The Cookie Story
If you read my Cardamom Cookies post, i mentioned that i m baking few samples for my New Year Goodie bags for my friends and family. Today's eggless almond cookies with whole wheat flour and almond meal is part of that bake sample.
This almond cookie recipe is again a decade old recipe in the blog, which is getting a much needed renovation with new content and pictures. In my previous cookie recipes, I have used Crisco instead of butter because I believed shortening was a healthier option for baking. I thought it would lead to a healthier final product.
Now, after learning about food, nutrition and with age, i prefer to cook with butter and ghee than other fats. Another reason, Why i m redoing my old recipes, making them again, with better ingredients and more tastier.
Why you should try this Almond Meal Cookie
- Simple and clean ingredients. Home baked goodies, always has that advantage of knowing what goes into the making. No preservative, no nasty additives.
- They are very easy to make. Less ingredients and less time. The cookies were ready in 15 minutes.
- They make a great edible gift for the festive season. I always bake few goodies for my friends and family during New year, few cookies and my fruit cake are always part of that bake.
- Kids love it, both my kids loved these cookies. While the elder fella loves chocolate cookies, the younger one enjoyed these crunchy almond cookies everyday for his evening snack.
- They are easy to bake for a large crowd. The above measurement gave me 22 cookies, just double or triple the recipe accordingly.
Ingredients to make Almond Cookies
- Flour : I have used a combination of whole wheat flour and almond meal to make these buttery almond cookies.
- Sugar : I have used white sugar to sweeten these crunchy almond cookies. You can use brown sugar too.
- Fat : Butter, just butter, no doubts on that. If vegan, pls substitute accordingly.
- Spices : I have used a good amount of cardamom in this eggless cookie. You can go ahead add a dash of cinnamon or a pinch of ginger and nutmeg and make it a spiced cookie.
- Liquid : I have used full fat milk to make the whole wheat cookie dough. You even use water or plant based milk, since the liquid is just 2 tbsp.
- Toppings : I have used almond silvers as toppings, you can also use almond flakes and give a crunchy top to the cookie.
Step by Step Instructions to Make Buttery Almond Cookies

- Preheat the Oven, to 170C, Line a baking tray with parchment and keep ready.
- Take sugar along with cardamom powder in a mixer jar. Grind it to a fine powder.
- In a large bowl, take flour, ground sugar and spice mix. Whisk it together.
- To this add butter and mix it into the dough. To this add milk slowly and make a soft dough.
- Make log of the dough and refrigerate for 20 minutes.
- Take the dough out, cut into thick disc, place it on the parchment.
- Bake it in the preheated oven for 14 minutes. Another 2 minutes with top rod on. Oven timings vary with models. So be watchful after 12 minutes.
- Remove the cookies from the oven, transfer it to a wire rack. Let it cook completely.
- Store it in an air-tight container.
Whole Wheat Almond Cookies | Eggless Almond Cookies
Equipment
- Measuring cups and spoons
- Convection oven
- Bowls for mixing the batter
Ingredients
- 1 cup whole wheat flour
- ½ cup sugar
- ¼ teaspoon salt
- ⅓ cup Almond meal
- 1 teaspoon cardamom powder
- 100 gram salted butter
- 2 - 3 tablespoon milk
- 3 tablespoon silvered almonds for garnish
Instructions
- Preheat the oven to170C. Line a Baking tray with parchment paper.
- Measure and keep all ingredients ready. All ingredients should be at room temperature.
- In a mixer jar, take sugar and cardamom powder and grind it to a fine powder.
- In a wide bowl, mix the flour, powdered sugar and almond meal.
- Next add butter to the flour mixture, start making a soft dough. Add 1 tablespoon milk at a time and make a soft dough.
- Divide the dough and shape them into logs and refrigerate them for 20 minutes.
- After 20 minutes remove the dough, using a sharp serrated knife, cut cookie into thick disc and place them on the lined tray.
- The cookies won't spread, even then leave enough space between cookies while arranging them on the tray.
- Garnish the cookie with silvered almonds. This is purely optional, you can also roll the tops on almond flakes.
- Bake the cookies in the preheated oven for 14 minutes. After 14 minutes, i turned on the top rod and baked for another 2 minutes.
- Remove the cookies once they turn golden brown. The cookies will still be little soft, while taking them out.
- Leave them on the tray for 2 minutes. Then remove it on to a wire rack. Let them cool completely. Store it in an air tight container.
Notes
- oven baking time and temperature differs from model to model. So keep an eye on the cookies from 12th minute.
