Pudina [MINT] rice

Pudina (Mint) Rice


Prep time---5 minutes
cooking time 10 minutes
Ingredients:
Rice - 1 cup boiled
Spring Onions - 2 chopped
Cumin seeds - 1 tsp
Oil - 1 tbsp
Pudina (Mint) - 1/2 bunch
Garlic - 2 flakes
Green chillies - 1

Method:

Grind pudina, garlic and green chillies and keep it aside.
Heat oil in a pan and add cumin seeds. When it crackles, add spring onion and fry till transparent. Add pundina paste and rice and mix well. Cover with lid for 2 - 3 minutes.


Grow mint in your garden. Quite easy. After removing mint leaves, place mint sticks till approx 2-3 cms deep in a pot filled with soil. It takes 1 - 2 weeks for mint to grow. Pluck mint leaves whenever required. It will grow again in the pot. It is organic, free from pesticide and tastes definitely better than the ones bought from the shop.

Veg Soya Biryani


this recipe i tried first time. I used soya nugget instead of chicken or meat. i tell u it is worth for vegetarian to enjoy the healthy and tasty biryani.


Ingredients
basmati rice-2cups
soya nugget-1cups
cauliflower-1cup
carrot-1/2 cup
peas-1/2 cup
beans-1/2 cup
onion-2fried
green chili
curd-2tbsp
bay leaves-12
big caradomn--5-6
zeera-1tsp
green caradmon-2-3
clove-5-6
blackpepper-1/2 tsp
biryani masala-1/2 tsp
saffron-1/2 tsp soak in water
ghee-3tbsp
coriander leaves
minit leaves

Method
Wash rice and boil in excess water. when 2/3 done separate the excess water and spread it on a cloth so there is not any steam.
Take pan and heat ghee. add all the dry whole masalas. when splutter biryani masalas.mix well.add all the vegetables and little water cover it till all veggies are done.

now assemble for biryani. i make it in the microwave which is very easy to cook.
take microwave dish add half veggitables and curd . microwave for 2-3 minutes on high.take out the dish.now spread rice on it. after thatspread fried onions and then minit and coriander leaves.now again spread veggies and then rice. after that spread onion and green leaves.now sprinkle saffron water. cover it with cling film.
microwave for 6-8 miutes.it is ready to eat.


Eat with raita or green chutney and pickle

Tiranga Rice

Wishing all a very Happy Independence Day





To celebrate independence day, I thought of preparing something special and came up with this idea of preparing three varieties of rice - tomato rice, coconut rice and a "special" pudina rice.


Tomato Rice

Ingredients:

Rice (basmati)- 1 cup boiled.
Tomato - 2, blanched and pureed
Cumin seeds - 1 tsp
Onion - 1 medium chopped
Oil - 2 tbsp
Salt - To taste

Blanched Tomatoes


Method:

Heat oil in a pan and add cumin seeds to it. When it crackles, add onion and fry till transparent. Add tomoto puree and fry till it leaves oil. Add boiled rice and salt and mix well. Cover it for 2 - 3 minutes.


Coconut Rice

Ingredients:

Rice - 1 cup boiled
Cocunut- 1 cup grated and ground
White Urad dal - 1 tsp
Hing (asefoetida) - 1/2 tsp
Curry Leaves - 1 tbsp
Mustard Seeds - 1 tsp
Oil - 2 tbsp
Salt - To taste

Method:

Heat oil in a pan and add mustard seeds and hing. When it crackles, add urad dal and fry till golden color. Add curry leaves and coconut and fry for 5 minutes on low flame. Add rice and salt and mix well. Cover it for 2 - 3 minutes.



Pudina (Mint) Rice
Ingredients:

Rice - 1 cup boiled
Spring Onions - 2 chopped
Cumin seeds - 1 tsp
Oil - 1 tbsp
Pudina (Mint) - 1/2 bunch
Garlic - 2 flakes
Green chillies - 1


Method:

Tip

Mint can be grown at home in a small pot. I have tried it at home. It smells and tastes great and is organic too.

Tehri [Rice variety] - Speciality of U.P.




This kind of rice variety is  especially prepared in Uttar Pradesh, India. I have stayed in UP for about 20 years and found this recipe quite handy on a stressful day. It is easy and quick without compromising on nutrition as it contains rice, dal and vegetables, all in one dish.

Ingredients:
Rice (Sona masuri/basmati) -1cup
Tur dal (sambhar dal) - 2 tbsp
Cumin seeds - 1 tsp
Vegetables - which are available (like carrot, capsicum etc.)
Potato - 2 (cut in small cubes)
Onion -1 medium chopped
Green chillies-2 -3 (slit)
Tomato - 2 medium chopped
Coriander leaves
Turmeric powder-1/2 tsp
Garam masala-1/2 tsp
Cooking oil/Ghee - 2 tbsp
Water - 1 1/2 cups
Salt to taste                                

Method:

Soak rice and dal in water for about 1 hour.
Heat oil and add cumin seeds. When  it crackles, add onion and fry till it becomes transparent. Now add tomato, green chillies, coriander leaves  and fry for another 5 mintues. Add turmeric powder, vegetables, potatoes, salt and garam masala.
Add rice and dal with water and pressure cook for two whilstles and wait till pressure is released before opening the lid.

Serve hot with pickle, curd or coriander/mint chutney.

It is a good variation from pulao or biryani.
