AUCHENTOSHAN
How to pronounce AUCHENTOSHAN. “OCK-UN-TOSH-UN” Challenging to say, easy to drink
Auchentoshan new make spirit is the highest distillate produced by any Single Malt distillery in
Scotland. No other Scottish distillery insists on triple distilling every drop – double whisky distillation
usually reaches just 70% ABV. The Auchentoshan story is about Distilling Different to create a Lowlands
whisky.
Because we distill away all the impurities in the liquid, strong notes of fruit and citrus come
through. It also makes the spirit more prone to the epic woodiness that comes from the casks in
maturation. This makes Auchentoshan the smoothest, most delicate tasting Single Malt Scotch whisky.

AUCHENTOSHAN THREE WOOD

Single Malt Scotch Whisky has been matured in three

different cask types. From American Bourbon to Spanish
Oloroso Sherry – and then, finally, Pedro Ximenez Sherry
casks – this a rich, complex whisky with toffee and sherry
flavours. Three Wood makes a cracking Auchentoshan & Ale,
a mean Old Fashioned and a damn fine dram in its own right.

TASTING NOTES
NOSE
Blackcurrants, brown sugar, oranges, plums and raisins.
PALATE
Fruit syrup, plums and raisins – intense, sweet and complex.
FINISH
Fresh and fruity with long-lasting oaky sweetness.

4
AUCHENTOSHAN 18 YO

Triple distilled then matured for over eighteen years

for a refined whisky in American oak casks. The result: a
refreshing Lowland Single Malt whisky with the added infusion
of ripe citrus and green tea, the warmth of toasted almonds
and the signature smooth, delicate Auchentoshan taste.
TASTING NOTES
NOSE
Fresh tobacco leaf, then some sweetness, layered with a hint
of caramelised sugar, green tea and almonds.
PALATE
A smooth whisky taste with a floral freshness and a burst of
sweet barley at first. This gently ebbs, revealing a tangy
zestness of Auchentoshan whisky. The palate is left alive and
refreshed.
FINISH
A long, lingering well balanced Single Malt. A dram that
invigorates the senses.

5
GLENKINCHIE
The land they farmed had belonged centuries earlier to the de Quincey family, from whose
name 'Kinchie' derives.
Because of its closeness to Scotland’s capital city, the distillery is a famed stopping point on the
tourist trail – and the proud producer of what is commonly known as ‘The Edinburgh Malt’ – the pale,
dry aperitif of choice for polite society.

GLENKINCHIE MALT 12 YO

With a 12 years maturation in American oak barrels, this

expression of Glenkinchie develops floral notes and a flavoursome and fresh
creaminess. It replaces the 10 years old version and shows great maturity.
It’s light character is born from its distillation in some of Scotland’s largest
stills; matured for 12 years, the result is a light, floral whisky with a fresh,
creamy taste. Glenkinchie is perfect as an aperitif Single Malt or at the start
of a meal due to its fragrant, light and appetising body and taste.
Food suggestion: Glenkinchie is often enjoyed as an
accompaniment to sardines and works beautifully with parmesan cheese.

Noticeable vanilla, cut flowers.
PALATE
Medium. A clean and fresh flavour on the palate with distinctive floral and
grassy aspects. Some find notes of ginger in the finish.

ABERFELDY
Aberfeldy distillery is also known as ‘Dewar’s World of Whisky’
First planned in 1896 by the sons of John Dewar, Dewar’s Aberfeldy Distillery is the only Scotch
whisky distillery built by the Dewar family. Dewar’s was already a highly successful brand of blended
whisky, renowned for its quality, and the company needed more single malt whisky to use in its blend.
Tommy Dewar was an enthusiastic promoter of the ‘Dewar’s’ blend and the third person in Great Britain
to ever buy a car. He made his purchase shortly after Thomas Lipton (the guy who supposedly invented
tea) and His Royal Highness the Prince of Wales.
The creation of the distinctive Aberfeldy spirit all takes place onsite, with our extra long
fermentation in larch washbacks, and distillation in our tall pot stills overlooking the rolling Perthshire
hills. These processes create the honeyed-richness for which Aberfeldy whisky is renowned. Now popular
in its own right as a single malt, Aberfeldy still makes up the heart of the Dewar’s blend, contributing its
heather honey flavour to America’s best selling Scotch whisky.
According to the makers themselves, ‘The Golden Dram’ is a
nickname for Aberfeldy.
Time-honoured techniques, such as longer fermentation, conjure
rare honeyed notes – key to the signature sweetness of Aberfeldy’s
malts.
Aberfeldy Barrels and Bees is a golden union of Aberfeldy Single
Malt Whisky and local honey, sharing our stories, our crafts and our
complementary flavours.

CLYNELISH
The new Clynelish distillery was built as an exact replica of DCL's modern Caol Ila distillery on Islay
and has continued to produce a muscular, slightly peatymalt that ismuch valued by blenders – it is one
of the base spirits for the excellent Johnnie Walker Gold Label.
Clynelish has had a strong connection with Johnnie Walker blended whisky for many years. Around
95% of the spirit is used in Johnnie Walker, Most commonly found in the Gold Label Reserve.
However, in the following years, Caol Ila distillery faced a drought and closed for a year and did
refurbishments. Johnnie Walker was missing this peated whisky in their blends and needed something
to go in its place. So Clynelish reopened the original distillery in May 1969, under the name Brora
Distillery, and started making Brora whisky

DALMORE
The Dalmore’s heritage dates back to 1263. It was in this year that Colin of Kintail, Chief of the
Clan Mackenzie, saved King Alexander III from the fury of a charging stag. In recognition of this noble
act the King granted the Mackenzie Clan the right to use the 12 pointed Royal stag emblem on their
coat of arms.
When descendants of the Clan became owners of The Dalmore distillery in 1867, the Royal Stag
became the recognisable icon that proudly adorns each bottle of The Dalmore today; an emblem which
encapsulates a rich past whilst also embodying a promise that The Dalmore will remain at the pinnacle
of single malt.
The Dalmore house style derives from a close and trusted relationship that was forged with sherry
house González Byass over 100 years ago. The rare casks, which have previously held 30 year old

GLENMORANGIE
The copper stills in which we distil our spirit, are the tallest in Scotland. With necks as tall as a
giraffe, they create more space for taste and aroma. And so we craft a wonderfully fruity and delicate
spirit, ripe for experimentation.
The giraffe has loooong been our spirit animal. After all, this majestic animal is the same height as
our towering stills. But although the giraffe is known and loved at Glenmorangie and across the world,
few are aware of the threat it faces in the wild. Numbers have fallen by 30% in just 30 years – and some
types of giraffe are now critically endangered.
Knowing how urgently the giraffe needs help, we have pioneered a conservation partnership with
the Giraffe Conservation Foundation charity, which aims to secure a future for all wild giraffe
populations in Africa.

GLENMORANGIE ORIGINAL 10 YO
To give Original a delicious, go-anywhere finesse, we make it in our giraffe-
high stills, then we age it 10 years in bourbon casks to absorb all manner of
delectable flavours. The result is a smooth whisky which welcomes you with a
rush of citrus, then holds your attention with layers of luscious flavour, from
orange to honey and creamy vanilla, with bursts of peach.

TASTING NOTES

GLENMORANGIE NECTAR D'OR

first time. It’s about that first moment of finding your senses deliciously
overwhelmed, breathing in the sweet scents and wishing you could take a
bite of every creamy, flaky treat you see. In Nectar D’Or you can taste it all.
To create it, we take the delicate, fruity spirit of our giraffe-high stills and

Sauternes sweet white wine.

honeycomb.

GLENMORANGIE SIGNET
A velvet explosion, inspired by espresso.
As Dr Bill, our freethinking Director of Whisky Creation, enjoyed a cup of his
favourite Jamaican Blue Mountain coffee, the notion of Signet first came to him.
In its tiramisu tones and melting chocolate, you can taste his most delicious
imaginings.
Signet begins with our precious chocolate malt spirit, made just once a year
in our giraffe-high stills. Over the years, we temper its power with rare and
treasured casks. Bourbon for creaminess. Sherry for sweetness. The spice of
virgin charred oak. All balanced by some of the oldest whisky we own.

TASTING NOTES
NOSE
Coffee, ginger and cinnamon melt into dark chocolate and tiramisu, with dark
toffee, crystallized orange peel and rich fruit cake.
PALATE
A velvet explosion of crackling spices swirls around bitter mocha and dark
chocolate, toasted hazelnuts and mellow butterscotch.
FINISH
Mocha and spice combine with cappuccino and amaretto, before a finale of
chocolate-coated raisins and orange.

25
TOMATIN
The name itself gives an insight into this secret past: “Tomatin” translates to “Hill of the Juniper Bush”,
as juniper wood gives off no smoke while burning it has long been a favourite of illicit distillers who
must keep their practice secret.
The isolated location was perfect in almost every way, the only thing it couldn't offer was a
workforce. So when construction at the distillery begun, the architect was instructed to build a
number of houses to accommodate distillery workers. Over the years the number of houses onsite
began to grow as did the distillery itself and there are now 30 houses on site which Tomatin continues
to offer to its employees.
The vast majority of the whisky made at Tomatin was sold in bulk to third party companies and was
used in many famous blended whiskies such as J&B, Chivas Regal and Johnnie Walker.
In the 20 years prior to going into liquidation the growing export of Scotch Whisky meant
that Tomatin’s biggest customer was Japan’s largest drinks producer - Takara
Shuzo Ltd. As Tomatin was forced into liquidation in 1984, Takara Shuzo joined forces with the
respected trading company Okura and purchased the distillery, forming the Tomatin Distillery Company
Ltd and thus creating the first fully Japanese owned Scottish distillery in 1986.

OLD PULTENEY
When the Pulteney Distillery was established in 1826 it was only accessible by sea. The raw materials
required for production being brought in by sea, and the whisky was shipped out again by boat. Many
of the distillery workers at that time were also employed as fishermen. Sadly, the herring fishing
industry is no longer part of daily life in Wick but Pulteney Distillery continues to operate, distilling one
of the finest malts available today. Once brought in by sea, our virtually unpeated malt is now sourced
from a selection of the UK’s foremost suppliers.

Speyside
AULTMORE
Its name is a derived from the phrase An t-Allt Mòr, Gaelic for big burn, referring to its water source the
Auchinderran burn.
Aultmore had only been in operation for a couple of years when the infamous Pattison crash hit founder
Alexander Edward (who had been a bulk supplier to the stricken Glasgow blenders) hard in the pocket.
Edward struggled on until 1923, before selling Aultmore to John Dewar and Sons (taken over by DCL in
1925, nowadays owned by Bacardi, who bought it from Diageo in 1998). The distillery was completely
refurbished in 1971, at which time the stills were increased from two to four.

AULTMORE 12 YO
12 year old Aultmore single malt Scotch whisky, unveiled in 2014 for
the Last Great Malts by Dewar's. A refreshing dram, with plenty of
vanilla, honey and citrus, alongside a touch of grassiness. It's been

so this is all rather exciting indeed.

ABERLOUR
All our single malts are made with the best local ingredients of barley and soft water from nearby
mountain, Ben Rinnes. Our expertly crafted new spirit is usually matured for a minimum of 12 years
both in the finest hand-picked Oloroso Sherry butts and American Oak barrels. It’s this double cask
maturation which subtly brings together the characteristics of each cask to create a truly rich and
rewardingly complex range of single malts.
Founder of the Aberlour Distillery, James Fleming (1830-95) was a man of enterprise, vision and
compassion. James Fleming was a man of extraordinary generosity. He built a community hall for the
people of Aberlour and left money to fund the construction of a hospital and a bridge across the River
Spey. Self-effacing and modest, he lived by his family motto (bestowed on it by Robert the Bruce) of
"Let the Deed Show". A sentiment appropriately displayed on every bottle of Aberlour.

