1 gallon Water
1 small Can concetrated lemonade

Place tea bags in a pan. Add only enough water to cver bags, bring to a boil. Drain tea
bags and add sugar. Add to 1 gallon water - stir in lemonade and chill.
If you want tea stronger, let tea bags stand for a time in the refrigerator.

5 Limes
5 Oranges
3 quarts Water
1 1/2 To 2 cups sugar

Squeeze the juice from 4 of the lemons, limes and oranges; pour into a gallon container.
Thinly slice the remaining fruit and set aside for garnish. Add water and sugar to
juices; mix well. Store in the refrigerator. Serve on ice with fruit slices.

Austrian Chocolate Cup

30 ounces Semisweet chocolate -- broken in pieces
10 small Finely grated orange peel
2 1/2 teaspoons Ground cinnamon
15 cups Milk
2 1/2 cups Whipping cream
Grated chocolate
30 Cinnamon sticks (3")

Combine chocolate, orange peel, cinnamon and 3 tablespoons of milk in a saucepan and heat
very gently until chocolate melts, stirring frequently.

Add remaining milk and heat through gently until piping hot, stirring frequently. Whisk
whipping cream until soft peaks form.

Pour hot chocolate into mugs or heatproof glasses. Top with whipped cream.
Sprinkle with grated chocolate and add a cinnamon stick to each one for stirring.
NOTE: Wind a curly strip of orange peel around cinnamon sticks for a pretty effect, if
desired.

Put all ingredients in blender and turn to puree mode until of desired consistency.
(Make only about 2 servings at one time so the blender will not be overfilled.) If using
a food processor, use the steel knife to process; 8-10 seconds will be sufficient.

Serve in a tall glass.

BASIC LEMONADE

Squeeze juice from lemons into a bowl. Set lemon rinds aside; strain lemon juice into a
large pitcher. Add sugar and ice water; stir until sugar is dissolved. Set aside.
Place lemon rinds in a bowl and add boiling water. Let stand until water is cold.
Discard rinds, add water to picher and stir well. Refridgerate until well chilled.

1 quart Orange juice

1 quart Ginger ale
2 tablespoons Sugar
Ground nutmeg
1/4 teaspoon Ground cinnamon
1 Dash ground cloves

Whisk the eggs in a large bowl until frothy. Mix in the orange and lemon juices, sugar,
cinnamon, ginger, and cloves. Spoon the ice cream into a large punch bowl; stir in the
egg mixture until combined. Refrigerate if not serving immediately. Before serving, pour
in the ginger ale. Sprinkle the top with nutmeg. Makes 18 (6 oz) servings. COMMENTS:
Ginger ale, spices, and citrus juices enliven old-fashioned eggnog, making a fabulously

Brazilian Iced Chocolate Coca-Cola

2 ounces Chocolate -- unsweetened
1/4 cup Sugar
1 cup Coffee -- double-strength
And hot
2 1/2 cups Milk
1 1/2 cups COCA-COLA -- chilled
Whipped cream or vanilla
Ice cream

In the top of a double-boiler over hot water, melt the chocolate squares.
Stir in the sugar. Gradually stir in hot coffee, mixing thoroughly. Add the milk and
continue cooking until all particles of the chocolate are dissolved and the mixture is
smooth, about 10 minutes. Pour into a jar.
Cover and chill. When ready to serve, stir in the chilled Coca-Cola. Serve over ice
cubes in tall glasses.

For a beverage, top with whipped cream. For a dessert, add a scoop of vanilla ice
cream. Makes 5 cups.

Dissolve gelatin in boiling water; stir in cold water, lemonade


concentrate, and pineapple juice; chill well. Don't chill too long or
it solidifies!! Add ginger ale before serving.

NOTE: Skim milk can be substituted for milk and cream for those who are counting
calories.

Make the cappuccino ice cream:

1. In a medium saucepan, heat the cream, half-and-half, 1/3 cup of


the granulated sugar, espresso, and cinnamon over medium heat,
stirring constantly, until the sugar is dissolved. Increase the
heat to high and bring the mixture to a gentle boil. Place the
cocoa powder in a small bowl. Add 2 to 3 tablespoons of the hot
cream mixture to the cocoa and stir well to form a smooth paste.
Return the cocoa powder mixture to the saucepan and whisk until
smooth. Remove the saucepan from the heat, cover, and allow to
infuse for 10 minutes.

