Curd Pie
You will need:
3 eggs 500g. curd 200g. butter (for baking) 2 glasses sugar 3 glasses flour 1 pack baking powder (5g. packet) 1 pack vanilla sugar (5g. packet) 2 bananas A little bit of jam (better for it to be sour like currant one) Starch (corn flour might fit too) Preparation: DOUGH: pour 3 glasses of flour, 1 glass of sugar and half the packet of baking powder into a bowl. Put butter on the plate and heat up for 30 seconds in a microwave. It does not have to become all liquid. It just have to become soft. Add the soft butter to the bowl and knead it with flour and sugar until it becomes like bread crumbs. If it lumps add a little bit flour. Once you got the crumbs put the bowl into the freezer for 15 minutes. (freezer, not fridge *wink*) CURD FILLING: if the curd is beady let it through a mincing machine, or try to batter it into a soft mass. In a separate bowl add 3 eggs and 1 glass of sugar together with the vanilla packet. Batter it into a flowing mass. Add it to the curd and add a little starch into it (from eye. Around 3-4 spoonfuls). Mix the mass well. (If need be you can mix it with mixer but better to do it by hand). Prepare for baking: Clad the form in baking paper. Take out the dough crumbs from the freezer, and around half of it put in the baking form. (make it like a base) then add a thin layer of jam on it. After that, pour some crumbs on it to hide the jam, and pour all the curd masse on it. Next, slice the bananas and put the slices atop the curd mass. Spread them around more or less evenly. Lastly put the remaining crumbs atop the pie also spreading them nicely. Put the form into the heated oven and bake (200 C) it till it is done. (If the top of the pie burns while baking you can add a wet paper atop the pie. It will lessen the burning) Bon apetit!