BALVENIE
The Balvenie is the only distillery in the Scottish Highlands that still grows and malts a proportion of its
own barley in order to create the perfect single malt whisky. Our farmers' instincts for when to sow and
harvest are crucial, as the Scottish weather is so unpredictable.
The Balvenie operates a working floor maltings, one of only a handful left in Scotland. After
steeping the barley in spring water sourced from hills above the distillery, we spread the grain across
our traditional malting floor. Here our malt men turn it by hand until the malted barley is ready for the
kiln, where it's dried using anthracite and a carefully judged amount of peat, adding further complexity
to our whisky.
Our stills have varied very little from when the distillery first opened. They maintain the same
‘Balvenie Ball’ shape, with a bulge or boil ball at the base of the swan's neck – a feature replicated in
the neck of The Balvenie bottle.

BALVENIE 14 YO CARIBBEAN CASK

The Balvenie Caribbean Cask 14 year old single malt whisky has
been matured in traditional oak whisky casks for 14 years, and
then ‘finished’ in casks that previously held Caribbean rum.
To create the ideal finish Malt Master David C. Stewart MBE filled
American oak casks with his own blend of select West Indian
rums.
When he judged the casks to be ready, the rum was replaced with
the 14 year old spirit and the wood was put to work adding the
final touches.
The result is an exceptional single malt whisky with the traditional
smooth, honeyed character of The Balvenie married with notes of
toffee and a hint of fruit, with a warm, lingering finish.
TASTING NOTES
NOSE
Rich, sweet and creamy toffee on the nose combines with fresh
fruit notes
PALATE
Rounded with vanilla and sweet oak notes, with a fruity character
that develops with time
FINISH
Soft and lingering

35
BELVENIE 17 YO
The DoubleWood 17 year old is an elder sibling to DoubleWood
12 year old and shares its honeyed, spicy characteristics, but it
is distinctly different, with deeper vanilla notes, hints of green
apple, creamy toffee and a striking richness and complexity.
This technique is at the heart of The Balvenie DoubleWood – it
sees the whisky matured first in American oak barrels, which
impart soft sweet vanilla notes, before being transferred to
European oak sherry casks, where the second cask ageing adds
rich spicy flavours and a depth and fullness of flavour.

TASTING NOTES
NOSE
Elegant and complex oak, vanilla, honeyed sweetness and a
hint of green apple.
PALATE
Sweet with dried fruits, sherbet spice, toasted almonds and
cinnamon, layered with a richness of creamy toffee notes and
traces of oak and deep vanilla.
FINISH
Vanilla oak, honey and spicy sweetness.

36
BELVENIE 12 YO DOUBLE WOOD
To make The Balvenie DoubleWood, David Stewart MBE takes
whisky that has spent at least 12 years in traditional whisky
casks, American Oak ex-bourbon barrels and hogsheads, and
moves it to Spanish oak ex-Oloroso sherry casks for an
additional nine months.
The traditional casks soften and add delicate character, the
sherry wood brings depth and fullness of flavour and the final
few months in our tuns allow the whiskies to marry
harmoniously.

TASTING NOTES
NOSE
Sweet fruit and Oloroso sherry notes, layered with honey and
vanilla.
PALATE
Smooth and mellow with beautifully combined flavours ~
nutty sweetness, cinnamon spiciness and a delicately
proportioned layer of sherry.
FINISH
Long and Warming

37
CARDHU
John Cumming and his wife lease a farm at Cardow – pronounced ‘Cardoo’ – and like other
farmers near the river Spey, they begin small scale distilling
John Cumming is convicted three times for distilling without a licence – although it would likely
be his wife Helen who was the distiller. Due to the hill the farm distillery was on, Helen could see the
police coming and would throw flour on herself and say that she was baking bread to disguise the smell.
She would then offer them tea and fly a red flag outside so that the other nearby distilleries could see
and take prompt action.
Cardhu distillery – previously called Cardow – must be one of the best-located distilleries in
Speyside: high on the hills on the north side of the Spey Valley with delightful views to the south. Though
they take their name from the Gaelic for Black Rock, the malts of Cardhu have a warmth and cleanliness
of taste, often described as silky, making them both elegant and approachable. Perfect for toasting,
celebrating and sharing with old and new friends.
The distillery is now run by Diageo and the distillery's Scotch whisky makes up an important part
of the Johnnie Walker blended whiskies.

CARDHU 12 YO
A much-loved single malt, Cardhu is an easy-going,
charming Speysider. With clean, crisp oak and sweet malt
evoking flavours of honeyed flapjacks and home-made
caramel squares, this is one for the sweet-toothed
among you.

TASTING NOTES
NOSE
Good body, decent sweetness, richness. Streaks of
smoke, apple peels, bruised pears.
PALATE
Smooth, rounded, gentle sweetness, soft peat. A little
smoke whispers sweet nothings.

38
GLENFIDDICH
In the summer of 1886, with his seven sons and two daughters by his side, William set out to
fulfil a lifelong ambition. Together they began building his Distillery by hand, stone by stone. After a
single year of work it was ready and William named it Glenfiddich, Gaelic for Valley of the Deer.
Water, air and malted barley. A trinity expertly crafted to make a Glenfiddich whisky. It inspires
influential 20th century designer Hans Schleger to create a radical design of the time, our triangular
bottle.

GLENFIDDICH 15 YO
Our 15 Year Old expression is created using a technique pioneered by
our Malt Master and its warm, spicy flavours are transformed with the
alchemy of the Solera Vat.
Aged in European oak sherry casks and new oak casks, the whisky is
mellowed in our unique Solera Vat, a large oak tun inspired by the
sherry bodegas of Spain and Portugal.
TASTING NOTES

combined with rich dark fruits.

mature this rich, intriguingly fruity and robust oak expression, but
there are many more reasons why this expression is special.

intense marrying period, and a warming, distinguished finish.

with elegant oak notes.
FINISH

GLENFIDDICH IPA
One of the first pair of entries in the Glenfiddich Experimental Series –
a whisky finished in casks seasoned with India Pale Ale. The Speyside
Craft Brewery created a special beer which was aged in ex-Glenfiddich
casks for a month before they were returned to the distillery and filled
with whisky for a three-month finishing period. The result is a vibrant
and fruity dram.
Brewed in bespoke craft IPA barrels, this single malt expression is
imbued with unique zesty citrus notes of ripe green apple, William’s
pear and spring blossom. Complemented by the subtle tang of fresh
hops followed by a long lasting sweetness.

GLEN MORRAY
Our story begins as the Elgin West Brewery, which had made local ales since 1830, is transformed into
the whisky distillery we know so well today. The first spirit runs off our stills on 13th September, 1897,
according to handwritten ledgers, now kept safe in our archives.
Made entirely from local barley, that new make spirit is filled into an unusually wide variety of casks for
the time, including Marsala wine casks and sherry casks.

GLEN MORRAY PORT CASK

This richer, sweeter Glen Moray celebrates our passion for exploring the
array of flavours different casks can bring to our whisky. First matured in
American oak casks for classic Speyside notes, it is then carefully finished
over several months in port casks from Porto Cruz, renowned as the
world's No. 1 port. Over time, these sweet Portguese wine casks enrich
our single malt with rich fruits and mellow wine notes - and give the
whisky a distinctive rosy tint.

TASTING NOTES
NOSE
Toasted vanilla, light oak and rich dried fruits.
PALATE
Refreshing spice with a citrus lemon tang. Caramelised sweetness with
cinnamon.
FINISH
Sweet, mellow wine and toasted oak flavours produce a finish whish is

MORTLACH
Founded in 1823, the distillery is currently owned by Diageo The whisky is a key component in
several Johnnie Walker bottlings. Aged 62, Alexander goes into retirement, selling Mortlach to the
infamous John Walker & Sons of Kilmarnock, prompting a new chapter in the liquid’s history.
At the time, they only owned one other distillery, testimony to just how valuable Mortlach
Whisky is in the blended whisky world and how integral it is to some of the world's finest and most
treasured blends.
Glenfiddich founder William Grant, worked at Mortlach distillery for 20 years previous to this.
Discover the best kept secret in Scotch: Mortlach brings bold flavour to Speyside. In a region generally
known for its smoother, gentler style of whisky, Mortlach’s exceptional flavour bridges the gap between
mellow and smoky.

MORTLACH RARE OLD

Rare Old was introduced in 2014 as the opening entry in the revamped
Mortlach range, combining bourbon- and sherry-matured whisky to create
a spicy, rich and flavoursome dram that shows off the distillery's excellent
spirit.

GLENLIVET
The glen of the river Livet is, too put it mildly, rather remote. These days the journey from the nearest
settlement, Elgin, is a short drive north through the picturesque Cairngorm mountains, although the
distillery is still isolated enough to be unlikely to be happened upon by chance – as Brand Ambassador
Ian Logan puts it, "If you find us by accident, you're lost".
The Glenlivet is famous as the first officially-licensed distillery in Scotland, after owner George
Smith took the brave decision to take advantage of the 1823 Excise Act, the historical context of Smith's
bold move and the ramifications for the industry as a whole and for Smith and his family personally are
less well-understood by the wider world of whisky enthusiasts.
George saw his window of opportunity and rode to Elgin to get his licence to become the first
legal distiller in the parish of Glenlivet. This didn’t go down well with the illicit distillers around him and
he was told he would burn along with his distillery. In a bid to protect himself from these sinister
smugglers, he carried a pair of flintlock pistols with him at all times, making it clear he wasn’t afraid to
use them. His courage set the foundation for our whisky today.
One of our first major customers was the Pullman Train Company, who began serving miniature
bottles on their routes, helping to spread our fine whisky across the continent.

GLENLIVET 12 YO
Representing The Glenlivet’s signature style, this classic malt is first
matured in traditional oak (European), before spending time in
American oak casks which impart notes of vanilla and gives the whisky
it’s distinctive smoothness. The mineral-rich water that comes from

whilst the specific height and width of the copper stills add a delicate
yet complex character.

MACALLAN
The Macallan distillery was founded by Alexander Reid, a barley farmer and school teacher. The
original name of the area was “Maghellan”, taken from the Gaelic word “magh”, meaning fertile ground
and “Ellan”, from the Monk St.Fillan - who held a close association with the church that stood in the
grounds of The Macallan Estate until 1400. Farmers had been making whisky on their Speyside farms
in the area for centuries, using their surplus barley during the quieter winter months.
The Macallan’s Curiously Small Stills are amongst the smallest on Speyside. Their unique size and
shape give the spirit maximum contact with the copper, helping to concentrate the ‘new make’ spirit
and provide the rich, fruity, full-bodied flavours characteristic of The Macallan.
Macallan is the only Scotch distillery that has its own Master of Wood.

GORDON & MACPHAIL
In 1895, James Gordon and John Alexander MacPhail established a grocery and wine merchant
business in South Street, Elgin. Within a year of the firm’s establishment, John Urquhart joined the
company.
Originally curated all manner of groceries from around the world such as teas, coffees, wines and
whisky. Their appreciation of the rich tapestry of flavours they encountered led the foundersnto seek
out and complement this varied stock with equally fine produce in the form of Speyside’s many and
varied single malt Scotch whiskies.
Urquhart became a senior partner in 1915 and began to develop the firm’s whisky broking
business, also bottling single malts under licence for several famous distilleries, including The Glenlivet.
Additionally, he had casks of new-make spirit laid down at a number of Speyside distilleries, with the
intention of using them for blending or for bottling as single malts.
It was always the ambition of John Urquhart and subsequent generations of the Urquhart family
that one day Gordon & MacPhail would own and manage a distillery of its own. This came to fruition
in 1993 when the company purchased Benromach in Forres from United Distillers.

