Hot dogs wrapped in bacon! I made them to offset the vegetarian quesadillas we were having last night. (which were very good by the way). I made them as a joke for the meat eaters, (I mean hot dogs wrapped in bacon? A complete FATfest) but they were really a great little appetizer. I'll make them again . Bacon Jam: Brown up 1 1/2 lbs chopped bacon Remove bacon and set aside Drain fat but leave 3 tablespoons in cast iron Fry up 1 sweet onion diced 2 tablespoons minced garlic Add bacon back into pan 1/2 cup maple syrup  1/2 cup black coffee 1 cup  Bachan’s Honey Sweet Japanese BBQ sauce 1/3 cup brown sugar  1 teaspoon flake red pepper  1 teaspoon cinnamon  Slow simmer for 45-90 min. Basically you want it to thicken and part it with a spoon. When it’s to the consistency you desire, remove from heat. Jar it or use it.   Griddle set on medium heat and seasoned with the bacon fat you drained from earlier.
