Ingredients for 3.5 cups (700g) of rice

3 ½ cups of rice (700g)
2 red onions
2.2 lbs of porcini mushrooms (1kg)
14 tablespoons of butter (200g)
3 ½ cups of pumpkin (700g)
2 cups of grated Parmesan cheese (200g)
Instructions

Preheat the oven to 350°F (180°C). Cut the pumpkin into pieces and roast for 40 minutes.
Finely chop the onion and sauté it in a pan with a bit of butter until it becomes golden. Add the stems of the mushrooms and cook them with the onions.