ARRAN
The company was set up by Harold Currie, who was previously Managing Director of Chivas
(Seagrams) and House of Campbell (Pernod Ricard).
During the construction of the distillery, a pair of golden eagles built their nest on a cliff near the
distillery; since golden eagles are a protected species, construction of the distillery was temporarily
halted. The distillery, funded by private investors and the sale of bonds, opened in 1995.
The distillery offers a cask purchase scheme which offers private individuals the opportunity to
own their own cask of whisky, which can be stored on site at the distillery.
The whisky of Arran is mostly used to produce their single malt whisky, but a small proportion
also goes into the production of their range of blended whiskies: Lochranza Blend, Robert Burns Blend
and Arran Gold Single Malt Whisky Cream Liqueur.

HIGHLAND PARK
THIS IS VIKING HARMONY
DRIVEN BY OUR VIKING SOUL, THE WHISKY WE MAKE IS THE PRODUCT OF OUR BATTLE FOR
BALANCE, OUR DESIRE FOR HARMONY. IT’S SOMETHING WE LEARNED FROM OUR VIKING ANCESTORS
WHO SETTLED IN ORKNEY OVER 1,000 YEARS AGO: NOTHING WORTHWHILE COMES EASY.
OUR FOUNDER, MAGNUS EUNSON, WAS A DIRECT VIKING DESCENDANT, ONE WHO
EMBODIED A RUGGED BALANCE: HE WAS A BUTCHER AND CHURCH OFFICER BY DAY AND A SMUGGLER
BY NIGHT. HE SET UP HIS ILLICIT STILL AT A LITTLE BOTHY AT HIGH PARK, OVERLOOKING KIRKWALL –
STILL THE SITE OF HIGHLAND PARK TODAY. WE SAY THAT OUR DISTILLERY WAS FOUNDED IN 1798, BUT
IN TRUTH, THAT’S JUST THE YEAR THE AUTHORITIES FINALLY CAUGHT UP WITH MAGNUS AND GAVE
HIM THE CHOICE TO START PAYING TAXES OR TO GO TO JAIL. REGARDLESS, WHISKY WAS CERTAINLY
BEING MADE BEFORE THAT. WITH THE EXCEPTION OF THE SMUGGLING OPERATION, VERY LITTLE HAS
CHANGED IN THOSE INTERVENING YEARS. WE STAY TRUE TO THE EXACTING STANDARDS OF WHISKY-
MAKING OUR FOUNDER INTRODUCED, AND SHARE HIS BOLD AND UNCOMPROMISING APPROACH,
AND HIS DEDICATION TO THE PURSUIT OF VIKING HARMONY. IN FACT, SOME SAY WE’RE A WHISKY
CRAFTED IN THE OLD WAY BY A NEW GENERATION OF VIKINGS.

HIGHLAND PARK 30 YO
A complex expression created from fewer than 20 casks laid down
in 1989 and earlier years, our Spring 2019 Release is the rarefied
result of a trio of different cask types.
Master Whisky Maker, Gordon Motion, took the unusual
step of bringing together 3 different cask types for this release. For
sweet notes of vanilla and honey with hints of sharp citrus, he
selected ex-bourbon casks; to add rich layers of stewed fruit and
warm spices, first-fill sherry seasoned casks were selected; and
finally, a small but vital number of refill casks were called in to round
off the harmony of flavours.
FLAVOURS
Sweet vanilla | Floral honey | Soft caramel | Citrus fruits | Bitter
dark chocolate | Warm spices | Aromatic peat smoke

TASTING NOTES
NOSE
Sweet and floral, with some sour fruit (unripe peaches and mango,
and lime zest), sweet buttery pastry, marzipan, cola bottles, sticky
cherries, plum jam and a hint of metal.
PALATE
Marzipan and sherry fruit up front, shot through with sour spices
and wood. There were also Cinnamon Grahams, good maraschino
cherries, polished wooden floors and big woody spice.
FINISH
Spicy, with nutmeg, ginger, soft brown sugar and dark unfinished
wood.

61
HIGHLAND PARK 40 YO
Rich and beautifully balanced, deep and aromatic, and infused with
a delicate sweetness, this truly exceptional whisky is the product of
just 5 refill casks originally laid down before 1979. These casks were
brought together in 2008 and filled into first-fill sherry seasoned
American oak casks to intensify the flavour over a further 10 years
of maturation.
Orkney’s unforgiving climate pairs well with our unforgiving
demand for the finest quality casks. The refill casks that originally
held this whisky are ideal for a long, slow maturation imparting an
oaky flavour which doesn’t dominate, while the first-fill sherry
seasoned casks in which the whisky completed its maturation, bring
a depth of character and nutty, fruit-filled notes of sherry to the
flavour.
FLAVOURS
Soft berry fruits | Dark chocolate | Silky vanilla | Sun-dried orange
zest | Freshly grated nutmeg | Aromatic peat smoke

TASTING NOTES
NOSE
Rich and full. Notes of pine and eucalyptus oil with hints of manuka
honey. Some fruit notes, grassy heather and mixed peels
developing with gentle smoke.
PALATE
Full and a little oily. Notes of leafy greenness and marzipan with
hints of sherry. Seville marmalade and a little spice.
FINISH
The finish is long with perfumed notes and zesty bitter oak.

ISLE OF JURA
The island of Jura is seven miles (11 km) wide and thirty miles (48 km) long and it has only one
road, one pub and one distillery. There are seven estates on Jura: Ardfin, Inver, Jura Forest,
Ruantallain, Tarbert, Ardlussa, and Barnhill. Less than 200 people live on the island (while it has a red
deer population of around 5000). The inhabitants of Jura are known as Diurachs, which is
their Gaelic name.
Despite the relative close proximity between Islay and Jura, the whiskies are rather dissimilar.
Jura whiskies offer power, but none of the intense peat smoke of its Ìleach cousins from across the
narrow channel between the two isles.
The name derives from the Old Norse for ‘deer island’, a reference, most probably, to the large
local herds of deer, which more than outnumber the isle’s human population.

ISLE OF JURA 12 YO
The core of the Jura range, aged for 12 years in bourbon casks and then
finished in Oloroso sherry. The result blends the distillery's characteristic
gently smoky character with sweetness, spice and dark fruit. A great
introduction to Jura.

TASTING NOTES
NOSE
Smouldering cocoa nibs and rich rice pudding. Baked apples follow,
sprinkled with spice and raisins, and drizzled with creamy chocolate sauce.
Leathery touches develop.
PALATE
Rich and rounded, with an initial burst of barrel char halted by milk-
chocolate-covered raisins and toffee sauce. The char rumbles along behind,
rising at the end with a plume of soft peat smoke.
FINISH
Smoky bonfire-baked apples fade to leave a hint of mint and menthol.

63
ISLE OF JURA SEVEN WOOD
A complex dram that does even more than its name suggests. Matured in
a combination of seven different types of oak – first bourbon and then a
finish in each of Vosges, Jupilles, Les Bertranges, Allier, Tronçais, and
Limousin casks. The result is spicy but run through with chocolate and
fruit, thanks to wide range of flavours from the casks.

TASTING NOTES
NOSE
Perfumed notes of summer meadows lead into chocolate-covered raisins
and rich, creamy oats. Hints of menthol follow, accompanied a mixture of
red jams: strawberry and raspberry. Weightier dried fruit notes build,
accompanied by a hint of something fresher and more tropical.
PALATE
Rich and creamy, with coffee and chocolate initially swamped by toasted
spice notes: cinnamon, nutmeg and black pepper. Crunchy apples and
pears roll in along with freshly squeezed oranges and their zest.
FINISH
Mint chocolate notes linger on the palate, with apple skin and a touch of
creamy coffee.

64

OBAN
Oban in Scottish Gaelic meaning The Little Bay is a resort town within the Argyll and Bute council
area of Scotland. Oban is a fairly isolated distillery, perched on the westernedge of the Scottish
mainland at the very top of the Kintyre peninsula.
Oban distillery is one of the oldest in Scotland – and it is physically and spiritually at the heart of
Oban: the "Gateway to the Isles." In effect, the town grew up around the distillery and since its
foundation in 1794 it has played an important role in local life.
Yet if you were to spend a week at the distillery you would note that they do not run every day.
In fact, Oban produces significantly less than it could. The reason for this is to retain its character.
Oban’s make is light rather than heavy, and that means a lot of copper contact is needed – tricky in a
small still/worm tub site. The stills are small (onion-shaped in Oban’s case) and condensing takes place
in worm tubs. The solution – as with Royal Lochnagar – is to run the worms hot which extends the
amount of copper available, and also to open the doors of the stills after distillation to allow oxygen to
rejuvenate the copper.
The result is a clean, intensely fruity spirit which after ageing in refill casks also has a tingling
mineral spiciness which some pick up as saltiness.

OBAN 14 YO
Oban 14 Year Single Malt is crafted with 100-percent barley to the distillery's
exact specifications, which includes fermenting the malted barley in small-
batch, lantern-shaped copper stills before aging the scotch in oak casks. During
its rest, the whisky is shaped by the surrounding environment, which consists
of warm, salty Gulf Stream air and a temperate climate. The result is a full-
bodied, extremely dry scotch with notes of honey and dried figs, which lead to
a soft, oaky finish.

TASTING NOTES
NOSE
Rich sweetness and fruits - oranges, lemons and pears, with sea-salt and peaty
smokiness.
PALATE
Mouth-filling late autumn fruits - dried figs and honey-sweet spices; followed
by a smoky malty dryness.
FINISH
Long, smooth-sweet finish with oak-wood, dryness and a grain of salt.

66
OBAN BAY RESERVE
Just like Castle Black, Oban Distillery sits at the foot of a steep cliff
that overlooks the bay, the frontier between the West Highlands and
the Islands of Scotland. The richness of the whisky is balanced with a
woody, spicy dryness that would keep even the Night’s Watch warm
in winter.
Oban Bay Reserve is a NAS* (3+ Years)
Cask: ex-Bourbon
TASTING NOTES
NOSE
Oban has aromas of hay and tangy savoury aromas, but calms into
cocoa and Morello cherries
PALATE
There are instant flavours of dark berry pie and liquorice. Toasted
oak joins the fray, and citrus and cloves add a lighter touch.
FINISH
The finish brings back those cherries and dark fruits, alongside a hint
of savoury.
The ancient rule commands you to read the vow of the Night's Watch, written on the back of the
bottle. Be the sword in the darkness and may this Single Malt Scotch Whisky be at your side.

*No age statement simply means that there is no age listed on the bottle itself. By law, if you put an age statement on the
bottle then every drop in that bottle has to be at least that age. A 15 year scotch is comprised entirely of scotch older than
fifteen years. A 30 year scotch is comprised entirely of scotch older than thirty years.
A NAS scotch simply means that it’s legally bound to have been matured for at least three years, which is Scottish law on
whisky, but it could contain 12 years, 8 years, or just 3 years. Without an age statement, the distiller has more flexibility in
what they produce because they aren’t limited by age.

TALISKER
Established in 1830 by brothers Hugh MacAskill of Eigg and Kenneth MacGaskill, Talisker whisky
has been made by the sea in the oldest Single Malts Scotch Whisky distillery on the shores of the Isle of
Skye, some of the most remote, rugged, yet beautiful landscapes in Scotland. The name Talisker comes
from the old Norse for Sloping Rock, ‘Thalas Gair’.
Talisker embodies all the spirit of this rocky, storm-lashed island and its strong, steadfast
people. Skye's only distillery this may be, but like the men of the island the malt has character enough
for ten.
The malted barley used in production comes from Muir of Ord. Talisker has an unusual
feature—swan neck lye pipes. A loop in the pipes takes the vapour from the stills to the worm tubs so
some of the alcohol already condenses before it reaches the cooler. It then runs back into the stills and
is distilled again. Talisker now has an annual output of three and a half million litres of spirit.

TALISKER 10 YO
Aged for a minimum of 10 years in American oak casks, this
welcome member of Diageo's Classic Malts series has been
recognised numerous times for its excellence. Immensely
satisfying stuff, with whiffs of warm peat blending with coastal air,
balanced by orchard fruit and juicy barley. A spectacular after
dinner dram.

