican Non-Alcoholic Drinks
Place the rice in a bowl with enough hot water to cover. Let the
rice sit overnight. Next day, remove the water. Place 1/2 cup of
water, and 2 cups milk in a blender. Blend until rice is all ground
up. Mix in 1/4 cup sugar, 1/2 t vanilla, 1/4 t cinnamon. Do the
same with the other half of the ingredients. Strain through
cheesecloth (or whatever). Serve over ice. Makes 6 glasses.

Hot Chocolate
Combine chocolate pieces, cocoa powder, sugar and vanilla in pan. Stir in 1/4 cup milk to
make paste (bittersweet chocolate will still be in chunks but cocoa should be disssolved
in liquid). Add remaining 1 1/4 cups milk and stir well.
Bring to simmer over medium heat, stirring frequently, until chocolate is melted,
sugar completely dissolved and mixture is very hot. Serve in mug.

Dissolve coffee and brown sugar in boiling water. Add cinnamon and Mixed Spice.
Add cold water and stir well. Add milk, vanilla and whipping cream. Whisk lightly until
evenly combined.
Put 2 ice cubes into each glass. Half fill with coffee mixture. Add a scoop of ice cream
to each glass and top up with remaining coffee. Sprinkle with unsweetened cocoa powder.
Garnish with cinnamon sticks, lime slices and grated chocolate, if desired. Serve at once
with long-handled spoons.
VARIATION: For a sweeter version, increase brown sugar to taste. If desired, top each
with a little whipped cream.

Lemonade Concentrate
Combine sugar and water in a small saucepan; bring to a boil and boil for 5 minutes.
Remove from heat, cool slightly.
Reserve one lemon to slice for garnish. Grate zest of two lemons; juice eight
lemons. Combine juice and zest with warm syrup. Steep one hour. Strain.

Masala Tea

Combine water and milk in adeep pan, and bring to a boil. Add the spices and sugar. Stir
to blend, and turn off the heat. Cover the pan, and let the spices soak for at least 10
minutes.
Add the tea leaves or tea bags, and bring the water to a second boil.
Reduce heat and simmer, covered, for 5 minutes. Uncover, check the color and taste, and
if desired add more milk and sugar. Strain the tea into a warm teapot, and serve
immediately.
Note: This is the way traditional spiced tea is made. You may, however, omit the milk or
sugar, or both, in which case reduce the quantity of tea to 2 heaping teaspoons or 3 tea
bags.

Mexican Chocolate
Place chocolate and hot water in saucepan, cook over low heat
until chocolate melts. Combine the sugar, salt, and cinnamon and
add to the chocolate. Add coffee and stir until smooth. Cook 5
minutes longer. Combine hot milk to which vanilla has been added
and the chocolate mixture. Cook over low heat for 10 minutes to
blend flavors.

Heat all the ingredients except milk in saucepan over low heat. Stir
constantly, until chocolate is melted and mixture is smooth. Heat to
boiling; reduce heat. Simmer uncovered, stirring constantly, for 4

foamy. Top with whipped cream if desired. Serve immediately.

Mix in a 5 part water to 1 part syrup ratio.

Juice lemons and oranges, being very careful to extract every seed, as they cause a
bitter taste. To a syrup made of water and sugar add juices, and when partly frozen add
the meringue of one egg.
When frozen fill in the orange fruit cases ad place in Ice-cream Cave for three or four
hours, and it is then made more delicious by covering the ice in each case with a
meringue and browning quickly with a red hot salamander, serving immediately. The orange
pulp taken from cases can be used in obtaining juice.

Root Beer

Dissolve yeast in 1/2 cup warm water. Dissolve sugar in 1 quart hot water mix together
dissolved yeast, sugar and root beer extract in a gallon jar.
Fill jar with warm water and stir until all ingredients are well combined.
Cover jar set in warm sun for 4 hours. The root beer will be ready to drink the next day.

In a saucepan, combine sugar, crushed ice, 4 cups water, lemon juice and rose water.
When sugar is completely dissolved, strain and serve the Sherbat in frosty glasses.

This is a super non-alcoholic punch with lots of possible variations.
Different sherbet flavors or mixtures of flavors make for many variations. I once
made a variation that replaced 1/2 of the ginger ale with lemonade. Super!

Shave the yellow peel from the lemons, cutting very thinly so that as little of the white
underlayer as possible is attached. Set the yellow slices aside. Then peel the bitter
white underlayer off and discard it.
Slice the lemons into very thin slices. Place them into a container and cover them so
they don't dry out.
Boil the water in a large kettle. Remove it from the heat and stir in the yellow lemon
peel, the sugars, and the syrup. When the sugars have dissolved, cover the kettle and let
the contents cool to room temperature (25'C or 75'F). Then add the lemon slices and the
yeast. Leave it to stand overnight.
Place 4-5 raisins and a teaspoon of white sugar in the bottom of each of several clean
bottles (wine or soda pop). Pour the sima into the bottles, straining it through a sieve
to remove the lemon. Cap the bottle tightly.
The sima will be ready to drink when the raisins rise to the top of the bottles, about
3-7 days depending on the temperature of the room where they are stored. Serve it well
chilled.

Put ingredients in a gallon jug with about a quart of very warm water. Stir until
ingredients are well mixed. Finish filling the jug with warm water. Let stand six hours

Place water in a large saucepan. Bring to a boil and add teabags, cinnamon stick and
lemon slices. Reduce heat to low, cover losely and simmer 20 minutes. Remove from heat,
add sugar and stir until sugar is dissolved. Remove teabags, cinnamon stick and lemon
slices.
Pour tea into a large jug and refridgerate until well chilled.

