Bubble tea or milk tea
webinar introduction
Bubble tea is also known as milk tea, pearl milk tea, boba milk tea, boba
tea or tapioca tea. The drink with a fat straw, a very sweet tea. Bubble tea
originated in the early 80’s from a tea shop in Taichung, Taiwan.
As business milk tea or bubble tea shop is determined to become a
daily necessity of our generation. A business that is profitable while helping the
customers to relieves their stresses by providing a peace of mind through great
ambience and products of consistency high quality to increase the customer
satisfactions while having a stable profit.
How milk tea started in the Philippines?
Philippines has no rich history when it comes to tea like in other
countries. But we filipinos have a traditional tea such as Salamat tea or
ginger tea. Aside from brewing your own tea, we taste a milk tea from
nestea iced tea, other bottled drinks with tea flavors and also chowking
has already serving their own version of milk tea.
Short history of Milk tea in PH market
• 2008 – Serenitea introduced it in the local market, Filipinos are so curious about the milk
tea trends and it booms.
• 2009 – several business establishments starting to build up, bringing a a refreshing drinks
to students and it increase the demand right away. After that milk tea shops are now
popular competitors of coffee shops.
• 2011 – international brands starting to opening their PH branches and our locals giving
them a warm welcome.
• 2013 – milk tea reached its peak and maintain its high demand from the customers.
• Food poison happens. After that the government forces a high standard to milk tea
businesses
• 2017 – When milk tea trends bounced back and other international brands opens their
branches here.
• Up to now, milk tea innovations never stop, and this is not just a trend. It is now a daily
necessity of human being.

Basic Requirements and Procedure in
Registering a Sole Proprietor Business
1. Register a business name at Department of Trade and Industry
-Come-up with three (3) business names
2. Search in the DTI’s website if there’s an existing name similar to
yours
3. If your business name is available, fill-up Business Name (BN)
Application Form.
4. Submit your completed BN application form to DTI’s offices/branch
5. Wait for your DTI Certificate of Registration

Submit your completed application form together with the


following:
• Certificate of Business Registration from DTI
• Two (2) valid IDs
• Proof of Address such as Contract of Lease (if rented) or
Certificate of Land Title (if owned)
Register your business in the Mayor’s
Office

Register your business in the Bureau of

Basic ingredients to prepare milk tea
• Tapioca
• Black tea
• Fructose or sugar syrup
• Creamer
• Flavored powders or syrup
• Ice
TAPIOCA PEARL
Tapioca is a starch extracted from cassava root. It is used as
thickening agent in many foods. Tapioca pearls comes from many sizes.
The best texture of tapioca is chewy consistency. Tapioca has a no taste
at all. So the barista usually submerged it to black sugar or any other
flavoring liquid before adding to your drinks.
Tapioca pearl cooking procedure
1. Pour 4 liters of water in a large casserole
2. Bring the water to boil in a stove
3. Add 1 kilo uncooled tapioca pearl to the boiling water
4. Stir the tapioca pearl occasionally to prevent from sticking at the bottom
5. Let it boil or simmer for 30 mins in a medium heat
6. Once the pearl is cooked, turn off the stove and leave it for another 30 minutes inside the
casserole.
7. Rinse the tapioca pearls in running water and drain
8. Place it into clean and air tight container
9. Fill the container with flavored syrup
10. Ready to serve
REMINDERS..
• Make sure to store the tapioca in a cool dry place, keep the lid closed
to avoid any contamination
• Tapioca can last up to 24 hours
• Label the container with correct date and time
• Do not serve tapioca if low quality
• Left over can be store in a chiller
• Can recooked for another 10 minutes
Different types of black tea used for milk tea
• Oolong tea – is a traditional semi-oxidized Chinese tea (Camellia
sinensis) produced through a process including withering the plant
under strong sun and oxidation before curling and twisting.
• Ceylon tea - Ceylon tea is a popular type of black tea that is also
known as Sri Lankan tea. Served as an iced tea or warm, it is a favorite
beverage for many tea drinkers. While Ceylon is known for its bold
flavor, it can vary significantly in taste, depending on the type of tea
and where it's grown in the country.
• Assam – is the popular black tea that is used as the based tea for
different flavors of milk tea drinks
Brewing and preparing your black tea
1. Boil 4 liters of water in a casserole
2. When boiling, put 1 bag of black tea in the casserole
3. Leave the brewing bag for twenty minutes. Then turn off the stove
4. Remove the tea bag after 20 minutes,
5. Transfer it to thermos

PLAIN PEARL MILK TEA
INGREDIENTS:
for 16 oz for 22oz
3 scoop creamer 5 scoop creamer
.75 jigger sugar syrup 1.5 jigger sugar syrup
150 ml black tea 200 ml black tea

