SWEET POTATO MALUNGGAY CHEESE BALLS: A MARKETABILITY


STUDY

Chapter 1

INTRODUCTION

Background of the Study

Potato is an economically important staple crop prevailing all across the world

with successful large-scale production, consumption, and affordability with easy

availability in the open market. Potato is one of the main food crops of the world and

it provide basic nutrients such as carbohydrates, dietary fiber (skin), several vitamins, and

minerals (e.g., potassium, magnesium, iron), it is a tuber and made mostly of starch. Starch

is a slow-release form of energy. The plant grows wild in the Andes of South America and

nearby areas, and that is where it was first seen by Europeans and then introduced back

into Europe. However, the potatoes we all eat are from tubers brought back from the

lowlands of south-central Chile. People in East and central Europe eat more potatoes per

head than anyone else in the world. It has been a main crop in Europe and North America

for centuries, but is now becoming increasingly popular in Asia, potatoes will grow

anywhere where the climate is cool. Today they are a staple food in many parts of the world

and an integral part of much of the world's food supply.

More than a billion people worldwide eat potatoes it is because the potato has

been a dietary staple for centuries; Potatoes contribute important nutrients to the diet

including potassium, vitamin C and dietary fiber and increase overall vegetable

consumption among children, teens, and adults. (IPC 2016).


Potato cheese rolls (potato rolls) is a round-shaped that made of mashed potatoes

with cheese inside consisting of eggs, yeast, bread crumbs, malunggay leaves as added

ingredients, these Potato cheese rolls or potato rolls are an easy to make appetizer which is

crunchy from outside and gooey and cheesy from inside it is also deep-fried and addictive

goodness rolls have a delicious crispy crust due to the outer layering of bread crumbs with

a combination of malunggay leaves. Potato Cheese rolls or potato rolls is a mouth-watering

combination of potatoes and cheese which is more attractive to kids that will benefits to

their health but also to adults because potatoes are rich in vitamins, minerals and

antioxidants, which make them very healthy, studies have linked potatoes and their

nutrients to a variety of impressive health benefits, including improved blood sugar control,

reduced heart disease risk and higher immunity. Potato produces more energy and protein

per unit area and unit of time than most other major food crops, and it is fat-free (Lutaladio

and Castaldi, 2009).

Potatoes are a great source of Vitamin C and potassium, offering 45% and 18%

of the recommended daily value respectively per 5.3 ounce potato with skin on (United

States Potato 4 Board 2015). Compared to other vegetables commonly found in grocery

stores, potatoes are the largest and most affordable source of potassium (Drewnowski et al.

2011). With zero mg of sodium per serving, and 2 g of fiber, potatoes are receiving more

and more attention as a food source for biofortification to be a more complete nutrient

source for the American diet as well as developing nations.

According to the Food and Nutrition Research Institute (FNRI) of the Department

of Science and Technology (DoST), a medium-size 150g potato with skin gives 45% of
the daily needs of vitamin C, 18% of potassium and 10% of vitamin B6. There are 26g of

carbohydrate in a medium potato, in the form of starch. Potatoes contain nutrients that

contribute to a dietary pattern that can lower blood pressure and improve cardiovascular

health, including potassium, magnesium, vitamin C, niacin, and vitamin B6,” said Dr.

McGill, In fact, potatoes have a more favorable overall nutrient-to-price ratio than many

other fruits and vegetables and are an affordable source of nutrition worldwide (Rhem and

Drewnowski, 2013).

This study focuses on producing potato cheese rolls that is made with potato as a

main ingredient with cheese inside which according to several studies, cheese also contains

high amounts of vitamins A and B-12, along with zinc, phosphorus, and riboflavin. Cheese

made from the milk of 100 percent grass-fed animals is the highest in nutrients and also

contains omega-3 fatty acids and vitamin K-2, dairy products in general could work to

protect your teeth from cavities, more children with an above-average daily intake were

cavity-free after three years than those with a below-average intake. Cheese is a great

source of calcium, fat, and protein. (Danish 2015).

This study aims to determine the marketability in producing the product potato

cheese rolls to be conducted in barangay sinilian 3rd Bitawa Camiling, Tarlac. Potato was

used as a main ingredients in producing potato cheese rolls (potato rolls) combined with

cheese inside.

Hypothesis of the Study

Potato as a main ingredients in making potato rolls is not marketable.