TASTING NOTES
NOSE
Powerful peat-smoke with sea-water saltiness, the liquor of fresh
oysters, a citrus sweetness.
PALATE
A rich dried-fruit sweetness with clouds of smoke and strong
barley-malt flavours, warming and intense. At the back of the
mouth is an explosion of pepper.
FINISH
Huge, long, warming peppery finish with an appetising sweetness.

68
TALISKER STORM
Talisker Storm was released in early 2013 as a no age statement
whisky, which was matured in specifically selected refill and toasted
American oak casks. An intense and vibrant dram, the Storm offers up
plenty of distillery character alongside some smokier depth and
complexity.

TASTING NOTES
NOSE
At first restrained yet spicy, with a hint of struck matches; fresh-clean and
growing in complexity like a gathering storm to reveal a honeyed sweet
maltiness with ripe red berry fruit.
PALATE
At first sweetly mellow and rich in the mouth then quickly very spicy and
increasingly stormy as the Talisker heat comes through. The flavour is
elegantly drawn out with a good balance between sweetness, smoke and
salt, which is all the more evident when a little water is added.
FINISH
Warming, with a lasting, smooth aftertaste, in which late peaty burnt
embers can be found.

69
LEDAIG
Two lines of Whiskies are produced in Tobermory, namely Tobermory and Ledaig single malt Whiskies.
Tobermory has a hint of smokines while Ledaig is more peated.
Ledaig Distillery is located in Tobermory village, on the Hebridean island of Mull.
The distillery started its life as one of the oldest distilleries in Scotland, in 1798, under the name
of Ledaig, which means safe haven. The distillery was founded by John Sinclair, and today it is known
as Tobermory Distillery. He was actually originally told to build a brewery.
While most of the distilleries in the Island region mature their Whiskies on the islands themselves,
Ledaig matures them on the Mainland.

BRORA
The distillery was founded under the Name Clynelish by the Duke of Sutherland in 1819. In 1967
the new Clynelish distillery was built, and the old Clynelish was renamed to Brora distillery. In 1983
Brora was closed and the only things that are still being used are the warehouses.
In October 2017, Diageo pledged a £35 million (US$46m) investment to restart production at
closed distilleries Port Ellen and Brora. Both sites were mothballed in 1983. Brora and Port Ellen are
two most of the highly collectible Scotch whiskies in the world.
Sutherland native and Brora master distiller Stewart Bowman officially marked the launch by
opening the site’s gates and filling the first cask of Brora spirit in more than 38 years.

BRORA 40 YO

celebrate the distillery's 200th anniversary, ahead of its

73
BOWMORE
The first recorded mention of the Bowmore Distillery, the first licensed distillery on Islay and second in
Scotland.
Some historians believe the name Bowmore to be derived from a small black reef just outside
Lochindaal whilst others reference the Norse for sunken rock, bogha mor, as its origination.
Queen Elizabeth II visited Bowmore Distillery, her first visit to any scotch whisky distillery. She was
presented with her own cask and bottles from this cask were later sold to raise money for local charities.
1980
BOWMORE 12 YO
Bowmore 12yo has a place in many hearts as Islay's 'medium-peated'
malt. A pronounced iodine character with plenty of pepper, the current
12yo bottling is a welcome return to the classic Bowmores of the 1960s
and '70s, with the emphasis on tropical fruit and smoke.
Subtle lemon and sweet heather honey complement Bowmore’s
trademark peat smoke, leading to a delicious, long and mellow finish.

BRUICHLADDICH
Bruichladdich countered this with the introduction of the Port Charlotte range and later with the
2008-released Octomore, the world’s most heavily peated whisky with a phenol content of 131ppm.
Then the distillery went almost the complete opposite direction and created The Botanist Gin.
The name Bruichladdich is an Scottish Gaelic for Brae of the Shore.
All the distillery’s whiskies are sold as single malts, with those designated Bruichladdich
being unpeated, those designated Port Charlotte being heavily peated and those designated Octomore
being super-heavily peated. Octomore is considered to be 'the most heavily peated single malt whisky
in the world'.

BRUICHLADDICH OCTOMORE
Matured entirely on Islay for five years in ex-American whiskey casks
(5yrs), full term in Jim Beam (51%), Jack Daniels (26%), Clermont (15%),
Old Grand-Dad (8%)
Octomore 09.1 questions the fundamentals of superior single malt
Scotch. Confident in its five year age statement, our Head Distiller
demonstrates how a focus on raw ingredients and considered
distillation can definitively debunk the myth that older is better.
Distilled in 2012 from 100% Scottish barley, the 09.1 is matured full-
term in top-tier ex-American whiskey casks.

TASTING NOTES
NOSE

BUNNAHABHAIN
Bunnahabhain (pronounced ‘BOO-na-HAven’)
Our beloved Bunnahabhain — which means ‘mouth of the river’ in Gaelic, as it stands at the
mouth of the Margadale Spring on the shores of the Sound of Islay — first came into existence in 1883.
This is why Bunnahabhain is known as the more subtle of the Islay Malts, with a distinctive oiliness
and whiff of sea air that set it apart from the almost universally peaty whiskies that are produced on
the island.

BUNNAHABHAIN 18 YO
It is intensely warming; with dried fruit, sherry, toffee and spices leading to a
delicious honeyed nuttiness and the slightest hint of sea salt.
The deep mahogany colour of the whisky gives away the exclusive sherry cask
maturation and the tang of salt on the tongue reminds you of our coastal
location.
With warehouses positioned along the shore and a bay fed by the Sound of Islay,
there is no escaping the salty sea air, especially when you’re maturing by it for 18
years.

TASTING NOTES
NOSE
Fragrant with notes of dried fruit, rich honeyed nuts, toffee and slight hints of
spice.
PALATE
Notes of mellow sherried nuts, dried fruit and rich oak, with toffee and a slight

percentage of sherry casks in the mix, this is rich and spicy with notes of dark
chocolate and orange.
With a strong sherry influence, our 25 Year Old is the perfect example of how well
Bunnahabhain matures and the extent of the complex range of sweet oaky layers
and nutty flavours which can be achieved by those few extra years in cask.

TASTING NOTES
NOSE
Scents of rich sherry, blossoming into sweet caramel and polished leather.
PALATE
An initial taste of sweet berries and cream that evolves into a feast of roasted
nuts and malt.

CAOL ILA
Pronounced “Cull Eela”. It’s the Gaelic name for the Sound of Islay, which separates the island from

Walker blends. Just 5% is kept for maturation as single malt.

CAOL ILA 12 YO
The ultimate Islay malt, Caol Ila is considered by experts to be the perfect entry
point into the world of peaty malt whiskies and a reference for connoisseurs of Islay

KILCHOMAN
Kilchoman was the first distillery to be built on Islay in over 124 years. Founded in 2005, Kilchoman is
Islay’s only farm distillery, producing Scotland’s only Single Farm Single Malt.
Our stills, the smallest on Islay and some of the smallest in Scotland, create unmatched purity of spirit.

KILCHOMAN SANAIG
Aged in a combination of oloroso-sherry and bourbon casks, this
shows excellent balance between peat smoke and sweet citrus
flavours.
Named after an inlet on Islay’s rugged Atlantic coast, Sanaig. The
high proportion of Oloroso sherry influence adding a balance of dried
fruits and spices to classic Kilchoman citrus sweetness and peat smoke
character.
The west coast of Islay, from Portnahaven to Sanaigmore, is
regularly battered by strong Atlantic storms. The high winds and
rough seas have carved into the coastline to dramatic effect, creating
a rugged beauty mirrored in the whisky after-which it was named.

TASTING NOTES
NOSE
Soft cooked fruits with caramel and vanilla.
PALATE
Toffee, peat smoke and citrus with lingering sweetness.
FINISH
A lovely balance of peat smoke, fruit and sweetness.

first-fill bourbon casks for around six years, married and then
finished in oloroso sherry butts before bottling.

Islay’s most spectacular beach, the high proportion of bourbon
barrels create a distinct balance of classic Islay character and
fresh floral complexity.

and stunningly beautiful sunsets, the Machir Bay release
embodies the bay after which it is named.

83
LAGAVULIN
Sat between Ardbeg and Laphroaig on the south coast of Islay, Lagavulin has a history of
disagreements and lawsuits. Founded in 1816, a year after Laphroaig, it has been in fierce competition
with its nearest neighbour ever since.
Peter Mackie, creator of the White Horse blend, owned the distillery in the late 1800s and was
also the sales agent for Laphroaig. When he lost the agency in 1907, he decided to build a new distillery
at Lagavulin that would make whisky that was identical to Laphroaig – the legendary Malt Mill.
Unfortunately his planned failed.

LAGAVULIN 9 YO
One of the oldest, and richest, dynasties in the Seven Kingdoms, House
Lannister will do anything to retain its power and influence over the Iron
Lagavulin 9 Year Old is a roaring single malt that leaves an intensely smoky
flavour in every sip. The golden liquid recalls the Lannisters’ riches and comes
from being exclusively matured in first fill ex-Bourbon casks.

TASTING NOTES
NOSE
The nose is characteristically Lagavulin with the sweet smoke exploding on
the nose to provide a little more zesty, maritime brine thank other
expressions.
PALATE
The palate opens with sweet, smoky caramelised banana, burnt
marshmallow and vanilla.
FINISH
The palate subsides into a lightly dry menthol and salted caramel finish.

84
LAGAVULIN 16 YO
The Islay representative in the 'Classic Malts' series is a deep, dry and exceptionally
peaty bruiser.
A much sought-after single malt Scotch whisky with the massive peat-smoke
that's typical of southern Islay - but also offering richness and a dryness that turns
it into a truly interesting tipple. The 16 year old has truly become a benchmark
Islay dram from the Lagavulin distillery.
If you're looking for a food pairing for this beauty, try intensely flavoured
salty blue cheeses, which complement the intense, peat rich, sweet and salty
character of this Lagavulin wonderfully.

TASTING NOTES
NOSE
More like Lapsang Souchong tea than Lapsang Souchong! One of the smokiest
noses from Islay. It's big, very, very concentrated, and redolent of iodine, sweet
spices, good, mature Sherry and creamy vanilla. Stunning.
PALATE
Very thick and rich. A massive mouthful of malt and Sherry with good fruity
sweetness, but also a wonderful sweetness. Big, powerful peat and oak.
FINISH
Long, spicy finish, figs, dates, peat smoke, vanilla.

85
LAPHROAIG
Laphroaig was founded in 1810 by brothers Alexander and Donald Johnston (although the
official year of start-up is given as 1815 on the company's labels and literature). The histories of
Lagavulin and Laphroaig have been closely tied together, with Lagavulin said to have been founded by
Alex and Donald's father, John. They were both called Johnston, you see.
Famously, Laphroaig is Prince Charles's favourite whisky - he awarded the distillery his Royal
Warrant in 1994. In the same year, the Friends of Laphroaig group was established, whereby devotees
of the malt can register their love and receive in return a square foot of the land that Laphroaig bought
to protect their water supply back in the time of the wranglings with Lagavulin.
Laphroaig, so called after its location, ‘broad hollow by the bay.’
In 1994, HRH Prince Charles visited Laphroaig for the first time and gave the distillery his Royal
Warrant. As well as being found on each bottle, the royal coat of arms is inscribed on the 200-year-old
walls of the original buildings. His Royal Highness being the present Lord of the Isles, it is an honour
especially fitting for Islay-based Laphroaig.
2008 HRH Prince Charles visited Laphroaig for the second time, this time as part of his 60th
birthday celebrations.

LAPHROAIG 10 YO
This is a truly classic single malt Scotch, made from malted barley which is first
cold-smoked and then dried over a peat fire.
The smoke from the unique Islay peat gives Laphroaig its particular rich
flavor. This peated whisky is renowned for its bold, smoky taste, followed by a
hint of seaweed and a surprising sweetness. Full-bodied with a long finish, it
truly embodies the quintessential Laphroaig character.

Huge smoke, seaweedy, "medicinal", with a hint of sweetness.
PALATE
Suprising sweetness with hints of salt and layers of peatiness.
FINISH
Lingering.