PROCEDURE:
1. Combine the creamer, sugar syrup and the black tea in a shaker
2. Stir well the mixture using bar spoon until well mix
3. Mix the 1 cup of ice with the milk tea mixture
4. Shake the mixture on a forward direction
5. Add a scoop of tapioca in a desired cup sizes
6. Seal and serve with tissue and straw
HOKKAIDO MILK TEA
INGREDIENTS:
for 16 oz for 22oz
3 scoop creamer 5 scoop creamer
3 scoop Hokkaido powder 5 scoop Hokkaido powder
.75 jigger sugar syrup 1.5 jigger sugar syrup
150 ml black tea 200 ml black tea

PROCEDURE:
1. Combine the creamer, Hokkaido powder, sugar syrup and the black tea in a shaker
2. Stir well the mixture using bar spoon until well mix
3. Mix the 1 cup of ice with the milk tea mixture
4. Shake the mixture on a forward direction
5. Add a scoop of tapioca in a desired cup sizes
6. Seal and serve with tissue and straw
OKINAWA MILK TEA
INGREDIENTS:
for 16 oz for 22oz
3 scoop creamer 5 scoop creamer
.75 jigger Okinawa syrup 1.5 jigger Okinawa syrup
.5 jigger sugar syrup .75 jigger sugar syrup
150 ml black tea 200 ml black tea

PROCEDURE:
1. Combine the creamer, Okinawa syrup, sugar syrup and the black tea in a shaker
2. Stir well the mixture using bar spoon until well mix
3. Mix the 1 cup of ice with the milk tea mixture
4. Shake the mixture on a forward direction
5. Add a scoop of tapioca in a desired cup sizes
6. Seal and serve with tissue and straw
WINTERMELON MILK TEA
INGREDIENTS:
for 16 oz for 22oz
3 scoop creamer 5 scoop creamer
.75 jigger wintermelon syrup 1.5 jigger wintermelon syrup
.5 jigger sugar syrup .75 jigger sugar syrup
150 ml black tea 200 ml black tea

PROCEDURE:
1. Combine the creamer, Wintermelon, sugar syrup and the black tea in a shaker
2. Stir well the mixture using bar spoon until well mix
3. Mix the 1 cup of ice with the milk tea mixture
4. Shake the mixture on a forward direction
5. Add a scoop of tapioca in a desired cup sizes
6. Seal and serve with tissue and straw
DARK CHOCOLATE MILK TEA
INGREDIENTS:
for 16 oz for 22oz
3 scoop creamer 5 scoop creamer
3 scoop Dark chocolate powder 5 scoop Dark chocolate powder
.75 jigger sugar syrup 1.5 jigger sugar syrup
150 ml black tea 200 ml black tea

PROCEDURE:
1. Combine the creamer, Dark chocolate powder, sugar syrup and the black tea in a shaker
2. Stir well the mixture using bar spoon until well mix
3. Mix the 1 cup of ice with the milk tea mixture
4. Shake the mixture on a forward direction
5. Add a scoop of tapioca in a desired cup sizes
6. Seal and serve with tissue and straw

Ingredients:
120 grams Rock salt and cheese powder
300 ml Fresh milk
250 grams All purpose cream

Procedure:
1. Whip your chilled all purpose cream until stiff peak
2. Gradually add the fresh milk, mix well
3. Then add your RSC powder, mix well until no visible powder
4. Transfer in a clean container. Keep refrigerated
Egg pudding recipe
Ingredients:
62.5 grams Egg pudding powder
62.5 grams White sugar
400 ml Water

Procedure:
1. Combine all ingredients in a casserole, mix well and bring to boil. When boiling, continue to
mix until no lamps. Simmer for 2 minutes then turn off the heat.
2. Cool down the mixture then transfer to desire container. Keep refrigerated

• 0 % - Do not add any amount of fructose or sugar syrup
• 25 % - Less 5 ml fructose from the normal amount
• 50 % - (normal) 7.5 ml fructose for 16 oz and 15 ml for 22oz
• 75 % - from the normal amount add 5 ml of fructose or syrup
• 100 % - Double the amount equivalent of the normal amount of
fructose

fully controls the whole operation. You need to act quickly for you to
manage well the day to day operation. You need to maintain the
quality control of your service. You need to keep your employee
motivated, you are not just a owner, you need to personally manage
your business operation. You also need to keep learning, innovate
products and create new products.
Conduct daily inventory
• Be prepared
- keep shelves and cabinets well organized for you to count the stocks
easily
- keep your inventory updated. Make a opening and closing inventory
• Be organized
- Do a inventory when your store is closed
- Always take an inventory of each section of your store completely before
going to another section
• Be accurate
- You and your manager should take inventory
- check each cases if full. Count the open cases carefully.