General Objectives

This study aims to make an affordable alternative snack that is good for the health

of people with the main ingredient of potato and cheese.

Specific Objectives

This research study was conducted to acquire relevant data on studying the

marketability of potato as the main ingredients of healthy diet snack (potato rolls)

production.

Specifically, this study attempted to find answer(s) to the following:

1. To determine the characteristics of the product in terms of:

1.1 taste;

1.2 aroma;

1.3 texture;

1.4 packaging and;

1.5 price;

2. To determine the marketability of the product in terms of income and expenses.

2.1 expenses;

2.2 income; and

2.3 customers satisfaction


Significance of the Study

This study seeks to focus on the goal of offering healthy and affordable snack for

the people which will make them fully satisfied with its winning taste which also gives

advantages to their health. Potatoes are a good source of fiber, which can help you lose

weight by keeping you full longer. Fiber can help prevent heart disease by

keeping cholesterol and blood sugar levels in check. Potatoes are also full

of antioxidants that work to prevent diseases and vitamins that help your body function

properly also potatoes are an economical food, they provide a source of low cost energy to

the human diet.

To the Consumer. The product will give a great benefit to their health specially

those who wants to lose weight by keeping them full in longer hours, potatoes was very

beneficial for the health of an individual due to its affordability of its price.

To the Future Researchers. This study can be used as a reference to their future

research paper related with potato. Specifically to the upcoming ABM students. With these,

as a soon businessmen/businesswomen this will give them additional ideas for their future

food businesses also this will serve as their guide in producing product related with potato

cheese rolls.

Scope and Delimitation

The researcher were only be limited to conduct the study about the marketability

of potato in producing potato cheese roll (potato rolls), the preferable amount allotted for

this product is P5 each. In which, this study will only be conducted in barangay sinilian 3 rd

Bitawa Camiling, Tarlac. This study will include the following: the personal observation
of the customers about the product that will include their critical comments and suggestion

on how to improve the product.

Definition of Terms

The following terms were defined to provide a clear understanding about the study:

Aroma. A distinctive, pervasive, and usually pleasant or savory smell

the aroma of freshly-baked bread broadly. It is a characteristics to evaluate the sweet

potato malunggay cheese balls.

Bread crumbs. Bread crumbs or breadcrumbs (regional variants: breading,

crispies) are sliced residue of dry bread, used for breading or crumbing foods, topping

casseroles, stuffing poultry, thickening stews, adding inexpensive bulk to soups,

meatloaves and similar foods, and making a crisp and crunchy covering for fried foods,

especially breaded cutlets like tonkatsu and schnitzel. The Japanese variety of bread

crumbs is called panko.

Cheese. It is a dairy product, derived from milk and produced in wide ranges of

flavors, textures and forms by coagulation of the milk protein casein. It comprises proteins

and fat from milk, usually the milk of cows, buffalo, goats, or sheep.

Egg. It contain several vitamins and minerals that are essential parts of a healthful

diet. They are a natural source of key nutrients including omega-3 fatty acids, vitamins A,

E and B12, antioxidants and choline. Eggs are also a source of vitamins A, B, E, and K.

Egg white and yolk are both rich sources of protein.

Feasibility. It describes how easy or difficult it is to do something. Business

Dictionary defined feasibility study as the analysis and evaluation of a proposed project to
determine if it is (1) technically feasible, (2) feasible within the estimated cost, and (3) will

be profitable.

Malunggay Leaves. A plant with the scientific name Moringa oleifera. It is simply

called “moringa”. Moringa has been used for centuries due to its medicinal properties and

health benefits. It also has antifungal, antiviral, antidepressant, and anti-inflammatory

properties. Malunggay is one of the important plants that deserve national 7 and

international promotion due to the many biomedical endowment and numerous

socioeconomic benefits that can be derived from it.

Marketability. Marketability describes an attribute of an investment that means it

can be sold at any time. It is a measure of whether a product will appeal to buyers and sell

at a certain price range to generate a profit.

Packaging. Packaging refers to the process of designing, evaluating, and

producing packages. The presentation of a person, product, or action in a particular way,

also the business or process of packing goods.

Potato. A round vegetable that grows undergrounds, these are underground tubers

that grow on the roots of the potato plant, Solanum tuberosum. This plant is from the

nightshade family and related to tomatoes and tobacco. Native to South America, potatoes

were brought to Europe in the 16th century and are now grown in countless varieties

worldwide.