86
LAPHROAIG QUARTER CASK
Because the second maturation takes place in smaller, quarter-sized casks, the
spirit has more contact with wood. This lends hints of coconut, banana and
vanilla to the instantly recognizable Laphroaig flavor of smoky peat
complemented by a surprising sweetness.
Laphroaig Quarter Cask begins its maturation in ex-bourbon barrels and,
while still aging, is transferred to small quarter casks. Aging in smaller barrels
revives an old tradition, paying tribute to the master distillers who have
perfected the Laphroaig process over two centuries.

TASTING NOTES
NOSE
Powerful smoke, sweet malt, wet turf, coal. Develops chocolate & cinnamon.
PALATE
Full-bodied, rich and mouth-coating. Delicious sweet gristy malt and rich
peat, woodsmoke. The coal appears mid-palate.
FINISH
Very long, sweet and smoky, with the coal lingering longest.

87
LAPHROAIG 25 YO
It's aged for a quarter century in a combination of large Oloroso sherry butts
and ex-Bourbon barrels, proving that good things are worth the wait. This
mellow single malt Scotch has the distinctive flavor of Laphroaig — peat
smoke with a medicinal edge — met by creamy vanilla flavors from American
oak and spiced apple from the sherry casks.
A long, warm finish leaves a lasting impression. It is bottled at cask
strength, which means it isn't watered down before bottling.

TASTING NOTES
NOSE
Vanilla, wood spice, smoke and a little TCP (but certainly not a head
banger), some smoked bacon, with a little dried fruit character.
PALATE
Very creamy full texture, peppery, spicy, iodine, saline, still plenty of smoke
here, green apple fruit.
FINISH
Very long and layered, peppery.

PORT ELLEN
Established on Islay's south coast in 1825 by A K Mackay and Co., Port Ellen is reputed to have
been the first distillery to have incorporated Septimus Fox's spirit safe design into the distillation
process.
After having been taken over by the shrewd and energetic John Ramsay in 1836, Port Ellen
became the first distillery to trade with North America in 1848. Ramsay secured the right to export in
larger casks and store the casks in bonded warehouses prior to export, a system which persists to this
day.
Port Ellen was closed in the slump of 1983, but the whisky made in the 17 or so years between
its re-opening and final closure has acquired a reputation as some of the finest to have been made on
Islay in that time. Following two outstandingly successful Rare Malt bottlings in 1998 and 2000, Diageo
has released an official bottling of Port Ellen every year since 2001, although it is presently unknown
how many more of these bottlings will be forthcoming as stocks get lower.
Indeed, to this day the maltings at Port Ellen supply most of the distilleries on Islay as well as the Isle of
Jura distillery.
Although it now currently is primarily known for its Single Malt, Port Ellen was also used in a
number of Blends, including King of Scot, Big Peat, and King George V.

PORT ELLEN 37 YO 2017 RELEASE

The 17th release of Port Ellen is another excellent dram, this time offering
light, sweet fruit notes gradually evolving into earthier, oakier, smokier
characteristics that leave you in no doubt of its elegance and complexity.
Due to the limited number of casks left there’s always the danger that each
release of Port Ellen will be the last.
This 37-year-old whisky was distilled in 1979 and is created from a
vatting of eight American oak refill casks.

TASTING NOTES
NOSE
Seashells, wax and sweet apples. Foam strawberries follow, along with
incense and charcoal-grilled pears. Surprisingly fresh to start, with
marzipan and earth notes slowly building.
PALATE
Soft smoke to start, with dry peat, coal and leather. Sugary notes appear,
with stewed apples covered in sweet custard
FINISH
More leaves, but spread across damp tarmac. Sweet apple appears and
slowly fades to leave cocoa and a touch of minerality.

Campbelltown
SPRINGBANK
The Springbank distillery produces three uniquely different Scotch single malts: Longrow,
Hazelburn and Springbank. The difference is achieved by using Springbank's three stills in different
combinations as well as adjusting the peat levels. Longrow is the most traditional of the three; well-
peated and distilled twice. Hazelburn is bereft of peat and enjoys a triple distillation and Springbank is
lightly peated and, rather curiously, distilled two-and-a-half times. Both Hazelburn and Longrow have
been revived recently after a few years of silence and both are named for ancient distilleries adjacent
to the site.
Longrow whisky is distilled at Springbank, proving that an Islay-style single malt could be
produced on the mainland 1973
Springbank Distillery’s newest whisky, Hazelburn, is first distilled 1997
Today, Springbank is one of only three distilleries operating in the Campbeltown area and is the
oldest independent family-owned distillery in Scotland

SPRINGBANK 10 YO
A fabulous 10 year old Springbank, matured in bourbon casks as well as sherry
casks, adding a wonderful depth of flavour. Slightly peated, it marries a complex

Blended Whisky
DEWAR'S
Our story started with a shop in Perth and founder John Dewar. Together with sons John Alexander
Dewar and Tommy Dewar, these three men changed the course of whisky history, and created some
mighty fine products along the way.
Our Celtic truth knot, a sign of strength and longevity, is constructed from the three D’s
representing our founders – John, Tommy and John Alexander Dewar.
Dewar’s was introduced to the American market in style, for in 1891 their whisky was
delivered to the White House when Andrew Carnegie ordered a keg for President Benjamin Harrison.
The President was later criticized for not supporting American products. The American subsequent
demand was impressive.
In 1893, Queen Victoria bestowed a Royal Warrant, indeed Dewar’s has received a Royal Warrant
from every British monarch since. The regal involvement continued for in 1902, Tommy Dewar was
knighted by King Edward VI. Today, Dewar’s own five distilleries Aberfeldy, Aultmore, Craigellachie,
Macduff and Royal Brackla distilleries
Dewar’s Scotch Whisky is a blend of 40 of Scotland’s finest single malts and grain whiskies.
Aberfeldy Single Malt is at the heart of all the Dewar’s blends.

DEWAR'S 12 YO
The classic 12 year old blend from Dewars, this stuff is the successor to Dewar's
"Double Aged" 12 Year Old - so named in reference to the additional six month

created by Stephanie Macleod. Thanks to both our unique double ageing process
and golden water source, Dewar’s 15 Year Old is unusually smooth, with flavour
notes of honey, toffee and floral.

TASTING NOTES
NOSE
A good balance of Sherried spices, nutty elements and apple skin
PALATE
Oily walnut leading into fresh malt and sultanas. Chewy vanilla toffee.
FINISH
More sweet dried fruit notes with touch of grassiness.

CHIVAS
Brothers James and John Chivas, born in 1810 and 1814 respectively, were two of fourteen children
born to Robert and Christian Chivas, living on a remote Strathythan farm in the Ellon Parish of
Aberdeenshire.
Chivas Regal is a world-famous Scotch blend which was first made in the early 20th century by
Chivas Brothers. The company can trace its roots back to 1801, with the opening of a grocers at Number
13 King Street, Aberdeen. Selling luxury food, coffee and spices, it wasn't until half a century later that
the company started to make whisky.
During the 1950s, following the end of the Second World War and the country’s recuperation after
Prohibition, the brand underwent a relaunch in the US. There was immediate success and Chivas
became the preferred tipple of many noteworthy individuals including Frank Sinatra who requested the
drink as part of his backstage rider.

CHIVAS REGAL 25 YO
The first decade of 20th century America saw Chivas 25 burst onto the scene.
Alongside the flittering milieu of grand parties and theatrical attractions of
Broadway, this luxury whisky took pride of place among the high society of
New York. But Prohibition followed in 1920, cutting our 25-year-old Scotch
whisky’s reign short. In 2007, we reignited this remarkable blend to recreate
the iconic tastes and textures that lay within the original luxury whisky. The
pinnacle of blended Scotch whisky was reborn and remains a legend today.
Only the rarest 25-year-old Scotch whiskies are blended together for

nosed to ensure the highest quality within this blend.

JOHNNIE WALKER
1820, the young farmer’s son started his own grocer’s shop in the thriving town of Kilmarnock. His
father had died the year before and the farm sold.
In those days, most grocers stocked a line of single malts, but they were never consistent. This wasn’t
good enough for John. So he started blending them together to create a whisky that tasted just as
good every time.
Johnnie Walker's 'Striding Man' logo is apt – the success of the brand was largely through John
Walker's son Alexander getting bottles on numerous ships travelling round the world, while its
distinctive square bottle and angled sticker helped separate it from the competition, too.

Johnnie Walker, John Walker himself. The whisky, which follows
the heritage of the Blue Label and the King George V, is crafted
from specially selected casks to create a whisky as close to the
19th century style as possible. The decanter is presented in a
lacquered cabinet that took sixty hours to make.
Known as the Founder’s Blend, it uses only whiskies that
would have been familiar to John Walker in his lifetime, some of
which come from distilleries that are now silent (Cambus and
Glen Albyn) , alongside traditional Johnnie Walker cornerstones
such as Cardhu and Talisker.. Just nine distilleries in total
contribute exquisitely-made whiskies, which are blended by hand

ICHIRO'S
Ichiro Akuto is arguably the king of independent Japanese distillers, despite working out of an
exceptionally modest premise with just two small pot stills in Chichibu, a town 100 km northwest of
Tokyo. Akuto’s education of whisky distillation came through the family business. His grandfather was
originally a sake maker, running a sake brewery, Hanyu Distillery, established in 1625, when he obtained
a distiller’s license to produce whisky in 1941.

Japanese and enhance their dining experience.

NIKKA
In 1918, a young Japanese man with an ambition to make genuine whisky went alone to Scotland to
unveil the secret of whisky making. He is Masataka Taketsuru, the founder of Nikka Whisky.
Given the chance to go to Scotland, Masataka became the first Japanese ever to master how to
make whisky. He enrolled at the University of Glasgow, took chemistry courses and then apprenticed
at three Scotch distilleries. The young and passionate man was fortunate to learn first-hand from
craftsmen and have practical trainings to master blending. The two notebooks filled with every detail
later became Japan’s very first guide in whisky production.

Yoichi Distillery
Built in 1934, Yoichi was the ideal place for Masataka Taketsuru’s whisky-making.
Yoichi, the place chosen by Masataka was close to the sea, surrounded by mountains on three sides
and in many ways similar to Highland in Scotland. A cold climate with an appropriate humidity, crisp
clean air and fresh water - everything necessary for his ideal whisky was available. The proximity to the
sea is one of the distinctive features of Yoichi. The sea breeze gives a briny hint to the whisky during
the maturation.

Miyagikyo Distillery
Built in 1969 as the second distillery of Nikka Whisky to make whisky different from Yoichi.
Masataka aimed to make his blend more complex by widening the variety of whiskies. In 1967 he was
exploring the northern part of the main island to find another ideal site for his second distillery. He
came across a beautiful foggy glen surrounded by mountains and at a junction of two clean rivers. The
name of the river was Nikkawa river by coincidence.

108
NIKKA FROM THE BARREL

The iconic square bottle reflects its concept "a small block of
whisky" and embodies the intense and rich flavors of the whisky inside.
The complex formula is created by blending more than 100
different batches of malt and grain whiskies. After blending, the whisky
is filled into used barrels and matured for another few months. This
"marriage" process harmonizes all components in the formula, resulting
in a mellow taste.
TASTING NOTES
NOSE
Spicy and peppery, but there’s a richness behind it, with spicy oak and
soft orange fruitiness, and soft vanilla notes from the bourbon cask.
PALATE
Grainy sweetness and candied orange peel, quite rich, accompanied
by rich cinnamon and clove.
FINISH
Great balance, this really needs a little water to allow the flavours to
unfurl.

