Welcome to the Cookery 10 Self-Learning Module on Techniques for Storing Cereal


and Starch Dishes (Dry and Cooked Pasta)!

This Self-Learning Module was collaboratively designed, developed and reviewed by


educators from the Schools Division Office of Pasig City headed by its Officer-in-
Charge Schools Division Superintendent, Ma. Evalou Concepcion A. Agustin, in
partnership with the City Government of Pasig through its mayor, Honorable Victor
Ma. Regis N. Sotto. The writers utilized the standards set by the K to 12 Curriculum
using the Most Essential Learning Competencies (MELC) in developing this
instructional resource.
This learning material hopes to engage the learners in guided and independent
learning activities at their own pace and time. Further, this also aims to help learners
acquire the needed 21st century skills especially the 5 Cs, namely: Communication,
Collaboration, Creativity, Critical Thinking, and Character while taking into
consideration their needs and circumstances.

Techniques for Storing Cereal and Starch Dishes


(For Dry and Cooked Pasta)

Proper storing of food is an aid to maintain the nutritive value of food, its freshness,
and quality. It helps prevent food spoilage and growth of bacteria in which,
eventually, causes people’s sickness. To avoid getting one’s health into risk, food
storage has a set of rules to observe: storing of food at the right temperature, at the
right amount of time, and in the right place.

The FIFO method applies to refrigerated, frozen, and dry storage items.
Applying FIFO ‘First In, First Out’ plays an essential role in storing food
systematically. It simply means labelling the leftover food with date you store them
and its shelf life. Placing the items on top or in front to quickly find and reach them.
It also has a principle of consuming the earliest purchased items and using them
which shelf life are the shortest.

How to store Dry Pasta Noodles

Proper storage must be done to


ensure the pasta noodles are
kept safe from risk of bacteria
or mold growth. In this way,
dry pasta noodles stay fresh
longer without moisture
content. This results the pasta
to have an extreme longer shelf
life.
 Remove pasta noodles in an opened pack and place
them in a sealable pouch or air-tight canister.
Use containers that are clean and dry. They must
have enough height and size to fit the pasta noodles.

 Zip lock the pouch or clip top lid of canister to seal.

 Label the pasta container with a “use by” date based


on the shelf life indicated from pasta original pack.
This is done to ensure that the pasta noodles would
be consumed long before they are no longer safe to
eat.
 Place in a cool, dry place such as pantry.

How to store Cooked Pasta Noodles

Whether the cooked pasta is


either sauced or plain, they
must be stored in a clean, dry
container and refrigerated
within two hours. Following the
proper storage, maintains the
food in its best flavor, texture,
and quality. Otherwise, cross
contamination gets over the
pasta.
Before storing and sealing the cooked pasta noodles, ensure to do the
following:

-For the plain pasta, spread a teaspoon of oil and toss


to prevent sticking.
-For the sauced pasta, reheat and let it cool first.
-Sealing and storing sauce of the pasta can be done
separately. First reheat and let it cool.

 Place the cooked pasta noodles in an air tight container or zip


lock/pouch.

 Clip top lid of canister tightly, to make sure there will be no air left to
moisten the pasta noodles that causes to build-up molds.

For storing pasta noodles using zip lock pouch/bag: Just squeeze or
press the air out of the pouch hardly enough. Then seal it. Also, try to
use vacuum pump for vacuum sealing bag, if available.
For sauced pasta, ensure that there is just enough amount of sauce
mixed, to avoid soaking the pasta that deteriorates its texture.
For sauce of the pasta, it can be stored separately to keep
it fresh, flavorful and avoid cross contamination with the
pasta. Pasta sauce is safe to refrigerate between 5-6 days.
 Label the pasta container with important details in it like
food name, date stored, “use by”’ date (this is the consume
date that food is safe to eat.) This is to keep everyone
informed about the length of time in which the cooked pasta
is safe to eat.

 Refrigerate or chill the sealed pasta noodles.


 Set at temperature below 5°C.
