Barbacoa

3 lbs chuck roast, cut into 2 inch chunks
1/2 cup beef broth (or chicken broth or even water)
2 tbsp of chipotle peppers in adobo sauce
4 cloves garlic
2 tbsp apple cider vinegar
Juice of 1 lime
1 tbsp oregano
2 tsp cumin
2 tsp salt
1 tsp black pepper
1/2 tsp ground cloves
2 whole bay leaf

Cut chuck roast in 2 inch chunks. Season with salt $ pepper. Sear on high heat. Place all other ingredients in the blender except bay leaf. Blend till smooth. Place all beef back in pressure cooker along with the sauce and 1-2 cups of beef broth (enough to almost cover the meat). Pressure cook on medium high for 45 min or slow cook for 3-4 hours. Shred beef, add broth back to the meat.
