1 can crushed tomatoes

Instructions:
1. Heat the olive oil in a saucepan and add
the chopped onion and garlic.
2. Add the turmeric.
3. Add the cumin and ginger.
4. Add the vegetables of your choice and
cook for 5 to 7 minutes until tender.
5. Add the chickpeas and crushed tomatoes
and simmer for about 10 minutes.
6. Season to taste with salt and pepper.
7. Garnish with fresh coriander and serve
with rice or naan bread.
