Puff Puff is a popular African street food that is insanely tasty. This version is made with overripe plantains. It is a great way to use up overripe plantains. I must say here that it is slightly addicting. I had to stop my kids from consuming too much. They didn't want to stop eating. It may happen to you too.

Ingredients - Plantain Banana (Nendra Pazham), Maida (1.5 cup), Rice Flour (4 tbsp), Sugar (4 tbsp), Turmeric Powder, Cardamom, Baking Soda, Oil, Water,Pink Salt. Method - 1. Peel overripe banana skin- slice vertically 2. In a bowl combine maida,roasted rice flour, sugar,turmeric,cardamom powder,bakg soda, salt - mix 3. Add water- whisk batter without any lumps -thick consistency 4. Heat oil in a kadai-dip slices & coat batter-gently drop in oil 5. Fry on both sides till golden colour. Done!