NIKKA COFFEY GRAIN
Coffey Grain and Coffey Malt have been developed to showcase the beauty
of our Coffey stills.
While Masataka Taketsuru was staying in Scotland, he had an opportunity
to learn how to distill grain whisky in a Coffey still firsthand from craftsmen at
James Calder in Bo'ness in 1919. Masataka valued the feature of this type of
still and installed two sets of Coffey stills after he established Nikka Whisky.
The first still was imported from Scotland to Japan in 1963, followed by the
second still in 1966. These traditional Coffey stills are not easy to operate and
not efficient to obtain spirits. However, they retain flavors originating from
ingredients and deliver a distinctive creamy texture.
This is a signature grain whisky which was released in 2012. Predominantly
made from corn, whisky distilled in a Coffey still is matured in old casks such
as re-filled, remade and re-charred casks originally made from American oak
to deliver the sweet and mellow flavors of Coffey distillates.

TASTING NOTES
NOSE
Sweeter and fruity with oodles of sweet spice, mango, papaya, and orange
peel.
PALATE
Toffee popcorn, with heady citrus and tropical fruit. Quite a mouthful.
FINISH
Not especially long lasting; rich oak and marmalade notes dominate.

110
NIKKA COFFEY MALT
Coffey Grain and Coffey Malt have been developed to showcase the beauty
of our Coffey stills.
This unique expression was developed in 2013 as a result of Nikka's
continuous experiments to widen the variety and offer more excitements to
aficionados. Made from 100% malted barley, whisky distilled in a Coffey still
is matured in old casks to enhance the rich maltiness, complexity and a silky
texture. This expression is not categorized as “malt whisky” but as “grain
whisky” since it is not distilled in a pot still.

TASTING NOTES
NOSE
Fresh and clean, with aromas of candied lemon peel and rich cake spices.
PALATE
Robust and spicy, quite a dense mouthfeel and richly textured, with
cinnamon and clove on the palate, and citrus-tinged freshness to lighten the
load.
FINISH
Harmonious blend of dense spices, rich oak, and lemon and orange notes.
Delightful.

111
NIKKA 12 YO
The asymmetry bottle design represents layers of traditions and heritage which
have been inherited from the foundation, and the Nikka emblem is a symbol of
our craftsmanship.
A blend including whisky from Nikka's two distilleries, Yoichi and
Miyagikyo, The Nikka 12 is a well-balanced blend. There's green-apple
freshness, rich fruitcake spiciness, butterscotch and some green-peppercorn

butterscotch and nutmeg. Precise and poised.
PALATE
Rich, clean fruit – greengages and Granny Smith apples. Vibrant fruit-cake
notes with a hint of toffee and sweet spice to smooth things out.
FINISH
Very fresh despite the richness, this is a class act. Refreshing and moreish.

112
MIYAGIKYO
Miyagikyo Single Malt is a range of single malt expressions from the Miyagikyo Distillery. Nikka's
founder Masataka Taketsuru chose a valley in the Miyagi prefecture as the site for his second distillery,
and started its operation in 1969. He aimed to make a complete contrast between the two distilleries,
Miyagikyo and Yoichi, with different natural environments and production methods.
Miyagikyo malts are described as elegant and fruity. Made from light peated and non-peated
malted barley, whiskies distilled in pot stills heated by indirect steam express a signature fruitiness and
delicate mouthfeel.

MIYAGIKYO SINGLE MALT

This no-age-statement version was released in 2016 as a permanent product that
showcases the elegant style of Miyagikyo malts, when all age-statements were
discontinued. This bottling has estery aromas generated by carefully selected yeast
strains along with distinctive Sherry cask influence.
The new single malt is said to be made with whiskies spanning various ages
(hinting at the inclusion of older whiskies than the previous NAS release) with classic
delicate, floral character and primarily ex-Sherry casks used for maturation.

TASTING NOTES
NOSE
Full and rich with floral notes, tropical fruit, beeswax and hints of wood smoke.
PALATE
Malt focused, with cinnamon and ginger spiciness, chocolate and tobacco.
FINISH

on Japan's Honshu Island, and then finished in a bourbon barrels for one year beofre
being bottled in 2018. With spicy, creamy and salty notes.

vanilla, liquorice and notable malt and saline notes.
FINISH

113
TAKETSURU
This is a signature label in honor of Nikka's founder Masataka Taketsuru, the first Japanese who
mastered whisky-making in Scotland and brought this expertise back to Japan. While being a disciplined
craftsman, he was also a person of curiosity and open-mindedness. This is a tribute to Masataka from
his successors, highlighting a perfect balance with complexity achieved by precise blending inherited
from the founder.
A "pure malt" is a blend of malt whiskies from various distilleries, whereas a "single malt" is a whisky
made exclusively from one distillery. A "pure malt" is also known as a "blended malt".

TAKETSURU PURE MALT

This is an expression launched in 2020, with a refined formula and a new label
design to represent the brand. While remaining a smooth and well-balanced
blended malt, the formula further showcases an exquisite balance between
elegant softness and deep complexity along with rich mouthfeel and smokiness.
Taketsuru's no-age-statement blended malt contains a high percentage
of malt from Miyagikyo, with the reminder coming from Yoichi. Aged on average
for around 10 years in a variety of different cask types, including some sherry
wood for extra richness.

TASTING NOTES
NOSE
Clean and bright, with red fruit bursting out of the glass and glazed fruit-tart
sweetness.
PALATE
Soft and fruity with spicy clove appearing along with a cherry-menthol note.
FINISH
The rich fruit lingers.

114
TAKETSURU PURE MALT 17 YO
Another winner from Nikka's Taketsuru range. The Taketsuru whiskies are
a combination of single malt whiskies from Nikka's two distilleries, Yoichi
and Miyagikyo. In the 17 Years Old, a high percentage of the whiskies have
been aged in ex-sherry casks, resulting in a deep, rich, complex whisky
with more than a hint of smoke and oak.

TASTING NOTES
NOSE
Clean, with layered tropical fruit. Eucalyptus, red fruit, vanilla. Oak. Good
weight and breadth.
PALATE
Oily, fruity and juicy. Almost Irish. Firm with obvious oaken structure but
sufficient sweetness (cocoa, liquorice, vanilla) to carry.
FINISH
Lightly gripping.

115
TAKETSURU 21 YO
Taketsuru 21 was crowned World's Best Blended Malt Whisky at the
2010 World Whiskies Awards. It really is a fabulous whisky, and for those
of you who enjoyed the brilliant 17 year old this offers just a bit more
richness, a little hint more chocolate and coffee.

TASTING NOTES
NOSE
Plenty of oak influence with notes of prunes and soy sauce. Cocoa,
espresso beans, almost a touch of anise.
PALATE
Spices, black pepper, loads of tangy sherry, hints of turmeric and other
spices. Then ground ginger, mixed peels, hints of marmalade.
FINISH
Long, good oaky grip with a perfect balance of spice.

116
YOICHI
Yoichi Single Malt is a range of single malt expressions from the Yoichi Distillery, Nikka's first distillery
built in 1934. The founder Masataka Taketsuru chose the town of Yoichi in Hokkaido because of the
similar environmental conditions to Scotland, where he learned whisky-making.
Yoichi malts are described as bold and strong with refined peaty notes and smokiness brought by
the traditional direct coal-fired distillation. Sea breeze from the Ishikari Bay delivers a briny hint to the
whisky during maturation.

YOICHI SINGLE MALT BOURBON WOOD

Single malt Japanese whisky from Nikka's Yoichi distillery, finished for one year
in first-fill bourbon casks and bottled in 2018. The result boasts both complex
sweet and savoury flavours, with a lip-smacking creaminess imparted from the
casks. Excellent stuff from one of the most well-known whisky distilleries in
Japan.

TASTING NOTES
NOSE
Sweet and fresh plum and pear intertwined with salty peat, light swirls of
smoke, candied ginger, gentle vanilla, freshly picked daffodils and lemon
sweeties.
PALATE
Oaky, with rather salty notes of liquorice, distinct notes of clove with
handfuls of candied fruits, namely banana, date, lemon, and honey coated
walnuts.
FINISH
Long, malted barley and mineral chalky notes, with tobacco, walnut, fresh
mint and lasting notes of peat.

YOICHI SINGLE MALT CHERRY WOOD

A limited edition bottle of Yoichi single malt, delicately peated and
finished in sherry casks before it was bottled by Nikka in 2018. The
maritime nature of Yoichi whisky, combined with the fruity flavour
imparted from the sherry cask, makes for a complex and
interesting dram.

American Whiskey
BULLEIT
The first Bulleit bourbon was produced by a bar owner in Louisville, Kentucky, named Augustus Bulleit.
He wanted to create a bourbon with a distinctive flavour and experimented with varying batches until
he found a whiskey that he was satisfied with. One day when transporting barrels to New Orleans
Augustus disappeared without trace. To this day it is unknown what happened to him. Years later, his
great-great-grandson, Tom Bulleit enrolled in the Marine Corps in 1968, before leaving to study law.
In 1987, Thomas E. Bulleit, Jr., fulfilled a lifelong dream of reviving an old family bourbon recipe
by starting the Bulleit Distilling Company. Inspired by his great-great-grandfather Augustus Bulleit, who
made a high-rye whiskey between 1830-1860, Tom left a successful law practice and risked everything
to experience life on the frontier.
Tom Bulleit had always dreamt of recreating his ancestor’s dark spirit and in 1987, he created a
small batch bourbon, bearing the family name. Bulleit bourbon is aged for six years and the mashbill
contains a high proportion of rye - as much as thirty percent. The new make, or ‘white dog’ as it is
known across the pond, is then filled into heavily charred barrels. The bottles are modelled on the
medicine bottles of yore, with raised lettering and brown tinted glass, indeed, the bottle itself has won
awards. It was first introduced on the American market in 1999 and distributed worldwide three years
later. Bulleit was acquired by Seagram in 1997 and the facilities were relocated to Lawrenceburg,
Kentucky.

BULLEIT BOURBON
The subtlety and complexity of Bulleit Bourbon come from its unique blend of
rye, corn, and barley malt, along with special strains of yeast and pure Kentucky
limestone filtered water. Due to its especially high rye content, Bulleit Bourbon
has a bold, spicy character with a finish that's distinctively clean and smooth.
Medium amber in color, with gentle spiciness and sweet oak aromas. Mid-palate
is smooth with tones of maple, oak, and nutmeg. Finish is long, dry, and satiny
with a light toffee flavor.

TASTING NOTES
NOSE
Rich and spicy, with warming notes of cinnamon, nutmeg and clove, and crème
brûlée topped with Demerara sugar. Hints of dried apricot, grape and almond,
too.
PALATE
Good spicy kick of rye first up, then softer notes of dried fruit and sweet spice
follow. Toasty and nutty, with enough fruitiness to soften out the edges.
FINISH
Well-balanced mix of sweet spice and warming rye.

118
BULLEIT RYE
Russet in color, with rich oaky aromas. The taste is exceptionally smooth, with hints
of vanilla, honey, and spice. Finish is crisp and clean, with long, lingering flavors.
Bulleit Rye is made with a mashbill of 95% rye and 5% malted barley and is
produced in small batches.

TASTING NOTES
NOSE
Big heaps of cherries and vanilla, with subtle notes of leather and tobacco.
PALATE
Rather hot at first, the spices coming to the forefront. This is followed by
peaches, more cherries and a little bit of orange zest.
FINISH
A smoky finish, carried by cinnamon, allspice and a hint of sweeties.

119
BUFFALO TRACE
Ancient buffalo carved paths through the wilderness that led American pioneers and explorers to new
frontiers. One such trail led to the banks of the Kentucky River where Buffalo Trace Distillery has been
making bourbon whiskey the same way for more than 200 years. In tribute to the mighty buffalo and
the rugged, independent spirit of the pioneers who followed them, we created our signature Buffalo
Trace Kentucky Straight Bourbon Whiskey.
Made from the finest corn, rye and barley malt, this whiskey ages in new oak barrels for years in century
old warehouses until the peak of maturity. The taste is rich and complex, with hints of vanilla, toffee
and candied fruit. The smooth finish lingers on the palate.

