LOIN can be tough, crockpot, low/slow. PORK SHOULDER has 2 diff cuts: PICNIC (bone-in/produces chunks of meat/longer to cook) and BOSTON BUTT (no-bone/stringy meat, cooks quicker). SHANK (bone-in, more flavor, less fat/gristle, tougher, bake low and slow). HOCKS (yield almost no meat, use hocks for deep rich robust flavor, but you'll need to include add'l ham pieces/chunks if making a recipe). COUNTRY HAM (dry-cured in salt, smoked, aged for at least six months, very salty).