Price. A price is the quantity of payment or compensation given by one party to

another in return for one unit of goods or services. A price is influenced by production

costs, supply of the desired item, and demand for the product.
Texture. The feel, appearance, or consistency of a surface or substance (Oxford

Languages). In this study, texture was used to measure the properties of the grape flavored

pancake and this includes the smoothness and softness of the product.

Tool of Evaluation. In this study, it was used to evaluate the product (potato cheese

rolls). It involves in the process of giving points on the different aspects of the product by

the respondents. Its purpose is to make judgement about the product using the following

groups mean ratings and their corresponding interpretation will be used to describe the

product with the 5-Point Hedonic Scale.

Yeast. It is a single-cell organism, called Saccharomyces cerevisiae, which needs

food, warmth, and moisture to thrive. It converts its food—sugar and starch—through

fermentation, into carbon dioxide and alcohol. It's the carbon dioxide that makes bake

goods rise. The first yeast originated hundreds of millions of years ago, and 1,500 species

are currently identified. They are estimated to constitute 1% of all described fungal species.

Figure 1 presents the Input, Process and Output model (IPO) which the researcher

will use in the study. This framework presents the three stages to follow on how to produce

potato cheese rolls. In which, in the production process you should first identify the input,

or the necessary ingredients and materials or equipment and the process to follow in

production for you to have the desired output.

Furthermore, the input or materials or equipment that used were Measuring spoon,

mixing bowl, frying pan and stock pot, peeler, ladle, plates or bowl, colander this will use

for Preparing, Boiling, Mixing, Cooking, or Frying and Serving to make the target output

(potato rolls or potato cheese rolls).


Chapter 2

METHODOLOGY

This chapter presents the methodology of the study. It also discusses the research

design, methods of collecting data, materials, equipment, and procedures for production of

the project. It started by explaining the research design ingredients and treatments,

materials/equipment, and procedures on how to make the output/product (potato cheese

rolls or the potato rolls).

Research Design

This study used descriptive research design in interpreting the data. A descriptive

research design is a scientific method which involves observing and describing the data

which involve the collection of respondent’s response in order to answer questions

concerning the category of the study.

Methods of Collecting Data

The researcher use a survey questionnaire to this study to gather, collect, and

analyze the respondent’s response to the product and allowing them to taste the product

that is made by the researcher. The researcher will give the survey questionnaires to the

twenty five (25) teachers in Camiling Catholic School Inc. and twenty five (25) survey

questionnaires to the respondents in Sinilian 3rd Bitawa, Camiling, Tarlac, for the total of
50 individuals who will participate on the study. With these, the target market or the

respondents will be able to provide all the information needed on this study according to

the given questionnaires. The data collecting stage will be crucial for the study since the

results depend on it and it could lead to inexact conclusion.

Ingredients

The ingredients that used in making potato cheese rolls (potato rolls) are the

following:

 potato

 malunggay leaves

 eggs

 breadcrumbs

 yeast

 cheese

Materials
To produce the product (potato cheese rolls or potato rolls) the following

equipment/ materials are needed:

 Measuring spoon
 mixing bowl
 frying pan
 stock pot
 Peeler
 Ladle
 plates or bowl
 Colander
Procedures
The following are the processes in making potato cheese rolls (potato rolls).

For the process:

1. Prepare the ingredients and equipment.

2. Wash the potatoes, put it inside the stock pot (with water).

3. Boil the potatoes until it softened.

4. Get a malunggay leaves, remove the leaves from the stem, wash them and

put it in a container.

5. In a bowl, crack the eggs mix it with fork until it will be soft.

6. Put the breadcrumbs in a plate with the dried malunggay leaves.

7. Slice the cheese like a little square shape.

8. Place the boiled potatoes in a large bowl, grind them with spoon until it

become fully crushed.

9. Get a measuring spoon, create a round shape each one spoon of the crushed

Potato.

10. Flatten the round and keep one square of cheese in the center.

11. Bring the ends together and make it round again.

12. Repeat the process of # 9-11 until you finish.

13. Dip the round potatoes in the bowl of beaten eggs then roll them in the

Bread crumbs w/ malunggay leaves (make all the round potatoes this way).

