BREAKFAST AND BRUNCH

● 4 English muffins, split and toasted
● 8 oz cooked lobster meat, chopped
● 4 large eggs
● 2 tbsp white vinegar
● 1 cup hollandaise sauce (prepared or homemade)
● 1 tbsp truffle oil
● Fresh chives for garnish
INSTRUCTIONS:
Preheat the grill to medium heat.
Poach eggs in simmering water with vinegar until whites are set, about 3 minutes.
Place English muffin halves on the grill to warm. Top each muffin with lobster meat and a poached egg.
Drizzle with truffle hollandaise sauce and garnish with fresh chives.
