TSW give examples of careers associated with cake decorating and the bakery business. TSW identify the education and training programs available to obtain a career in cake decorating. TSW safely and effectively demonstrate the use of equipment currently used in the industry. TSW point out professional presentation techniques that are desirable to the consumer.

Strategy and Rationale for the lesson:

This lesson gives students a visually engaging and hands on approach to the cake decorating industry. They will become familiar with possible training programs and careers related to the field. This lesson is the 3rd of 5 lesson plans designed to educate students about owning or working in a

bakery type setting. Students will use knowledge learned in this lesson to eventually design and create their own cupcake. Students will model appropriate techniques and use of equipment throughout this lesson and unit.

I believe that this lesson plan will lead to student understanding and content retention through a visually engaging introduction, multiple demonstrations, and hands on learning activities. Most importantly, this unit is designed to spark student interest in a quickly growing hobby and career path. What careers are involved in the bakery production and bakery service industry? What are the consequences of selecting a career in the bakery production and bakery service industry?What leadership qualities are needed to be an entrepreneur in the bakery production and bakery service industry? What equipment is needed for efficient, safe, and economical cake production? Why is it important to follow safety procedures and requirements when selecting and using food production equipment? What are the current food presentation standards of the bakery industry? What techniques are needed to achieve the desired appearance of the food?

Assessment:

Students will demonstrate proper use of equipment and tools to frost and decorate a portion of their baked products.

Unit Goal: At the end of the unit students will present a custom cupcake and business plan using all of the skills they have acquired throughout the unit, including the frosting and decorating techniques presented during this lesson. Cupcakes (baked by students in previous lesson)

Materials needed:

Frosting (make by students in previous lesson) Pastry bags Frosting Tips (various sizes and styles) Rubber bands Masking tape Sprinkles/Garnishes Food Coloring

Procedure/activities I have created a website that includes everything the students will need (links, powerpoints, videos, pictures, instructions etc.) They can refer to this link at anytime.

DAY 1 1. Have the tools that will be used in the demonstration on each table as well as a label. Ex. Coupler, pastry bag, star tip, round tip, petal tip, angled spatula, spatula etc. (this will help student visualize the tools to be used.) 2. Show multiple pictures and videos about various decorating techniques

available. 3. Demonstrate frosting cupcakes using different techniques. - include how to fill a pastry bag, attach and change tips. - allow students to use laptops to search different frosting techniques on youtube. - refer students to http://shhspastriescakeshop.weebly.com/cupcake-warschallenge.html for links/ideas. - include safety restrictions for use of equipment and ingredients. 4. Allow students to practice techniques on the cupcakes they have prepared or on wax paper. (Demonstrate saran wrap technique) - Students must practice until they feel comfortable. 5. Cupcake Wars - Students must decorate their signature cupcake for the following days Cupcake Wars Day 1 Assessment:

Each group must display their finished cupcake along with the creative description they wrote the previous day marketing their custom cupcake.

They will take a picture of their cupcake using a smart phone/laptop/camera etc. Instructor will take images and put into survey monkey. Survey will then be emailed out to students & faculty OR put on the school website.
