here, remember for a perfect bhuna roasted cumin and coriander plays a big role in flavour. Bhuna is all about the bhun, I mean sauté the onion until it can no longer be sautéd that’s a game changer. Try this once and you will never go back to the old style. No tomatoes please 🚫

◾️I whole chicken cut into curry size
◾️4 tbsp Oil
◾️4 Bayleaf
◾️1 tsp Punch Parun
◾️1 tbsp Garlic Paste ( I minced mine)
◾️1 tbsp Ginger Paste ( I minced mine )
◾️3 Small Onion
◾️1 tsp Turmeric
◾️1 tbsp Garam Masala ( my own blend) feel free to use the shop bought

There are so many different methods to make an “chicken bhuna”, some of which are authentic and some aren’t. Now what we call this is “Bhunawa Chicken”, meaning a chicken which has been cooked out (aka bhuna’d).

This dish is 10 times better than any store-bought version and is so unbelievable easy to make, perfect for a lazy midweek dinner as it comes together within 15 mins (excluding prep).

Out of all my classic Chicken Curry dishes, this one was the biggest hit with my family and ironically was the easiest to make so let’s get into it.

INGREDIENTS:

- ¼ cup oil/ghee (I prefer ghee)
- 1 ½ kg chicken
- 3 tbsp ginger garlic paste [½ for marination, ½ for masala]