2. In a medium bowl, whisk the egg yolks, the remaining 1/3 cup
sugar, and salt until blended.

3. Strain the hot cream mixture through a cheesecloth-lined sieve


into a medium, heavy saucepan. Bring the mixture to a gentle boil.
Remove the saucepan from the heat. Gradually whisk about 1
cup of the hot cream mixture into the beaten egg yolks until blended.
Return this mixture to the saucepan. Continue cooking over
medium-low heat, stirring constantly with a wooden spoon, for 2 to
4 minutes, or until the custard has thickened slightly. It is done
when you can run your finger down the back of the custard-coated
spoon and a path remains for several seconds. Do not allow the
custard to boil.

4. Remove the pan from the heat and immediately strain through a
fine-meshed sieve into a stainless steel bowl. Place the bowl over
a larger bowl of ice water and stir the custard for 5 to 10
minutes, or until cool. Stir in the vanilla. Remove the bowl of
custard from the bowl of ice water. Cover the surface of the
custard with plastic wrap and refrigerate for at least 6 hours, or
overnight until very cold.

5. Scrape the chilled custard into the container of an ice cream


maker and freeze according to the manufacturer's instructions.
Transfer the ice cream to a medium bowl. Cover the surface of
the ice cream with plastic wrap and cover the bowl tightly with
aluminum foil. Freeze the ice cream overnight.

Assemble the cappuccino malt floats:

1. In a chilled 4 1/2-quart bowl of a heavy-duty electric mixer


with the wire whip attachment, set at medium-high speed, beat
the cream, sugar, and vanilla until it forms slightly stiff peaks.
Fill a pastry bag fitted with a star tip (such as Ateco #6) with
the cream and refrigerate until ready to use.

2. In a blender, combine 1 cup milk, 2 tablespoons malt powder, and


1/4 cup chocolate syrup with 2 scoops of the cappuccino ice cream.
Blend at high speed for 45 seconds, until the mixture is smooth.
Pour the malt mixture into a tall 16-ounce glass.

3. Place a scoop of cappuccino ice cream on the side of the glass.


Pipe a large rosette of whipped cream next to the ice cream.
Garnish the malt float with chocolate shavings and a chocolate
espresso bean. Repeat this assembly to make 3 more malt floats.
Serve immediately.

4 servings.

PREPARATION: 1 hour plus chilling and freezing times. Allow the


ice cream to freeze overnight.

Castillian Hot Chocolate

55 g unsweetened powdered cocoa
200 g sugar
25 g cornstarch (cornflour)
120 ml water
1 l milk

1. Mix the cocoa and sugar together.

2. Dissolve the cornstarch (cornflour) in the water and combine with the cocoa-sugar
mixture in a medium-sized saucepan. Stir this until it is a smooth paste.

3. Begin heating this mixture, continuously stirring it with a whisk. Gradually pour in
the milk. Continue stirring as you bring it to a simmer.

4. Simmer, stirring often, for about 10 minutes. The cocoa is ready when it thickens and
is glossy and smooth.

Author's Notes:
I first tasted this wonderful beverage while touring in northern Spain with a choir.
It's not like any hot chocolate I've had anywhere else, and I was delighted to find a
recipe in The Vegetarian Epicure Book Two. It is the best hot chocolate in the world (at
least to me.)

The consistency of the finished product should resemble chocolate pudding that didn't
quite set. If you halve this recipe, you'll get just the right amount for two large mug-
fulls. This cocoa is especially fantastic when you dip churros into it (a churro is a
sugary, deep-fried, doughnut-like stick, and if anyone wants to send out a recipe, I'd be
most grateful).

Difficulty : easy.
Precision : measure the ingredients.

Catalina Citrus Sun Tea

4 Cups Cold Water
3 Tablespoons Granulated Sugar
6 Inches Mint Sprigs
2 Cups Fresh Orange Juice
Juice Of 1 Lemon

Mint Leaves -- for garnish

1. In a glass jar, combine the tea, water, sugar and mint sprig.
Screw on the cap and shake gently. Place the jar in a warm, sunny
location for 3 hours.

