The increasing questioning of meat consumption and the appreciation of sustainable dietary patterns (veganism, flexitarianism, organic consumption, etc.) is the impetus for Jörg Albrecht's reconstruction of the history of “alternative foodways” in Germany from the perspective of religious studies. Along the landmarks of organized vegetarianism in the 19th century, whole foods and natural foods in the 20th century, to the “organic hype” of the recent past, he traces, with a theory-based approach, the transformations of formerly nonconformist innovations and practices into supposed mainstream phenomena, exploring the questions: What exactly was adapted and made compatible, and how? What factors influenced these processes?
