This “Manifesto” is intended to convey the information needed for you to
become a top notch Broista. Your franchisee/operator has provided this
Manifesto to you so you can learn the proper operational and technical
knowledge needed to work at DB. Remember to breathe, and HAVE

DB EMPLOYMENT GUIDELINES
This Manifesto is not a contract of employment. It is not a guarantee of any particular
benefit or specific action. Your employment with DB or your franchisee/operator is “at
will,” and no one at DB has the authority to enter into any agreement for employment
for a specific period of time, or to make any representations or agreements that are
inconsistent with this “at-will” status. This Manifesto is only intended to be a training
tool, outlining DB standards.
DB Franchising USA, LLC, requires that all franchisees/operators comply with all
applicable federal, state, and local employment laws that apply in the jurisdiction
where their shop(s) are located. The following policies are a summary of rules that may
apply in the jurisdiction in which your franchisee/operator is located. The following are
guidelines only; specific employment policies are set by each franchisee/operator and
may be contained within a separate employment handbook that is provided to you at
the time of your hire. The policies in that employment handbook are controlling.
However, the following guidelines do contain an explanation of the types of policies
that all employers, including DB Franchising USA, LLC, and DB franchisees/operators,
must follow. The following policies also set broad guidelines, and each individual
situation will be evaluated independently by your employer.

All Dutch Bros locations offer our Private Reserve, White Coffee
and Decaf as espresso options. We roast all of our coffee in
Grants Pass, OR. For customers who desire the opportunity to
enjoy Dutch Bros at home, they can purchase our coffee through
shop.dutchbros.com.
The Colombia is the most aromatic of our 3 beans. It creates the overall
body of our coffee.
The Brazil has the highest level of acidity and lends its nutty overtones and
overall sweetness to our blend.
Our beans are roasted to what is known as a Full City Roast, which is an
extra bold medium roast.
WHITE COFFEE
White Coffee is comprised of our 100% Arabica beans from Brazil.
White Coffee is roasted for a shorter amount of time than our Private
NUTTY TASTE
Reserve which gives the beans their signature color.
SLIGHTLY ROASTED
The lighter roasting method creates a nutty taste when brewed, which is

isn't well mixed in the drink won't be consistent in flavor.
● Always put the sauce or syrup in the cup with the espresso before adding

SYRUPS sauces. When a hot or iced drink is ordered with
sugar-free syrup, it receives one flat scoop.

PULLING THE PERFECT SHOT
TOO FINE THE SHOT
Dialing in your grind is crucial for hitting your target window of
15-26 seconds for our Private Reserve and Decaf Coffee.
The ideal grind for espresso is just short of powder. With an
overly coarse grind, the water will gush through the coffee
producing a thin, watery, under-extracted and bitter shot. Too
fine of a grind will slow the extraction process to the point that
only dark, burnt tasting dribbles will escape. To adjust your grind

grind to be more coarse turn the adjustment collar to the left.
When adjusting the grinder, an adjustment of one notch will
change the shot time by 2 to 3 seconds. After changing the
adjustment collar to the appropriate coarseness it will take a few
cycles for the grind to achieve the ideal coarseness. As you are
running the coffee grind, cycle it through the dosing chamber
using the dosing chamber lid, not the portafilter, to avoid
transferring moisture into the dosing chamber.
THE DOSE
The proper dose is essential to producing shots that are
consistent in quality and flavor.
Position the portafilter under the grinder dosing chamber, pull
the lever toward you and guide it back. * For our Private and
Decaf Coffee, each pull will yield 7 grams of coffee. *Perform
this step twice to get a 14 gram dose for our Private and Decaf
Coffee and 16-18 grams for our White Coffee.
Dutch Reminders:
Don’t slap the grinder! It is crucial that you guide the lever back into place; if you let it swing back on its own, it will
wear out the springs and throw off your next shot, because the proper dosage of 7-grams per pull was not achieved.
It is also inaccurate to pull the lever more than two times, due to low grind levels.
The grind level should always be above the nut inside the dosing chamber to ensure accurate dispensing of grind.
If your shots are inconsistent, make sure not to completely fill the grind chamber; you will be wasting a lot of coffee.

With a level tamp, the water will travel evenly through the grind,
extracting a consistent shot of espresso.

between 15-26 seconds.

Once you load the portafilter, press the start button. There will be a
short delay, allowing the grind to infuse with water and then produce a
stream of coffee. For Private Reserve and Decaf this will turn into a
stream of golden, caramel-colored coffee resulting in a 2 oz. shot of
espresso with three identifiable parts:
● Crema – The top, thin, frothy layer of the espresso shot. This is
sweet, with a light, golden brown color that changes to whitish
as the good oils in the coffee are extracted.
● Body – The middle of the shot. It should be a caramel brown
color.
● Heart – The bottom of the shot. It should be a deep, rich brown
color with a bitterness that balances the sweetness of the crema
and body.
Half Caf Standard:
● When pulling a half caf dub, combine one pull of regular coffee
and one pull of decaf coffee together in the same portafilter.
Dutch Reminder:
To achieve consistent shots you must first hone in on a consistent tamp. In the coffee industry, 30 lbs. of pressure is
considered the “correct” amount of pressure to apply in order to obtain a consistent and quality shot. If the shot is
tamped evenly with approximately 30 lbs. of pressure and the end result isn’t a shot within the acceptable range the
coarseness of the grind should be adjusted. To gauge 30 lbs. of pressure your tamp should push against the
resistance of the grinder, but not lift the grinder. If the grinder is lifted, too much pressure has been applied. A
grinder and full hopper is equivalent to 48 lbs., which means you have applied 48 lbs. or more of pressure.
Give your espresso a shot at being as delicious as it can be. Clean your shot tins and portafilters on a regular basis.
You are taking the time to have the perfect grind, the proper dose, and consistent tamp, so make sure to pull a shot
into a clean tin, not one crusted with old coffee.

CARBURETORS
Carburetors are any blended coffee drink in which you have to substitute the sugar, caffeine or dairy. Trigger
words to let you know that you will be making a blended drink Carburetor-style are white coffee, decaf,
sugar-free, skinny, dairy free and/or fat-free. Carburetors are not as thick and creamy as the Freeze, but they are
a great alternative for someone who has dietary restrictions or is looking for a lower calorie version of our frozen
drinks. It is important to remember to always “ask and educate” and make sure the customer is satisfied with the
drink, especially if the customer is a new Carburetor drinker.
When adding extra shots to Carburetors above the standard 2/2/4, stir them into the drink after it's been
blended and do not top the cup with ice prior to blending (this includes Double Torture® and 9-1-1®). Adding the
extra shots after blending will help reduce the watery/frothy result you get with drinks like a Double Torture®