2. Blend the orange juice and lemon juice into the tea mixture.
Strain the mixture through a sieve, and add the orange pieces.
Refrigerate for several hours before serving, with orange slices
and mint leaves for garnish.

Makes 4 servings.
Variations
1. For thirst-quenching Early Mint Sun Tea, use 2 rounded tablespoons
Earl Grey tea, and a sprig of mint, and omit the orange and lemon
juice. Chill after straining the loose tea and mint.

2. To make a Raspberry Fizz, fill a glass 1/3 to 1/2 full of Catalina


Citrus Sun Tea, and top with your favorite sparkling water,
flavored with either raspberry essence or raspberry juice. Garnish
with skewers of fresh raspberry and mint.

3. To make a Hollywood Spritzer, place 1 tablespoon of Cointreau in


the bottom of a chilled glass. Fill the glass half-full of chilled
Catalina Citrus Sun Tea, and top with an inexpensive champagne.
Garnish with a strawberry.

Here's a quick way to brew tea, whether it's on the sunny beaches of
California's Catalina Island or on a sunny windowsill. The addition of
fresh orange and lemon juice makes this a refreshing summertime drink.

2 cups sugar
2 cups boiling water
1/8 teaspoon salt
6 ounces unsweetened chocolate
1 teaspoon vanilla extract

* Use unsweetened chocolate or 1 cup cocoa powder, unsweetened.


In a saucepan, combine 2 cups boiling water, 2 cups sugar, salt and chocolate or
cocoa. Cook and stir over medium heat until smooth. Cool then add 1 teaspoon vanilla
extract. Pour into covered jar and store in refrigerator.

Yield: 3 cups syrup.

To make milkshake, place 2 tablespoons crushed ice, 2/3 cup milk and 2-1/2 tablespoons
chocolate syrup in a shaker and shake until well mixed, or beat with rotary beaters until
smooth. Add 1 to 2 scoops of ice cream if you prefer.

Christmas Cranberry Punch

Combine the cranberry and orange juices in a punch bowl. Pour the carbonated beverage
down the sides of the bowl. Float whole cranberries on the top.

1/2 cup - 51 calories, 1 fruit exchange 13 grams carbohydrate, 0 protein, 0 fat, 3 mg


sodium, 75 mg potassium, 0 mg cholesterol.

CITRUS TEA COOLER

Place tea bags or loose tea in bowl. Pour boiling water over tea. Let stand 5 minutes.
Remove bags or strain to remove leaves. Add sugar and stir until all is dissolved. Plae
ice cubes in 2-quart serving pitcher. Pour hot tea, lemon and orange juice over tea. Stir
briskly several seconds until mixture is cold. Stir in chilled lemon-lime carbonated
beverage. Pour into glasses and serve at once. Makes 2 qts.

Fill machine with cold water up to water level for desired number of cups.
Do not cover safety valve hole with water. Fill brew basket to rim with coffee. For 9
cups, remove the reducer from the brew basket and fill entire basket. For 3 or 6 cups,
use the reducer as follows: long stem facing down for 3 cups; short stem facing down for
6 cups. Clean off excess grounds from brew basket rim and o-ring. Close and tighten down
knob as far as possible. Close steam valve. Place machine on high heat and put a carafe
under valve to catch coffee. Coffee will begin to drip out slowly after 3-10 minutes,
and appear very dark. As brewing process continues, stream will become strong and steady,
and coffee will lighten. When coffee stops and becomes noisy, close coffee valve and
remove carafe.
If you are making cappuccino, close valve and let steam build up. Put cream or milk in
cup and open steam valve to froth.

2 Slices lemon
12 teaspoons Artif. sweetener (aspartame)

Combine cranberries, water and lemon slices in a stainless steel or enamel saucepan.
Bring to a boil; reduce heat and simmer uncovered 30 min.

Add sweetener, stir until dissolved. Strain, stirring and mashing berries until a
fairly dry pulp remains in strainer. Store concentrate in refrigerator.