14. Deep fry the round potatoes on medium heat until it become golden brown.
Chapter 3

RESULTS AND DISCUSSION

This chapter contains the congregated result from the evaluation, discussion and

the data analysis of the malunggay and potato cheese balls. The following tables shows

insights about the investigatory project. Together are the interpretations of the tables from

the evaluation questionnaire researches that was given to the accumulated 50 respondents

who evaluated the product.

Table 1 shows the summary of overall mean score of every statement in terms

of taste, aroma, texture, packaging, and price. The taste got 4.62 computed mean and aroma

got 4.36 computed mean and 4.52 computed mean of texture and packaging got 4.35
compute mean and a mean of 4.83 for the price. The overall mean is 4.54 and those

characteristics of malunggay potato cheese balls had a verbal description of very good and

excellent.

Table 1.1 shows the evaluation of the product in terms of taste. According to the

gathered data, the respondents agreed that the sweet potato malunggay cheese balls taste

delicious and has a computed mean of 4.7. Additionally, the respondents agreed on the

product flavor and ingredients are well-blended with a mean of 4.62, some of the

respondents suggested to add some sauce in the product to enhance more delicious taste

and some of them state that it is better for the potato balls if it is more crispy. The

respondents also agreed that the product taste compliment to the main ingredient without

any after taste with a computed mean of 4.54. Some of the respondent states that the

malunggay has no taste to the product but overall they stated that the product taste delicious

and the flavors and ingredients of the product are well-blended also the product taste
complements to the main ingredient without any after taste. In this table, all of the statement

had a verbal description of excellent.

According to the data gathered with the survey that has been imposed from the

residence of Sinilian 3rd bitawa Camiling, Tarlac. The aroma of something is its quality of

being appetizing or acceptable in some other way. Aroma is defined as appetizing that

accordance to the respondents. The researchers‟ gathered that the respondents agreed that

the sweet potato malunggay cheese balls scent is appetizing with a mean of 4.42.

Furthermore, 4.38 of the computed mean said that the product scent compliments to the

ingredients of the product and it has a moderate aroma of all ingredients used. All of the

statements of the respondents had a verbal description of Very Good.

Table 1.3 shows evaluation of the product in terms of texture that defined as the

consistency of the substance. There are three statements composed. In terms of texture

compliments that defined as the quality of being perfectly regular, with no holes or lumps

or areas that rise or fall suddenly, the statement state that the sweet potato malunggay

cheese ball’s texture compliments to the product type has computed mean of 4.62, 4.56 for

the texture is evenly blended with the main ingredients and 4.46 computed mean for the

texture is moderately soft and tender. All of the statements has a verbal description of

excellent except to the statement the texture is moderately soft and tender which is very

good.

Table 1.4 shows the evaluation of the product in terms of packaging. The table

composed of three statements. The statement “the packaging of the product is clean and

presentable” got a computed mean of 4.54, while the statement “The packaging of the

product is secured and durable” has a computed mean of 4.34, and 4.17 computed mean

for the statement “The packaging of the product is creative” and all of the statement has a

evaluated verbal description of very good except to the first statement “the packaging of

the product is clean and presentable” that has a verbal description of excellent.

Table 1.5 shows the evaluation of the product in terms of price. The table composed

of two statements. According to the gathered data, the respondents agreed that the sweet

potato malunggay cheese ball’s price is affordable for the product but some of the

respondents stated that the product is too big for the price so they suggested to make it

smaller and much affordable for its price. The statement “The price is very affordable” got

a computed mean of 4.86 while, the statement “the price is reasonable in every serving

portion or price” has a computed mean of 4.82. All of the statement has evaluated verbal

description of excellent.

Table 2 shows the evaluation of income and expenses. The evaluator seemed to all

the prices or costs of the sweet potato malunggay cheese balls, they also observed that the

price is affordable and worthy of investment.

Throughout the period of time, the researcher made up of 80 pieces sweet potato

malungggay cheese balls that cost ₱5.00 each. In making the sweet potato malunggay
cheese balls researcher spent ₱253.00 each day, this includes 1 ½ kilo of sweet potatoes

that cost ₱120.00 each. ₱20.00 each for the cost of oil, ₱10.00 each for the ¼ kilo of white

sugar, 4 pieces of egg that cost ₱32.00 each, also cheese that cost ₱49.00 each and lastly

breadcrumbs that cost ₱22.00 each. The malunggay is not added to the expenses of the

product since it can be found in the backyard. Thus, the total expenses of the sweet potato

malunggay cheese balls are ₱ 1,265.00 that made up of 400 pieces of products. The total

revenue of the product is ₱ 2,000.00 and the total income for the 5 days of selling is ₱

735.00.

