Foreword
Post-harvest Technology, Food Processing, Food Technology and
Dairy Technology sectors are indispensable in India for safeguarding
the available perishable produce from distribution losses. Processing is
the brightest wing of post harvest technology that includes value addition
and product development. Post Harvest Management and Processing is
the need of the hour in order to mitigate post harvest losses and also to
improve the economic background of the country by converting the
farmers to an agro-processer and ultimately an agro-entrepreneur. The
development of Post Harvest Technology and Food Processing in the
country would undoubtedly improve the socio-economic status of the
small and marginal growers and would also support as an enterprise to
large farmers and entrepreneurs. By adoption of the technology, the
farmers can not only be benefitted by selling their produce during off-
season but can also add value to them and earn upto 10 times of their
normal earning. Enhanced demand of processed food products coupled
with varied lifestyles have made widespread adoption of Post Harvest
Technology very crucial. Further, this will generate employment in these
sectors.
In this direction, the efforts of the editorial team in compiling the
book series “Advances in Food Sciences and Post Harvest Technology”
are appreciable. The contents of the book are contributed by authors of
renowned institutes from all over the world. It would be helpful for the
students studying the courses in B.Sc., B.Tech., M.Sc., M.Tech. and Ph.D.
It would be helpful for the researchers in this discipline to generate new
ideas and also, be helpful for those entrepreneurs, who sought innovations
in their venture.

Foreword / x

I believe that the book would be helpful in dissemination of recent

knowledge and information to the readers. The content of the book is
quite relevant and exhaustive with creative blend of knowledge and
skills. Illustrations are quite impressive. Descriptions and explanations
generate greater interest to provide advanced applications to the students
and practitioners.

Preface

Food preservation has been proficient in different parts of the world

since time immemorial. Like many other industrial sectors, technological
progress in food preservation achieved its strength and momentum only
after the outbreak of the First World War, when supply of large quantities
of food need to be arranged for the soldiers in the warfront. The 2nd
World War added another strong impetus to the growth of food industry.
Although, the industry initiated in a problematic war situation, now it is
considered to be of perennial importance. It also assures a stable market
to the growers as well as consumers at different corners of the world
and skips the situation of market glut, extreme fall of price and wastage
due to spoilage. However, fruits and vegetables preservation industry
is still at its beginning in India. Unfortunately, most of the available
research is scattered in scientific papers, reports and technical publications.
Our country India is thriving for improved processing technology. The
highly perishable horticultural crops need to have enhanced processing
technologies. Latest processing information have to be disseminated on
a country-wide scale through proper training and demonstration so that
full advantage of it can be availed by the interested entrepreneurs in this
industry. The recent trend in the changing eating pattern of our population,
mainly due to migration from village to cities and increasing number of
working women has flexed a large canvas for the food technologists to
act. People are much more health conscious and facing acute shortage of
time leading to inclination towards convenient food like ready to eat
and ready to drink and ready to cook food, specialized menus like snacks
customized for various ages and physical requirement, etc. are coming
as hot cake. The challenges offered to develop innovative and authentic
food, those are being grabbed by new generation entrepreneurs. Under
this perspective, the book “Recent Trends and Advances in Food Science
and Harvest Technlogy” forms a strong basis for students, researchers
in the food processing field on which they may further explore and
improve food standards.
