ment. Soya protein isolates and concentrates are re-
cognised by the FAO/ WHO as having a high
nutritional quality such that they can be used as
the sole source of dietary protein without sup-
plemental amino acids. They have a nutritional
value comparable to high-quality animal pro-
tein sources such as beef and milk.

ADM manufactures a complete range of


soya products but of particular interest to meat
processors are Pro-Fam isolated soya proteins
(90% protein content on a moisture-free basis),
Arcon powdered and textured soya concen-
trates (minimum 65% protein on a moisture-free
basis) and TVP textured soya flours. These
products offer:

Finally, when xanthan gum is used in com-
bination with equal amounts of locust bean
gum, it is possible to create rubbery, elastic gela-
tine-like gels that can be used in Pts, Aspics,
Brawns etc. In such products, the total gum
concentration should be approximately 1%.

Lecithins
In Canned Meats and Meat Fillings, and when
steam heating Prepared Meals, the addition of
lecithin helps prevent the separation of fat.
ADMs de-oiled Ultralec is very suitable,
although the liquid grade Adlec may also be
used. The recommended usage levels are 1 - 5%
(based on fat) in a water-in-oil emulsion and
5 - 10% (based on fat) in an oil-in-water emulsion.

Speciality oils are available from ADM for use

ADM NovaXan xanthan gum is a


thickener and stabiliser that is ideal for use in
meat applications. The unusual, pseudoplastic
rheology of xanthan gum solutions means that
they are widely used for the suspension of
carrageenans whilst retaining the flow charac-
teristics needed in pumping brine formulations
used for the multi-needle injection of Hams.
The xanthan gum also ensures homogenous
distribution of the water-binding carrageenan
throughout the meat piece.

At an addition rate of 0.1 - 0.3%, xanthan


gum can be used to thicken the Marinades,
Sauces and Gravies in prepared meat dishes.
When applied as a solution, xanthan gum will
provide an even coating to Meat Joints to help
reduce moisture loss during cooking. Xanthan
is stable to the effects of heat, high salt levels
and enzymes, making it the thickener of choice
in this type of application. Since it will also
stabilise fat emulsions, xanthan can be used in
the production of coatings for Sausages.