BUFFALO TRACE
Buffalo Trace is the flagship bourbon for the eponymous distillery made from corn,
rye and malted barley. It’s aged in new oak barrels in historic old warehouses. The
award-winning bourbon is batched from no more than 40 barrels at a time, and is
aged on the middle floors of the distillery warehouses where the temperature
fluctuation is the greatest. A top whiskey, with oodles of vanilla, barrel char and spicy
complexity.

TASTING NOTES
NOSE
Spicy and sweet with caramel, creamy toffee eclairs, hints of cinnamon, rum spice
and cereal sweetness.
PALATE
Brown sugar, toffee apple, sweet oak, custard, oily espresso beans, a touch of
chocolate-covered raisins and toasty wood.
FINISH
Good length with sweet spices, cinnamon gum and toffee.

120
JACK DANIELS
According to Daniel's biographer, the origin of the "Old No. 7" brand name was the number assigned
to Daniel's distillery for government registration. He was forced to change the registration number
when the federal government redrew the district, and he became Number 16 in district 5 instead of
No. 7 in district 4. However, he continued to use his original number as a brand name, since his brand
reputation already had been established. An entirely different explanation is given in the 1967 book
'Jack Daniel's Legacy' which states that the name was chosen in 1887 after a visit to a merchant friend
in Tullahoma, who had built a chain of seven stores.
Jack Daniel never married and did not have any known children. He took his nephews under his
wing. After arriving at work early and unable to open his safe, Jack kicks it out of frustration and breaks
his toe. The injury worsens and will eventually take his life.
With no wife or children as heirs, Jack leaves his land and distillery to his nephew, Lem Motlow.

JACK DANIELS NO 7
Mellowed drop by drop through 10-feet of sugar maple charcoal, then matured in
handcrafted barrels of our own making. And our Tennessee Whiskey doesn’t follow a
calendar. It’s only ready when our tasters say it is. We judge it by the way it looks. By
its aroma. And of course, by the way it tastes. It’s how Jack Daniel himself did it over a
century ago. And how we still do it today.

TASTING NOTES
NOSE
Brown sugar syrup, sour raisins, wood polish, resin, green leaves, hints of wood glue.
PALATE
Sweet, with light body and mouth-feel. Dutch chocolate strands on toast, orange
touches, perfumed wood, cinnamon.
FINISH
Terry's Chocolate orange, more wood polish and some lingering char.

121
FOUR ROSES
THE LEGEND: It began when Paul Jones, Jr., the founder of Four Roses Bourbon, became smitten by the
beauty of a Southern belle. It is said that he sent a proposal to her, and she replied that if her answer
were “Yes,” she would wear a corsage of roses on her gown to the upcoming grand ball. Paul Jones
waited for her answer excitedly on that night of the grand ball…when she arrived in her beautiful gown,
she wore a corsage of four red roses. He later named his Bourbon “Four Roses” as a symbol of his
devout passion for the lovely belle, a passion he thereafter transferred to making his beloved Four
Roses Bourbon.

FOUR ROSES SINGLE BARREL

complex, full-bodied and surprisingly smooth with a delicate, long finish that’s

122
KNOB CREEK
Knob Creek is distilled under the direction of master distiller Fred Noe. Fred is the son of Knob Creek
founder, Booker Noe, who is the grandson of Jim Beam.
Operating under parent company Beam Suntory, Knob Creek’s three “siblings” are also brewed
at the Jim Beam distillery: Booker’s, Baker’s, and Basil Hayden’s. All four are billed as small-batch
bourbons for the high-end market.
Knob Creek is the name of an actual creek in Kentucky. Allegedly, the creek ran through Abraham
Lincoln’s family farm, which Lincoln referred to as “the Knob Creek place.”

KNOB CREEK
Created to represent whiskey before it was mass produced, Knob Creek
embodies the look, feel and taste of pre-prohibition bourbon. This is a long-
aged, high-rye bourbon from Jim Beam.
Knob Creek is still made today in small batches to exacting standards.
Patiently aged over 9 years, Knob Creek embodies the full taste experience that
has made Kentucky famous for its bourbon. Know Creek matures in 4-char
barrels, delivering distinctive sweetness and a full-bodied flavour.

TASTING NOTES
NOSE
Toasted nuts, grain oak.
PALATE
Rich, sweet, woody, full-bodied, almost fruity.
FINISH
Long, rich and glowing.

123
MAKERS MARK
Bill Samuels, Sr.'s quest to create Maker's Mark® began with his only copy of the family's trusted, 170-
year-old recipe. The one the sixth-generation distiller promptly set on fire, of course. He had a wife
Margie.
The Kentucky Bourbon Hall of Famer (the first woman involved with a distillery to be inducted,
by the way) hand-dipped the first bottles in her kitchen using a home fryer to melt the wax.
When naming this new bourbon, Margie was inspired by the "maker's marks" that pewter whitesmiths
put on their best work. Her mark features a star for Star Hill Farm, the Bardstown farm where the family
resided.
Margie's "S" is for Samuels, and the Roman numeral IV symbolizes her husband's status as a
fourth-generation distiller. (Son, Bill, Jr., later discovered that his father was actually a sixth-generation
distiller. But, SIV stuck and is here to stay.)
If character came in a bottle, it might look something like this one. Margie's signature red wax
topper isn't the only feature that helps Maker's Mark stand out from the crowd. The shape of the bottle,
look of the label and even the name itself are all thanks to Margie the marketer. That square shape was
inspired by Margie's collection of 19th-century cognac bottles – as was the wax that typically sealed
them.

MAKERS MARK
Bill Samuels, Sr., simply wanted a whisky he would enjoy drinking. Never bitter or
sharp, Maker's Mark is made with soft red winter wheat, instead of the usual rye,
for a one-of-a-kind, full-flavored bourbon that's easy to drink. To ensure
consistency, we rotate every barrel by hand and age our bourbon to taste, not
time. Each and every bottle of Maker's is still hand-dipped in our signature red
wax at our distillery in Loretto, Ky., just like Bill, Sr., would have wanted.

TASTING NOTES
NOSE
Initial sweetness – caramel, brown sugar – gives way to soft fruity notes and
vanilla.
PALATE
More savoury than the nose suggests, with toasted nuts and cinnamon notes.
FINISH
Initially light but sweet spice builds over time.

124
MAKERS 46
The wood-finishing experiments were largely enacted by Bill Samuels, Jr., and
Master Distiller Kevin Smith, with a big assist from the Independent Stave
Company, the distillery's longtime cooperage. After finally finding the flavor
they were after, Bill, Jr., learned that the perfectly toasted French oak stave was
on file as "Stave Profile No. 46."
The first bourbon in our wood-finishing series, Maker's Mark 46 was
created by Bill Samuels, Jr., to amplify the flavors he loves in Maker's Mark. The
innovative wood-stave-finishing process starts with fully matured Maker's
Mark® at cask strength. We then insert 10 seared virgin French oak staves into
the barrel and finish it for nine weeks in our limestone cellar. The result is
Maker's Mark 46: bolder and more complex, but without the bitterness typical
of longer-aged whiskies.

TASTING NOTES
NOSE
Hints of wood staves, caramel and sweetness
PALATE
Very intense flavors; a big crescendo of wood blending perfectly with deep,
complex and rich notes of vanilla and caramel
FINISH
Smooth and subtle

125
OLD FORESTER
Our founder, George Garvin Brown, was born September 2, 1846 in Munfordville, KY. In 1863 he moved
to Louisville to attend high school, and eventually became a pharmaceutical salesman. And it was that
particular line of work that led him to create the First Bottled Bourbon, Old Forester, in 1870.
Old Forester named after Dr. William Forrester.
To guarantee consistency George batches bourbon from three nearby distilleries: Mattingly, Mellwood,
and Atherton. He seals his whiskey exclusively in glass bottles and signs each bottle as his personal
guarantee of its quality.

OLD FORESTER
Old Forester Bourbon was the first to be sold in America in sealed glass bottles, to
avoid any unsavoury folks tampering with their carefully-considered recipe. It was
first seen on shelves back in 1870, and the rye-rich bourbon continues to be enjoyed
today.
Old Forester delivers a fresh and bright flavor profile perfect for sipping neat, on
the rocks, with a splash of water or in a classic cocktail.

TASTING NOTES
NOSE
Sharp and sweet, with a strong floral character that swirls with hints of mint, rich
tobacco leaf and vanilla.
PALATE
A touch of oak and pine provides a strong underpinning. Sharp at first, but softens
quickly, with hints of oak, sweet corn and rye grain character. Spicy, with soft vanilla
and light orange notes.
FINISH
Long, warm and slightly drying. Nice level of sweetness.

126
WOODFORD RESERVE
The entirety of the whiskey in Woodford’s Master’s Collection is the product of this pot distillation.
Following fermentation, Woodford Reserve is distilled three times in pot stills. For its main
portfolio, pot-distilled whiskey is blended with column-distilled whiskey produced at the Brown-
Forman Distillery in Louisville, Ky.
Woodford Reserve ages its whiskey in 1870 stone barrel houses. These buildings use a process
called heat cycling, which involves heating and cooling the air to closely control maturation. On average,
Woodford is aged for seven years before it’s blended and bottled.

WOODFORD RESERVE
The art of making fine bourbon first took place on the site of the Woodford
Reserve Distillery, a National Historic Landmark, in 1812. The perfectly balanced
taste of our Kentucky Straight Bourbon Whiskey is comprised of more than 200
detectable flavor notes, from bold grain and wood, to sweet aromatics, spice, and
fruit & floral notes
Labrot & Graham's Woodford Reserve is a superbly smooth, flavoursome
bourbon, rich and full bodied with a sophisticated range of flavours. Excellent as
a digestif after a rich meal.

selling artist, songwriter, rapper and actor, Drake. A shared passion for style, music, and the pursuit of
taste.
Moving away from the traditional whiskey aesthetic, Virginia Black evokes an attitude and
character long absent in the American Whiskey category.
Virginia Black is a personally selected collection of two, three, and four-year old bourbon whiskey
focused on a high-rye content and finished with a decadent profile. Virginia Black seeks to redefine the
essence of bourbon whiskey engaging enthusiasts irrespective of spirit preference or experience level
whether seasoned aficionados or novice whiskey drinkers. Best enjoyed neat, on the rocks, or as the
defining element of a decadent cocktail.

VIRGINIA BLACK
Virginia Black is an aged bourbon whiskey focused on a high-rye content and
finished with a decadent profile.
This high-rye bourbon has a deep, tawny hue, and a sweet scent that
suggests raisins, dried figs, and vanilla. Often compared to cognac, the smooth
palate shows notes of honeyed cherries, rich vanilla and oak finishing long with
hints of toffee, orange peel, and baking spice. Best enjoyed neat, on the rocks,
or as the defining element of a decadent cocktail.
A very handsomely presented expression, made using a combination of 2, 3,
and 4 year old bourbon.

HENRY MCKENNA
Henry McKenna was an Irish immigrant who came to the Kentucky region in 1837. Since he was in the
distilling business back in the old country, it made sense that he would apply his skills in his new home.
He set up shop in Fairfield, Kentucky — just about five miles from where the current Heaven Hill
Distillery is located. This Whiskey is named after him.
Henry McKenna was distilled by Seagram's for most of the 20th century at the Henry McKenna
distillery in Fairfield, which they acquired from the family in 1941.
Seagram's closed the Fairfield distillery in 1976, and in an unusual deal, sold the domestic rights to the
brand to Heaven Hill a few years later.
Heaven Hill heritage. In the late 1800s, a Russian immigrant brought his entrepreneurial spirit to
America. He settled in Kentucky, started a successful business, and raised five sons: the Shapira
brothers.
In 1933, the end of Prohibition sparked new interest in Kentucky Bourbon. In Bardstown, Ed
Shapira and his brothers agreed to invest in a new distillery, and eventually bought it outright. They had
no inventory, no warehousing, and no brand.
Shortly after, the Shapiras released Old Heaven Hill Bottled-in-Bond and upon its release, it
became the best selling whiskey in the State of Kentucky. The rest, as they say, is history. Under the
stewardship of the second generation, Heaven Hill Distillery has grown to become the sixth largest
supplier of distilled spirits in the United States. With a third generation now in place, the family legacy
continues.
To be labeled as Bottled-in-Bond, a whiskey must be the product of one distillery and distilled
during just one distillation season, which runs from January-June or July-December. These whiskeys
must be aged for at least four years, and bottled at exactly 100 Proof, for a strong, signature flavor.
Additionally, the D.S.P., or Distilled Spirits Plant numbers of both the production and bottling facilities
must be stated on the label.

