2 large egg whites 1/2 cup sugar 1 tsp. vanilla extract 3 T cocoa powder 1/2 cup semisweet chocolate chips
Preheat oven to 250. Line 1 baking sheet with aluminum foil. In a large bowl, beat egg whites until they hold stiff peaks. Beat in sugar, then the vanilla. Reduce speed to low and beat in the cocoa powder. With rubber spatula, fold in chocolate chips. Drop the meringue mixture by rounded teaspoonfuls onto the baking sheets, spacing them 1 inch apart. Bake for 1 hour. Turn off the oven and dry the cookies in the oven 2 hours longer. Remove them and store in an airtight container. Makes about 40 cookies.
