INTRODUCTION
 Philippine Wild Raspberries or Sampinit are
known widely by locals as sweet-tart
tasting red berries from a thorny type of
weed that grows in the Mountains of
Quezon. These wild berries are runners and
are known to be invasive to other crops
growing in the area.
 “Daily Pies” is the first Sampinit
Flavored pies in the Quezon
Province. Offering only the freshest
and hot pies it take the edge over
the competitors by using only the
fruit flavors that are endemic in the
area of Quezon, making each
flavor distinct over the pies readily
available in the market.
 Sampinit berries are endemic in the area of
Quezon Province and since there is none
existing pastry product that uses it as a
flavoring, the idea of using it as filling for a pie
is born.
 The studies about Sampinit Fruit proved the
health benefits of this berries, as of now it was
preserved as Fruit Jams, Juices and Wine. Since
it grows abundantly in the area it has a bright
potential to be used as specialty product.

I. EXECUTIVE SUMMARY

 Sampinit Pies are made from only the finest


ingredients and hand picked sampinit berries
ensuring that every pie was guaranteed farm
fresh and are very nutritious.
 Each pie was filled with Sampinit Filling contains
phytochemiocals (any of various biologically active
compounds found in plants) normally presented
in berries, known to possess antioxidant, anti-
inflammatory, anticancer, antihypertension,
antimutagenic, antineurodegenerative, and other
bioactivities.

 To ensure that the product will be able to
reach its target market it the first step is to
secure stores in highly visible locations, near
public markets, schools or on the town proper .
 Continuous interactions with customers to
continuously receive feedbacks for products and
service to help to serve the clients even better.
 Daily Pies will be run through sole proprietorship.
II. PRESENT MARKET SITUATION

 Buko Pie and Pies to Go are the products that


are slightly similar to the “Daily Pies” sampinit
pie.
 The only pie that offers locally grown fruit filling
that infused with health benefits that is rich in
anti-cancer phytochemicals .
 Plans to sell the product on the city of Lucena
and through online marketing.

 Make sure that the daily sales of 50-60 pieces of pie
are increasing by 20 pies per month to meet the
objective of raising sales by 120 pieces of pies and
also to increase sales of Sampinit pies by 4 percent in
the next six months after its physical store launching.
 By ensuring product freshness and being guided by
the taste preferences of the consumers it is more
likely that the business will achieve its target sales
increase for the next 6 months of operation.

that provide good quality products that is highly
competitive in the market,commits to bring the
best of customer service and be of help in the
community by using only the locally grown raw
materials and sustain livelihood for the
agricultural sector of the Province.

regarding the product and continuously
improve it based on their preferences.
 Monitor if the business hits its target market

profitability.
 The business will not only focus on providing the
best pies in town but also on giving 100% excellent
customer service.
 Create a website and social networking page for
your business that features many photos of your
baked goods. Offer online specials and discounts
to those that join the mailing list. Make the site
appealing and provide the information necessary
to easily access the bakery.
X. Procedures and
Documentation
CRUST
 2kg all-purpose flour
 ½ kg sugar
 1⁄2teaspoon salt
 1 ½ kg shortening,
 2 -3 tablespoons cold water
FILLING
 2kgs of Sampinit
 ½ kg tapioca starch
 1kg sugar
 Egg ( for egg wash)
Crust:
 Combine flour and salt in a medium bowl.
 Cut in shortening with either a fork or pastry blender.
 Sprinkle in cold water 1 teaspoon at a time until flour is moist
enough to form a dough.
 On a lightly floured surface, role the ball of dough out into an 8
inch circle.
 Repeat above steps to make second crust.
 Place first crust into pie plate and set second crust aside
Filling:

1.Place sugar in an ovenproof


shallow pan and warm in a 250°F
(120°C) oven for 15 minutes.
2. Place berries in a large stainless
steel or enamel saucepan. Bring
to a full boil over high heat,
mashing berries . Boil hard for 1
minute, stirring constantly.
3. Add warm sugar, return to a
boil, and boil until mixture will form
a gel about 5 minutes.
 Reheat the oven to 350 degrees.
 Butter the molder.
 Roll out the dough until you can cut 6 circles about 5" in
diameter.
 Press the dough into each molder
 Gather up the pie dough scraps, and roll flat again. Use a
pizza wheel to cut 7 tiny stripes of dough for each pie. Flour
them well, pile them on a plate, and place the plate in the
fridge while you make the filling.
 Divide the raspberry mixture between
each molder.
 loosely weave in 3 other strips in the
opposite direction.
 Brush each pie with egg yolk
 Bake the pies for about 20 minutes, until
golden brown and the filling is
bubbling.
 Let the pies cool for 15 minutes, and
then run a knife around the edges to
loosen them.
 Remove the pies from the pan to cool
completely on a rack
 Serve!
