Souse The Pig

Last night I made what I was told is one of the top five meals I've ever cooked.

Pork chops in the most delicious marinade ever (recipe below).

Roasted red beets, golden beets, and butternut squash.

Roasted cauliflower, green beans, and grape tomatoes.
I have to admit, it was pretty amazing.  The beets were so fresh, the stems and leaves were still attached, dirt clinging to their skin.  And the butternut squash was sweet and delicious. 

Cauliflower is my favorite roasted vegetable, and pairing it with the green beans and grape tomatoes made not only a pretty dish, it was sooooo good.
Ed was a master at the grill and cooked the pork chops to perfection.  Juicy, with just the right amount of crispy grill marks.  And I may never grill another thing without this marinade.  The quantity below is for 4 thick pork chops - I used boneless, about 1" thick, center cut.  Once I mixed the marinade, I put the pork chops in a bowl (I had 12 pork chops, so I tripled the recipe), poured the marinade over it and put it in the refrigerator for about six hours.

Marinade:
1/3 cup soy sauce (I used reduced sodium because that's what I had on hand)
2 tbsp brown sugar
2 tsp Worcestershire sauce
1 tsp Dijon mustard
2 garlic cloves, minced 
¼ tsp black pepper

This would work well on chicken and steak, too.  Try it and tell me what you think!
