Spaetzles

Ingredients! ! 3 Eggs! 1 Cup Milk! 3 Cups Flour! Teaspoon Salt! Teaspoon Nutmeg! 2 Tablespoons Extra Virgin Olive Oil! 2 Tablespoons Butter! 1 Tablespoon Seasoned Salt!

Serves 8! ! Fill heavy bottom pot full with water and a pinch of salt. Set to high heat.! ! Beat eggs until foamy and then combine with milk. Mix together our, salt and nutmeg. Add to eggs and milk a little at a time. The dough will be very stiff and elastic. Consistency of the batter/dough is the most important thing. If batter seems too thick, add 1 tablespoon of water at a time to desired consistency. Let dough stand for 15 minutes.! Fill the square basket of the Spaetzle maker and place over a pot of boiling water. As you slide the basket back and forth, the tiny dumplings drop into the boiling liquid. When done, they will rise to the surface (about 2-3 minutes). Use a large slotted spoon or a strainer to strain them out into a large bowl. Repeat the process until all of the dough is used. If the Spaetzle has become too cool during the process, put the covered bowl in the microwave for 30 seconds. ! Working in batches, heat 1 tablespoon each butter and olive oil in heavy bottom saut pan over medium heat. Saut spaetzles, ! seasoning with seasoned salt, until ! golden brown.! !
