Bonnie Stern on Instagram: "Gougeres are the savory version of the classic French pastry used to make cream puffs and eclairs (pate a choux). We used to make them ALL THE TIME! But it wasn’t until Mitchell Davis @kitchensense included them in his latest newsletter that we were reminded!! They are easy, versatile and so delicious. Serve them on their own or filled with scrambled eggs, smoked salmon, goat cheese, caramelized onions, sauteed mushrooms etc. Serve little ones for apps (or snacks) or larger ones for brunch or lunch (or snacks).
Note: I made this with @cup4cup gf flour and lactose free Cheddar and it worked beautifully.
Ingredients
1 cup water
1/2 cup cold butter, cut in small chunks
1 cup all-purpose flour
4 extra large eggs
1 tsp kosher salt (Diamond Crystal)
1/4 to 1 tsp fresh Smoked Salmon Goat Cheese, Salmon Goat Cheese, Silver Palate, Cheese Pastry, Gf Flour, 2024 Recipes, French Pastry, Pastry Tart, Pastry Cream
