I love the flavor of garlic chives. Mix them with moist and fluffy egg and you have a delicious dumpling filling. I’m using @laobandumplings dumplings, I always find them at Whole Foods.
Ingredients:
1-8oz package ginger chicken dumplings.
2 tbsp white miso.
4 scallions (chopped).
1.5 tsp fresh ginger (grated).
1 small garlic clove (grated).
3 cups chicken bone broth (I used unsalted).
1 tbsp gochujang paste.
1 kombu strip (optional).
2 tsp sesame oil.
2 egg yolks.
Tamari for curing the yolks.
2 tsp rice vinegar.
Salsa macha for topping.
Sesame seeds for topping.
Add the egg yolks to a small ramekin and coat in tamari and add 1 tsp rice vinegar. Let them cure 1 hr in the fridge.
Separate the green & white part of scallions.