Table 2.1 shows the evaluation of customer’s level of satisfaction of the product

“sweet potato malunggay cheese balls”. 15 amount of respondents voted level 5 for their

satisfaction of the product, while 28 respondents voted level 4 and lastly 7 respondents

voted 3. The evaluation of how the customers satisfied with the product has a verbal

description of very good.


Comments and Suggestion of the Respondents

Here are the comments and suggestions of the fifty (50) respondents about the

product entitled “Sweet Potato Malunggay Cheese balls”. The second respondent said that

the malunggay has no taste to the product, the fourth respondent said that the product name

should be cheese balls, while the ninth respondent suggested to add more cheese to the

product, the tenth respondent said that the malunggay was used for texture only, the

eleventh respondent said that the product looks like a butchi, the twelfth respondent

suggested to reduce the price and make a smaller cheese balls lastly, the fifteenth

respondent said that the product still lacking in deep fry and the rest of respondents did not

provide any comments and suggestions about the product.


Chapter 4

SUMMARY, CONCLUSIONS AND RECOMMENDATIONS

This study presents the summary of findings, conclusions and recommendations

offered by the research.

Summary of Findings

This study entitled “Sweet Potato Malunggay Cheese Balls: A Marketability

Study”. This study used descriptive quantitative method to determine if it is marketable or

not. The respondents of the study were twenty-five (25) residence of Sinilian 3rd Bitawa

Camiling, Tarlac and twenty-five (25) teachers from Camiling Catholic Inc. with a total of

fifty (50) respondents. It show how the sweet potato malunggay cheese balls described

when it comes to taste, aroma, texture, packaging and price.

The taste got a computed mean of 4.63 with the verbal description of excellent,

while the aroma got a computed mean of 4.39 with the verbal description of very good And

4.55 for the computed mean of texture with the verbal description of excellent, 4.35 for the

computed mean of packaging with the verbal description of very good and lastly 4.84 for

the computed mean of the price with the verbal description of excellent, the overall

computed mean got 4.55.

Thus, the total expenses of the green burger are ₱ 1,265.00 that made up of 400

products. The total revenue of the product is ₱2,000.00 and the total income for the 5 days
of selling is ₱ 735.00. The use of potato in making the sweet potato malunggay cheese balls

is marketable and promotes healthy alternative snack for a healthier diet.

Conclusions

Based on the result of the study, the following conclusions were drawn:

1. The general evaluation of sweet potato malunggay cheese balls in terms of taste,

texture and price has a verbal description of excellent while, the evaluation of

aroma and packaging has a verbal description of very good. And the overall mean

was excellent.

2. The sweet potato malunggay cheese balls accumulates an income of ₱ 2,000.00 with

an expenses ₱ 1,265.00.

3. Out of 50 respondents 15 of them voted level 5 for their satisfaction of the product,

while the 28 of them voted level 4 and lastly the remaining 7 respondents voted 3

with a total mean of 4.16.

4. Out of fifty (50) respondents seven (7) of them gives their comment and suggestion

about the product, the first one said that the malunggay has no taste to the product,

the second said that the product name should be cheese balls, the third suggested to

add more cheese to the product, the fourth said that the malunggay was used for

texture only, the fifth said that the product looks like a butchi, the sixth suggested

to reduce the price and make a smaller cheese balls and lastly the seventh said that

the product still lacking in deep fry.

5. The use of potato as a main ingredients in making sweet potato malunggay cheese

balls is marketable.
Recommendations

Based on the conclusions presented, the following are recommended:

To the consumer. The product will give a great benefit to their health specially those

who wants to lose weight by keeping them full in longer hours, potatoes was very beneficial

for the health of an individual due to its affordability of its price.

To the future researchers. This study can be used as a reference to their future

research paper related with potato. Specifically to the upcoming ABM students. With these,

as a soon businessmen/businesswomen this will give them additional ideas for their future

food businesses also this will serve as their guide in producing product related with potato

cheese rolls. Additionally, for the future researchers or those will have a similar study make

sure to improve the packaging or attempting to make the packaging of the product clean

and presentable at the same time secured and durable.
