Introduction:
You’ve worked all day, still need to get a wholesome dinner ready and don’t have a lot of time. A typical reaction is to order a pizza or pick up something at a fast food franchise. As someone who hasn’t eaten a slice of pizza or been to one of those franchises in over 20 years, my reaction would be: WHY SETTLE FOR THAT WHEN YOU CAN EAT REAL FOOD? If all you want to do is stuff a lot of calories into your mouth just serve a couple of quarts of ice cream!
IT DOESN’T HAVE TO BE THAT WAY! As a professional chef, I have prepared thousands of wholesome and delicious meals and had them on the table in less than an hour, and so can you. When I say less than an hour, I mean from the minute you start preparing a meal until everyone is sitting at the table admiring your dinner.
Basically, the way to do this is as easy as one, two three:
Decide what you’re going to serve. Make up a shopping list during the day and shop for everything you’ll need before you go home (or sooner).
Take a lesson from Chinese restaurants and do all the necessary prep work as soon as you step into the kitchen.
Start the cooking process and serve your meal.
First, you should have a clear idea of what the meal will be, second, have all the necessary ingredients at hand, and third, keep things humming in your kitchen by doing more than one thing at a time. Nowadays we call that multi-tasking. To accomplish that successfully requires some planning and this cookbook has been written to help you do just that. If you know you’re going to be rushed at dinner time, just choose one of my meals in the morning and shop on the way home. I’ve suggested some side dishes to round out most of the meals but feel free to improvise.
Some of these meals are from my award-winning cookbook, Help-I Gotta Cook! (named Cookbook of the Year), and some are new ones I’ve developed since it was written. So, the next time you come home, don’t have a lot of time and need a great meal, here they are. Even if you’re not under any time constraints, they’re still great meals.
Note: Simply because a meal is fast to make doesn’t mean it must be mediocre. Some of the meals contained here can rightly be called gourmet, so you can use them for a special occasion without spending a lot of time.