Southwest Smoothie

* Fruit should be of one kind listed and be chopped.* Place all ingredients in food
processor workbowl fitted with steel blade or in blender container; cover and process on
high speed until smooth.
Strain if using mango.

Mix cocoa and flour in 2-quart saucepan. Stir in brown sugar, milk, cloves, and 1
stick cinnamon. Heat just to boiling over medium heat, stirring constantly; reduce heat.
Simmer uncovered for 5 minutes (DO NOT boil). Remove from heat; remove cloves and
cinnamon.
Stir in powdered sugar and vanilla. Beat with wire whisk or hand mixer until foamy.
Pour into 4 cups or mugs. Serve with whipped cream and cinnamon sticks.

Mix all the ingredients. Fill blender 1/2 full of mixture and fill to the top with
crushed ice. Cover and blend on high speed until a uniform consistency is achieved.
Repeat with remaining mixture.

Spearmint Tea

spearmint and sugar in teapot. Cover with fresh boiling water and

Spiced Tea
Bring pineapple juice, lemon juice, and water to a boil. Add sugar and spices and simmer
20 minutes. Remove from heat, add tea bags, cover and steep 10 minutes. Remove tea bags
and strain. Serve hot or iced.

Mix drink mix, tea mix, sugar and spices. Label and store in tightly covered container
at room temperature. Store no longer than 6 months.
To serve: For each serving, mix 3 teaspoons with boiling liquid* in mug until mix is
dissolved. Garnish with twist of lemon or orange peel, and a cinnamon stick if desired.

* Cinnamon sticks are optional but make a very pretty addition as stirrers in steaming
hot mugs of punch.
Combine all the ingredients in a very large heavy pan, except the cinnamon sticks.
Bring to a boil and turn to simmer for few minutes. You can put the ingredients in a
crockpot after it has boiled and keep warm over low heat.
This recipe can be easily doubled or halved.

Put three family size tea bags in a clean gallon jar and fill with cold water. If
desired, you may substitute 9 regular (cup size) tea bags. (For an exciting change of
taste, add 3 bags of Orange & Spice tea).
Cap loosly and place in hot sunshine, away from other material, for 3 to 4 hours.
Remove tea bags. Sweaten to taste with Equal Low-Calorie Sweetner. Serve over ice.
Refrigerate within 5 hours of brewing. Vary the number of tea bags and the duration
of brewing according to the tea strength you desire.

The Punchbowl
1. Using a blender, blend the juices a little at a time, pouring into large
punchbowl or other large container. Blend the banana and strawberries only until coarse
blended, not pureed. Mix the ice water in the punch bowl with other ingredients and stir
to blend.
2. Just before serving, add the club soda, ginger ale and enough 7-Up to suit your
taste. Stir gently to mix all juices from the sediment on bottom of bowl. Serve this as
is or over ice.

NOTES : You may wish to make an ice ring to float in this for a decorative and festive
touch. Using a ring mold, freeze a shallow layer of water, put fruits in a pattern on top
of ice, pour a thin layer of water, refreeze. Repeat these steps until you have built up
the ice ring and made several layers of fruit designs. Unmold the ring and place in punch
bowl just before serving. Use juice instead of water for ice ring if you wish.

Pour ginger ale or any clear carbonated drink over strawberry ice
cream in tall glass. Top glass with fluffy whipped cream and
strawberry preserves. Do not stint on ice cream. Serve with large soda

NOTE: Crushed pineapple juice canned in its own juice is preferable for a less-sweet

Poke 1 t cloves into each orange for Floating Cloved Oranges. Add cider, seasonings, and
Floating Cloved Oranges to crockpot; heat at least 1/2 hour, and the longer, the better.
Orange Stars: cut oranges into 1/2" slices. Stick 5 cloves around slice at equal
intervals; cut out wedges between cloves. The result looks kind of like a star.

30 Cinnamon sticks
Put cider, sugar and fruit juices (undiluted) in large pot. Tie cloves and allspice in
cheesecloth. Add to cider with nutmeg. Cover and simmer for 30 min. Remove spice bag.
Serve hot in mugs with cinnamon stick in each mug.
Makes 24 6 oz servings.

1/4 cup Apple juice
1 pinch Coconut -- grated OR_
-1 Tbsp coconut milk *
1/2 each Banana
1/4 teaspoon Ginger root;fresh -- peeled

1/4 cup Orange juice
1/4 cup Pineapple juice
1 tablespoon Coconut milk -- *
1/2 each Banana
1/4 teaspoon Ginger root;fresh -- peeled
* Can be made from fresh or dried coconut or purchased bottled. Do not use the canned
coconut mix for mixed drinks as it is very sweet and different.
If using fresh coconut, cut coconut meat into 1" pieces & place equal amounts of coconut
& hot water in food processor or blender. Puree at high speed for a couple of minutes,
let steep for 30 minutes. Then pour into a strainer set over a bowl. Press on the pulp
and squeeze by the handful to extract as milk as possible. Pour the milk through a fine-
mesh strainer.
For dried coconut: use 1 cup unsweetened, dried coconut with 1 1/2 c hot tap water. Allow
to stand for 5 minutes. Puree one minute and proceed as above. Will keep up to three days
refrigerated and indefinitely, if frozen.