ANTIQUE
Frankfort Distillery Inc. was established in 1902. The distillery was located 4 miles SE of Frankfort.
A 1907 leterhead identifies John D Hinde as President, R A Baker as Vice President, George Baker as
Secretary & Treasurer.
When Prohibition was enacted in 1920, the company was one of only six granted a permit to sell
spirits for medicinal purposes. In 1922, the company was acquired by Paul Jones & Co, who assumed
the Frankfort Distilleries Inc. name to retain the license to sell whiskey under the "Four Roses" and
"Antqiue" brand names, among many others. Their office was located in Louisville (118 E Main St).
By 1928, stocks of pre-Prohibition whiskey had dwindled and the company contracted the Louisville-
based A Ph. Stizel distillery to supply them with spirits.
When Prohibition was repealed in 1933, Frankfort Distilleries Inc. took over the old Stitzel plant and
built a new one (Four Roses) in Shively. By the late 1940's, the distilleries and brands had been taken
over by Seagrams.

ANTIQUE KENTUCKEY STRAIGHT 1968

you don't like the big bold and sweet style in the world of bourbon.

moderate amount of spice (cinnamon, cardamom, a bit of ginger) and wood.
FINISH

fruity feel.

The company began when Distillers Corp., Ltd., a Montreal distillery owned by Samuel Bronfman,
acquired Joseph E. Seagram & Sons in 1928. The new company, named Distillers Corporation-Seagrams
Ltd., grew rapidly during the later years of the Prohibition era and in the 1930s. By the 1940s the firm
had become the largest distiller in both Canada and the United States. Under the leadership of the
founder’s son, Edgar M. Bronfman, who became head of the company in 1971, the firm diversified
during the 1950s and ’60s from its original base of blended whiskies into the production and marketing
of Scotch, bourbon, rum, vodka, gin, and many different wines. It also expanded into the European,
Latin American, East Asian, and African markets. Edgar M. Bronfman, Jr., succeeded his father in 1989
and began selling the company’s liquor businesses to competitors while purchasing entertainment
companies such as MCA (including Universal Pictures) and Polygram NV.
In 1939, Seagram introduced Crown Royal in honour of George VI and Queen Elizabeth’s royal
tour of Canada that year. The bottle was presented in a purple pouch with gold stitching — which
became synonymous with the brand.

SEAGRAMS 7 CROWN 1975

Seagram's 7 Crown, their American blended whiskey rather than their Canadian
blended whisky (which they are rather well known for). This full quart bottle was
produced in Indiana in 1975 and has been kept in great condition.
If you look closely, you'll see that the 7 on the label is wearing a crown, as if
it was a person, and a royal one at that. An old bottling of the Seagram’s 7 Crown
blend, produced with 35% straight whiskies aged four to six years and 65% grain
whisky. It was extremely popular in the 1970s

OLD CHARTER
The Old Charter brand was established in 1874 by Adam and Benjamin Chapeze, brothers operating
under the name A. B. Chapeze, who were operating a distillery on the Bardstown branch of the L&N
Railroad. Ben Chapeze traveled and pushed the brand and made it well known while his brother Adam
managed the operation. Eventually sales were assigned under contract to Wright & Taylor,
a Louisville wholesale house operated by John J. Wright and Marion E. Taylor.
In 1933, the Bernheim distillery acquired the Old Charter Brand and all of its bourbon stock
from Wright & Taylor, but did not start selling the brand using that stock until the stock was fully aged
for bond in 1937. Wright and Taylor also used the Old Charter brand name for their remaining pre-
prohibition bourbon stock. In 1937, the two majority owners of Bernheim, Gerngross and
Schwarzhaupt, sold out to Schenley Distilleries. The brand names sold at that time included Old Charter,
Cascade, and Echo Springs In 1974, the 1,000,000th barrel of Old Charter was bottled and a case was
given by the Governor of Kentucky (Wendell Ford) to the Governor of Texas (Dolph Briscoe) as a gift. In
1987, United Distillers acquired Schenley. In 1999, the Old Charter brand was purchased by the Sazerac
Company from Diageo.

OLD CHARTER KENTUCKEY STRAIGHT 1972

If the clock on the label of this 1970s Old Charter Kentucky Bourbon only moved
forwards 1 hour every year, it would accurately tell you how old this bourbon it, as it's
pointing at 7 o'clock and this bourbon is 7 years old.
A rare 7 year old straight bourbon distilled in the 1970s. Produced for the Italian
market by the Old Charter Distillery.

Irish Whiskey
BUSHMILLS
Bushmills is home to the world’s oldest licensed whiskey distillery. Official records stretch back to 1608,
when the area was granted its license to distil. Over 400 years later, whiskey is still being made in
Bushmills, thanks to experience and craft passed down from generation to generation.
Bushmills is named for the mills that dotted the town all along the River Bush.
“Bushmills – oldest because it is the best, not best because it is oldest.”

BUSHMILLS BLACKBUSH
Black Bush Irish whiskey combines an exceptionally high amount of malt married
with a sweet, small-batch grain whiskey, and then matured in former Oloroso sherry
and bourbon casks. This unique recipe means Black Bush has rich, fruity notes and a
deep intense character, balanced by an incredibly unique smoothness.

JAMESONS
John Jameson (1740 – 1823) was originally a lawyer from Alloa in Scotland before he founded
his eponymous distillery in Dublin in 1780. Previous to founding the distillery, he married Margaret Haig
(1753–1815) in 1768. She was the eldest daughter of John Haig, the famous whisky distiller in Scotland.
John and Margaret had a family of 16 children, eight sons and eight daughters.
Four of John Jameson's sons followed his footsteps in distilling in Ireland, John Jameson II (1773 –
1851) at Bow Street, William and James Jameson at Marrowbone Lane in Dublin (where they partnered
their Stein relations, calling their business Jameson and Stein, before settling on William Jameson &
Co.). The fourth of Jameson's sons, Andrew, who had a small distillery at Enniscorthy.
Jameson is produced from a blend of grain whiskey and single pot still whiskey, which uses a
mixture of malted and unmalted or "green" Irish barley

JAMESONS ORIGINAL
Jameson Irish Whiskey is a blended Irish whiskey. What’s that we hear you say. Well
first we take the best of pot still and fine grain whiskeys. Then we triple distil them - not
because we have to because we want to as it gives it its signature smoothness. Finally,
we age them in oak casks for a minimum of 4 years.

Medium-length with spice and honey.

MIDLETON
Midleton Very Rare, a magnificent blend of the finest distillates hand-picked by the Master Distiller,
Barry Crockett, is one of Ireland’s most exclusive whiskeys. Whiskeys from the old Midleton distillery
have always been acknowledged as special. Thus, this top Irish whiskey takes its name from the east
Cork distillery town. This whiskey is aged between 12 and 25 years, and is matured exclusively in
seasoned Bourbon barrels. Midleton Very Rare was launched in 1984 to celebrate the whiskeys of the
Midleton distillery, and a new vintage has been released every year since then. Each bottle carries its
own individual number and the signature of our Master Distiller. This annual release of a new vintage
is a departure for the whiskeys of Irish Distillers where consistency from year to year is highly valued.
The individual nature of the selection process for each vintage of Midleton Very Rare means that each
year’s vintage provides its own character. Prized among collectors, we know of very few collections of
all vintages since the first in 1984.
The Old Midleton distillery was part of the Cork Distillery Company, which merged with John
Power & Son and John Jameson & Son in 1966 to form Irish Distillers.
The new Midleton is an enormous modern distillery in County Cork built by Irish Distillers in 1975to
streamline the production of its many brands.
This brought an end to nearly 200 years of Jameson production in Dublin, but the Old Jameson
Distillery in Bow Street is now a visitor's centre. Tourists can also visit the Midleton complex, which is
home to many other brands beside Jameson, including Green Spot, Paddy, Power's and Redbreast.
The Midleton distillery's flagship brand is Midleton Very Rare, which is a small batch blend released
annually.

MIDLETON VERY RARE

Midleton Very Rare is one of the most exclusive whiskeys ever produced in
Ireland. A non-age statement whiskey, containing a mix of pot still and grain
whiskeys exclusively matured in American oak barrels, this whiskey is only
available in strictly limited quantities as just a small number of casks are
personally selected by the Master Distiller, Brian Nation each year.An annual
selection since 1984 and thus, very collectable, each bottle is individually
numbered and bears the signature of the Master Distiller as a final guarantee
of outstanding quality.

TASTING NOTES
NOSE
Baked peaches with marzipan and almonds. Fried butter, just before it
browns, with some notes of crisp apples and nutmeg.

TEELING
Whiskey making and entrepreneurship has been in the Teeling genes as far back as 1782, when Walter
Teeling set up a small craft distillery on Marrowbone Lane in the industrial heart of Dublin City.
Since 2012, Jack and Stephen Teeling, the latest generation of Teeling Whiskey makers, have been
putting their own mark on Irish Whiskey and came full circle in 2015 when they proudly opened the
new Teeling Whiskey Distillery just down the road from where the original family distillery once stood.
The Teeling Whiskey Distillery today is the first new distillery in Dublin for over 125 years.

TEELING SINGLE MALT

finished in casks that impart the influence of five wine casks (Sherry, Port,
Madeira, White Burgundy, Cabernet Sauvignon). This Irish Single Malt

balanced and has often been described as “a symphony” of flavour.

TASTING NOTES

RED BREAST
Redbreast is said to have been named by a Gilbey's chairman who was also a keen birdwatcher,
presumably in reference to the ruby hue found in a glass of this tasty whiskey. Robin redbreast is, of
course, a common name for the European robin. With the range of Redbreast whiskeys available today,
you may find yourself wondering what the collective noun for robins is. Allow us to help you: It’s a
worm. A worm of robins! Pleasing.
Redbreast 12 Year Old is the only aged Pure Pot still whiskey on sale today. It was first launched
in 1939 as the brand name given to the pot still whiskey supplied by Jameson to whiskey bonders before
bottling at the distillery became the norm in 1968. Stocks of whiskey in bonders’ stores petered out,
and thus Redbreast all but disappeared until its re-launch by the distillery in the 1990s as a single pot
still whiskey. This pure pot still whiskey is matured for a minimum of 12 years in sherry casks and
Bourbon barrels. Like all good pot still whiskeys, it is strongly flavoured and assertive, making it a rare
treat for the connoisseur of fine old whiskey.

RED BREAST 21 YO
Using a style of Pot Still whiskey reflective of the Midleton Distillery
tradition, Redbreast 21 represents the ultimate expression of
Redbreast Single Pot Still Irish Whiskey. The 21 year ageing process
introduces new levels of depth, flavour and taste, creating a complex
and rewarding whiskey. Abundantly aromatic and fruitful, and
produced in very limited quantities, this 21 year old Redbreast is a joy
to behold in each and every bottle. This is a combination of malted
and unmalted barley matured in a mixture of bourbon barrels and
first-fill oloroso casks, resulting in a rich and complex whiskey.
TASTING NOTES
NOSE
Remarkable aroma spanning fresh tropical fruits, nuts and rich dried
fruit.
PALATE
Soft vanilla, toasted oak, sherry nuttiness with a dusting of spices.
Luscious fleshy fruit notes complete the silky mouthfeel.
FINISH
Lingers, seemingly forever, with oak and an assortment of spices and
then, the final bow from barley – where it all began.