OR Freeze in a shallow square pan. Cut it into 8 equal blocks, then wrap and store them
in the freezer. OR freeze in a plastic ice cube tray that holds 2 cups and makes 16
cubes.

CRANBERRY REFRESHER Dilute 1/4 cup concentrate (1/8 recipe or 2 ice cubes) with 3/4 cup
water, sugar-free ginger ale or soda water.

is desired. Remove tea bags.

Add cranberry juice cocktail. Return to a boil. Serve hot in mugs.

2 liters Apple cider -- chilled
3 Limes
1 can (341ml) Frozen Raspberry
Juice Concentrate -- optional

Pour ginger ale and cider into punch bowl. Squeeze juice from 2 of the limes and thinly
slice the third. Stir juice into punch. Taste and add raspberry concentrate, if you wish.
If concentrate is still frozen, you may not need to add ice. Refrigerate until serving
time. Float lime slices on surface. Makes 16 cups, enough for 32 punch-glass servings.

In large saucepan, combine sugar, cocoa and salt. Add hot water
slowly, mixing well. Cook over medium heat, stirring constantly, until
mixture boils. Boil and stir 2 minutes.
Add milk; heat to serving temperature, stirring occasionally. DO NOT
boil. Remove from heat; add vanilla, cinnamon if desired, and whip with a
whisk. Serve hot, with whipped cream or marshmallows if desired. This
recipe can be doubled and kept in crockpot for easier serving to large
groups.

Mix 1/2 cup unsweetened Dutch-process cocoa and 3/4 cup sugar in a medium
saucepan. Stir in 10 tablespoons low-fat (1 percent) milk to form a smooth
paste, then stir in an additional 2 cups milk over low heat until sugar
dissolves. Pour mixture into ice cube trays; cover and freeze for at least
6 hours. (Mixture can be frozen up to one week.) Break frozen cubes into
chunks with a table knife. Process mixture with 2 tablespoons milk in
a food processor fitted with a steel blade until smooth. Serve immediately
in frosted goblets. If desired, garnish with candied orange zest.

Use a food processor or blender for this recipe. Fit steel blade in processor work

Use the unsweetened Kool-Aid


In a large non-metal pitcher, combine envelopes of Kool-Aid with sugar and water. Stir
until thoroughly mixed and Kool-Aid is dissolved. Add ginger ale and serve immediately.
Makes about 8-10 servings.

4 cups Sugar
1 cup Lemon juice
1 1/2 cups Orange juice
1 Egg whites
1 tablespoon Sugar

Make a syrup of water and sugar; when cool add lemon juice and orange juice; freeze and
when half frozen add egg white, beaten well with sugar. Thoroughly beat it with the ice,
finish freezing and serve.

Strawberries or slices of pineapples gently stirred through just before serving (if
added too long before, they freeze and are unpleasant to eat) make a delicious variety.

*Pineapple Ice* may be made of canned pineapple using pint of juice, and gill lemon
juice with above proportion of syrup, adding the pine-apple cut in dice just before
serving, if wished. With all ices if is always add a gill of lemon juice, as the acid
assists in the freezing and also adds to the flavor.
Any proportions of the recipe may be made; above makes about two dozen dishes.

Home-Made Ginger Beer

2 ounces Fresh ginger
2 Lemons
1 teaspoon Cream of tartar
1 pound Sugar
1 gallon Boiling water
1 ounce Yeast

This home-brew remains a favourite party drink in a Welsh household for both adults and
children. You will need eight pint bottles or four quart bottles. They should be of a
strong material and have firm caps with metal springs to imprison the effervescent liquid
~ it's more explosive than champagne. Makes 1 gallon.

Roughly crush the ginger root. Wash and slice the lemons into thick rings.
Put the ginger, lemon, cream of tartar and sugar in a large bowl. Pour the boiling water
over. Stir and leave to cool to blood temperature. Stir in the yeast. Leave to ferment
for 24 hours. Skim off the yeast. Strain and bottle the liquid. Leave for three days
before broaching it.

Put sugar, water, and extract in pot. Mix well. Add yeast to the cup of water. Mix. Add
to pot. Blend well. Let settle. Siphon into clean, sterilized bottles. Fill to 1/4-inch
of top of bottle. Cap securely. Place bottles on their sides in a warm place for a least
five days, longer in cooler weather. Chill and taste.

