What you need:

To make the Slow Cooker Christmas Casserole, gather russet and red garnet sweet potatoes, cubed ham, green beans, and savory stuffing mix. You’ll need cream of celery and cream of chicken soups for creamy layers, along with milk and butter for richness. Sharp cheddar cheese adds a delicious topping, while toasted French fried onions provide a crispy, flavorful finish. Serve with cranberry sauce and dinner rolls for a complete holiday meal.

How to put together

  1. Spray slow cooker with non-stick spray. Peel and cube the potatoes and sweet potatoes into small pieces. Add them to the slow cooker and pour the milk over, place the butter slices on top of the potatoes. Sprinkle with the allotted salt and pepper.
  2. Add the cubed ham on top of the potato layer.
  3. Next, spread over the cream of celery soup.

  3. Then, spread over the cream of chicken soup.

  3. Sprinkle over the toasted french fried onions and serve!

Variations

  • It’s not recommended to stray from the recipe much for the liquid amounts are just right to for the amount of ingredients and cooking time.
  • Dried cranberries are a great addition to add even more Christmas flavor. Another great topping is sliced almonds.
  • Don’t like sweet potatoes? Just add the same amount of potatoes.
  • Can I use chicken or turkey instead of ham? Yes, but use my Slow Cooker Thanksgiving Casserole for a more complete recipe.

I don’t recommend freezing anything with potatoes in it, for the texture changes too much.

Ingredients  

Potato Layer

  • 1 ½ lbs. russet potatoes, peeled and diced SMALL
  • 1 ½ lbs. red garnet sweet potatoes, peeled and diced SMALL
  • cup milk
  • ½ cup butter, sliced
  • 1 tsp. salt
  • ¼ tsp. pepper

Next Layers (in order)

  • 3 cups cubed ham
  • 10.5 oz. can cream of celery soup
  • 6 oz. savory flavor stove top stuffing, (or chicken flavor)
  • ½ cup salted butter, sliced
  • 1 lb. frozen green beans, (or fresh trimmed green beans)
  • 10.5 oz. can cream of chicken soup
  • 8 oz. shredded sharp cheese, (freshly shredded if possible)
  • 1 cup toasted French fried onions, (ADD AT THE END)

For Serving

  • cranberry sauce
  • dinner rolls

Instructions 

  • Spray slow cooker with non-stick spray.

    We never done anything like this in a slow cooker before. I made this to try out just to see if we liked it before Christmas got here. Yup, It was Yummy. We’ll be having this with our Christmas dinner. The only thing that I did different was replace the Campbell’s Cream of Chicken Soup With Campbell’s Cream of Chicken With Herbs Soup.
