What is White Chocolate?

There are different kinds of chocolate. Dark chocolate has
a dark brown color and a rich, sometimes bitter taste. Milk
chocolate is lighter, and it is more sweet than bitter. But
what about white chocolate? What makes it different?

Obviously, white chocolate’s color is different. Unlike dark

or milk chocolate, it is white or beige. The reason for this is
that white chocolate contains no cocoa solids. Cocoa solids
give chocolate its brown color. In high amounts, such as in
dark chocolate, they can also give a bitter taste. Because
white chocolate has no cocoa solids, it is not brown or bitter
at all.

So if it has no cocoa solids, is white chocolate really

chocolate? Sort of. White chocolate still comes from the cacao plant, like other chocolates. But
instead of using cocoa solids, it is made from cocoa butter. This is a type of fat that comes from the
cacao plant. Candy makers mix cocoa butter with sugar, milk, and sometimes vanilla in order to
produce the white chocolate we know and love.