Place the rice in a bowl with enough hot water to cover. Let the
rice sit overnight. Next day, remove the water. Place 1/2 cup of
water, and 2 cups milk in a blender. Blend until rice is all ground
up. Mix in 1/4 cup sugar, 1/2 t vanilla, 1/4 t cinnamon. Do the
same with the other half of the ingredients. Strain through
cheesecloth (or whatever). Serve over ice. Makes 6 glasses.

2 tablespoons unsweetened cocoa powder
5 teaspoons sugar

1 1/2 cups milk
whipped cream -- optional

Combine chocolate pieces, cocoa powder, sugar and vanilla in pan. Stir in 1/4 cup milk to
make paste (bittersweet chocolate will still be in chunks but cocoa should be disssolved
in liquid). Add remaining 1 1/4 cups milk and stir well.
Bring to simmer over medium heat, stirring frequently, until chocolate is melted,
sugar completely dissolved and mixture is very hot. Serve in mug.

Dissolve coffee and brown sugar in boiling water. Add cinnamon and Mixed Spice.
Add cold water and stir well. Add milk, vanilla and whipping cream. Whisk lightly until
evenly combined.

Put 2 ice cubes into each glass. Half fill with coffee mixture. Add a scoop of ice cream
to each glass and top up with remaining coffee. Sprinkle with unsweetened cocoa powder.
Garnish with cinnamon sticks, lime slices and grated chocolate, if desired. Serve at once
with long-handled spoons.

VARIATION: For a sweeter version, increase brown sugar to taste. If desired, top each
with a little whipped cream.

lemons. Combine juice and zest with warm syrup. Steep one hour. Strain.

To serve: Mix 1 part lemonade concentrate with 2 parts water. Serve over ice. Garnish
with lemon slices and mint.

Combine water and milk in adeep pan, and bring to a boil. Add the spices and sugar. Stir
to blend, and turn off the heat. Cover the pan, and let the spices soak for at least 10
minutes.
Add the tea leaves or tea bags, and bring the water to a second boil.
Reduce heat and simmer, covered, for 5 minutes. Uncover, check the color and taste, and
if desired add more milk and sugar. Strain the tea into a warm teapot, and serve
immediately.
Note: This is the way traditional spiced tea is made. You may, however, omit the milk or
sugar, or both, in which case reduce the quantity of tea to 2 heaping teaspoons or 3 tea
bags.

Mix starter ingredients with 3/4 pint of warm water in a


glass jar. Stir, cover and leave in a warm place for 24
hours. This is your starter "plant".
Feed the "plant" with 1 teaspoon each of ground ginger and
sugar each day.
After 7 days strain through a fine sieve. Dissolve the sugar in 2
pints of water. Add the lemon juice and the liquid from the
"plant". Dilute with 5 pints of water, mix well and store in corked
bottles for at least 7 days.
Use strong bottles as pressure may build up which will cause
thin bottles to explode. For the same reason use corked
bottles rather than those with a more secure closure that
will not 'give' under pressure.
Ross requested a recipe for ginger beer. This is a recipe that I have
often used and it produces a really old-fashioned drink. It is quite a
long process but well worth the effort. The amount of sugar in the
final stage can be varied according to taste. Please excuse the
use of Imperial measures - I am only a poor ignorant pom.

When frozen fill in the orange fruit cases ad place in Ice-cream Cave for three or four
hours, and it is then made more delicious by covering the ice in each case with a
meringue and browning quickly with a red hot salamander, serving immediately. The orange
pulp taken from cases can be used in obtaining juice.

Raisins

Shave the yellow peel from the lemons, cutting very thinly so that as little of the white
underlayer as possible is attached. Set the yellow slices aside. Then peel the bitter
white underlayer off and discard it.
Slice the lemons into very thin slices. Place them into a container and cover them so
they don't dry out.

Boil the water in a large kettle. Remove it from the heat and stir in the yellow lemon
peel, the sugars, and the syrup. When the sugars have dissolved, cover the kettle and let
the contents cool to room temperature (25'C or 75'F). Then add the lemon slices and the
yeast. Leave it to stand overnight.

