Lambanog wine, also called coconut vodka, is an alcoholic beverage produced in the
Philippines. It is a very popular alcoholic drink among men and women in the rural areas
of the Southern Tagalog provinces, where it is widely produced. It is widely enjoyed by
the locals and festive occasions are almost incomplete without it. It is free from artificial
chemicals because it is made purely from coconut sap. Lambanog processing starts
with the pruning of the coconut flowers to let the sap drip from the blossoms. The sap is
then collected and cooked using the fermentation process, producing a coconut “tuba”.
The tuba is distilled, cooled, and filtered to produce the coconut wine. It may be added
with fruit flavors such as berries, raisins, calamansi, mango, and even gum flavors to
offer a variety of tastes. (Ascan, 2010)
Coconut wine, known locally as lambanog, is a potent palm liquor distilled from coconut
sap with an alcohol content of 40% to 45% by volume. It is a popular drink during the
festive season, Known in English as coconut wine, the tuba is produced from
coconut sap. Tuba makers will climb the coconut trees in provinces usually here in
Glan, this is usually done with the most basic of materials: using a knife (called
a sanggot) and natural agility and making a cut in the plant's inflorescence.
Glan is the largest coconut-growing and top-producing town in the country. And
While for several decades now, it is known as the "Coconut Queen of The Philippines",
Glan has yet to hurdle a few notches higher to be in the league of the fastest-growing
municipalities. In making a wine the primary sources are the production of coconut
around widely in Glan.
Respondents
In conducting this study, we aim at the probability that the number of respondents is up
to 50 above people who are producing coconut wine. Our target respondents are
coconut farmers or “Mananggiti”.
Statement of the Problem:
The production practices of coconut wine as well known in this place of Glan, we
conducting a study about the production practices of coconut wine in Glan. We aimed to
determine the possibility. The research will seek the answer to the following questions:
1.. what are the demographic profile of the coconut wine producer in terms of:
• Age
• Educational attainment
• No. of years in coconut wine production
• Coconut wine sources and classification
2. what are the production practices of coconut wine
• Coconut taping
• Distillation methods
• Mixtures
• Marketing
