Crullers - Light, airy no yeast Donut!
How to make light, airy crullers with a maple glaze! This easy to follow recipe will ensure those characteristic piped lines! Crullers are a no yeast fried donut that is incredibly easy to make!
18 reactions · 15 shares | Strawberry Glazed French Crullers …or as my sister likes to call it - strawberry churros! I can’t rave enough about the versatility of choux pastry. Any combination of baking, frying, filling, topping and shaping will yield you anything from profiteroles to cream puffs to beignets to churros and also to this french cruller (which essentially is churros in the shape of a doughnut) 😁 For tips and tricks on how to get the perfect choux pastry, be sure to check out my previous reel on choux here (https://www.instagram.com/reel/CcPNYT5JkLb/?igshid=MzRlODBiNWFlZA==) RECIPE (makes about 15-18 crullers depending on your piping tip) Cruller Choux batter: 125gms butter 1/2 cup water 1/2 cup milk 2 tsp sugar 1/2 tsp salt 1 1/3rd cup AP or Bread flour 4 large eggs Bring butter, water, milk, sugar and salt to a boil. Add all the flour at one go stirring constantly at medium-low heat until a thin film forms at the bottom of the pan. Transfer to a mixing bowl and let cool for a few minutes. Whisk 4 large eggs and gradually add and mix the eggs into batter until the right texture (stiff peaks and V shape from spoon) is achieved. Stop adding eggs once this is achieved. Transfer to piping bag with large star tip and pipe circles (bout 3 inch in diameter) onto parchment squares. Deep fry in oil at 370F/180C until golden brown. Transfer to wire rack to drain excess oil and cool. For the strawberry glaze: Puree/mash 1/2 cup of strawberries together with 1.5 cups of sifted icing sugar and 2 tbsp of lemon juice. Drizzle glaze onto cooled Crullers and garnish with fresh strawberries.