Place 4-5 raisins and a teaspoon of white sugar in the bottom of each of several clean
bottles (wine or soda pop). Pour the sima into the bottles, straining it through a sieve
to remove the lemon. Cap the bottle tightly.

The sima will be ready to drink when the raisins rise to the top of the bottles, about
3-7 days depending on the temperature of the room where they are stored. Serve it well
chilled.

cinnamon.
Stir in powdered sugar and vanilla. Beat with wire whisk or hand mixer until foamy.

Pour into 4 cups or mugs. Serve with whipped cream and cinnamon sticks.

Preparation: 1. Combine the sweetened, condensed milk and the evaporated milk. Set
aside. 2. In a 6 inch strainer, place a coffee filter. Put the tea leaves in the filter
and place in a 2 quart pan. 3. Bring the water to a boil, then pour it onto the tea
leaves. Stir thoroughly and let steep in the pan for two or three minutes. 4. Remove
strainer and discard the tea leaves. 5. Allow tea to cool to lukewarm. Pour the tea
into tall glasses filled with crushed ice. 6. Add about 1 inch of milk mixture and stir.

2 cups strawberries, frozen
1 banana
6 ounces lemonade, frozen concentrate
2 1/2 cups cold water
30 ounces club soda -- 1 bottle
30 ounces ginger ale -- 1 bottle
2 bottles 7-Up®

* All frozen concentrates are to be thawed partially.


** Use as much 7-UP or equal amounts of other soft drinks to make the punch to your taste.

1. Using a blender, blend the juices a little at a time, pouring into large
punchbowl or other large container. Blend the banana and strawberries only until coarse
blended, not pureed. Mix the ice water in the punch bowl with other ingredients and stir
to blend.
2. Just before serving, add the club soda, ginger ale and enough 7-Up to suit your
taste. Stir gently to mix all juices from the sediment on bottom of bowl. Serve this as
is or over ice.

Serving Ideas : Serve this at any occasion for a non-alcoholic punch.

NOTES : You may wish to make an ice ring to float in this for a decorative and festive
touch. Using a ring mold, freeze a shallow layer of water, put fruits in a pattern on top
of ice, pour a thin layer of water, refreeze. Repeat these steps until you have built up
the ice ring and made several layers of fruit designs. Unmold the ring and place in punch
bowl just before serving. Use juice instead of water for ice ring if you wish.

NOTE: Crushed pineapple juice canned in its own juice is preferable for a less-sweet
drink; use pineapple canned in syrup for a sweeter concoction.

Poke 1 t cloves into each orange for Floating Cloved Oranges. Add cider, seasonings, and
Floating Cloved Oranges to crockpot; heat at least 1/2 hour, and the longer, the better.

Orange Stars: cut oranges into 1/2" slices. Stick 5 cloves around slice at equal
intervals; cut out wedges between cloves. The result looks kind of like a star.

Put cider, sugar and fruit juices (undiluted) in large pot. Tie cloves and allspice in
cheesecloth. Add to cider with nutmeg. Cover and simmer for 30 min. Remove spice bag.
Serve hot in mugs with cinnamon stick in each mug.

Makes 24 6 oz servings.

1/4 cup Orange juice
1/4 cup Pineapple juice
1 tablespoon Coconut milk -- *
1/2 each Banana
1/4 teaspoon Ginger root;fresh -- peeled

1/2 cup -Crushed ice or 2 small ice -- cubes

* Can be made from fresh or dried coconut or purchased bottled. Do not use the canned
coconut mix for mixed drinks as it is very sweet and different.
If using fresh coconut, cut coconut meat into 1" pieces & place equal amounts of coconut
& hot water in food processor or blender. Puree at high speed for a couple of minutes,
let steep for 30 minutes. Then pour into a strainer set over a bowl. Press on the pulp
and squeeze by the handful to extract as milk as possible. Pour the milk through a fine-
mesh strainer.
For dried coconut: use 1 cup unsweetened, dried coconut with 1 1/2 c hot tap water. Allow
to stand for 5 minutes. Puree one minute and proceed as above. Will keep up to three days
refrigerated and indefinitely, if frozen.
