Get Well Soon

I adore my neighbors. 
They have been so helpful since we moved in and have even adopted my daughter as one of their grandchildren:]
So when Mr. B got ill this past fall, a simple get well soon card wouldn't suffice.
I put my lil girl to work {she loves helping in the kitchen}
and made some super yummy cookies...Mr. B has a sweet tooth!

Rather than putting them on a flimsy paper plate I decided to make them have more feeling by dressing them up with some ribbon and a canning jar {with a wide opening.}

I sprayed the lid with silver paint and wrapped a "happy" colored ribbon around it.

I then made a card with my cricut and we went over for a visit with The B's.
It wasn't much but, a little extra effort is sure to show how much you care.
Mr. B was very grateful...and he did Get Well Soon:]

Christmas Eve Cookies

Last week, I needed help finding some yummy cookies to bake....and help I received! I know my hubby Santa is going to LOVE these cookies:

One of our lovely readers {Noelle} suggested these cookies and they look sooo pretty & scrumptious! I hope mine turn out as cute.

Christmas Eve Cookies

Last year was the first year I left cookies out for Santa {in my adult life.} My daughter was just old enough to understand {somewhat} the concept of Santa.
We decorated sugar cookies together and I held my breathe {being a perfectionist} and let her go at it, discovering the joys of frosting and sprinkles.
I kept to my whimsical [or Dr. Suess as I call it] theme of red & BRIGHT green... and the cookies turned out great!


 However, this year I want to wow Santa and make a cookie recipe that will leave him wanting more;) 
{dont get me wrong, sugar cookies & chocolate chip cookies are fabulous!} BUT, if you have a recipe that you love and are willing to share with me PLEASE leave a comment and/or link!

Next week I will feature the recipe that I will be making on Christmas Eve...that will be sure to leave my St. Nick one happy boy:]

Holiday Goodies

Around this time of year it seems our {newish} neighborhood 
goes all out giving each other yummy baked goods.
I learned last year that waiting to the last minute means being RUSHED so,
I already have my neighbors treats ready to go.
This is one of the treats in our little tin of temptation.

Maple Nut Fudge

Ingredients

  • 2 tablespoons butter
  • 2/3 cup NESTLE® CARNATION® Evaporated Milk
  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon salt
  • 2 cups miniature marshmallows
  • 1 (12 ounce) package NESTLE® TOLL HOUSE® Premier White Morsels
  • 1/2 cup chopped walnuts
  • 1 1/2 teaspoons maple flavored extract
  • 50 walnut halves or pieces

Directions

  1. LINE 13 x 9-inch baking pan with foil.
  2. COMBINE butter, evaporated milk, sugar and salt in medium, heavy-duty saucepan. Bring to a full rolling boil, stirring constantly, over medium heat. Boil, stirring constantly, for 4 1/2 to 5 minutes. Remove from heat.
  3. STIR in marshmallows, morsels, nuts and maple flavoring. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan. On top of fudge, place nut halves in rows spacing about 1/2 inch apart. Press into fudge; refrigerate until firm. Cut into squares with 1 nut half per square. 

Enjoy the holidays with this yummy twist on fudge...one of my favorite flavors!

Cheesy Bits

I was browsing through this cookbook a few weeks ago at the library, and I found a recipe that I thought my ultra-picky stepson might like. Using refrigerated breadstick dough, string cheese and bottled marinara sauce, it was called "mini-calzones". Basically, you wrap the dough around halved string cheese, and bake, then serve with the sauce for dipping.

I've blogged about my opinions of convenience foods before, so of course you know, I'd have to put my own twist on this one. I looked briefly for "pop'n'fresh" breadstick dough in the store, but couldn't find any here locally. So I made my own dough with the following ingredients (my breadmaking process is here)
  • 3/4 cup very warm water
  • 1 TBSP active dry yeast
  • 1 tsp salt
  • 1 TBSP sugar
  • 2 or 3 cups all purpose or unbleached flour
  • 1 TBSP olive oil
In addition to the bread dough, you'll need  7 mozzarella string cheese sticks cut in half length wise and your favorite marinara or spaghetti sauce. You might also like to add some other pizza toppings. I made about half of mine with pepperoni in addition to the cheese.

This recipe made about 14 cheesy bits.
 
 After your dough is mixed and has risen once, roll into snake-like strips and wrap around each half slice of cheese
Squeeze the dough around the cheese stick (and a piece of pepperoni, mushroom, pepper or other topping if you like) and seal the ends. Try to seal it well, so the cheese won't ooze out as it melts. It won't ruin the experience if it does ooze a bit, but it will make a bit of a mess.
Place on lightly greased baking sheet or pizza stone, and let rise briefly.

Bake at 400°F for 10-12 minutes until golden brown.
Serve with hot marinara sauce for dipping.

We LOVED this. I made it for lunch on a Saturday afternoon, and the 14 little cheese-filled bread sticks was just barely enough for the three of us. When I make it again, I'll make a few more (using a full cup of water for the dough) or serve it as an appetizer or with a dinner salad.

Wacky Chocolate Cake

`Today is my mom's birthday and I decided to make her a recipe from my 9th grade home economics class...Wacky Chocolate Cake. It is a perfect recipe for kids to make - no messy bowls to clean up.

Use an ungreased 9x13 cake pan.

Mix dry ingredients into the cake pan. Yes! Right in the baking pan.
2 c. sugar
3c. sifted flour
1t. salt
2 t. baking soda
1/4 c. & 2 Tbls. baking cocoa

Mix these ingredients very well with a wooden spoon or rubber spatula. Then make 3 holes in the cake mix. Put each ingredient into the holes as follows:
Hole #1 with...2 Tbls. distilled vinegar
Hole #2 with...2 teas. vanilla
Hole #3 with...2/3 cup vegetable or canola oil



THEN...Pour 2 cups of water over all the ingredients. MIX WELL! It should look like this...



Using a paper towel or napkin, wipe the inside edges of the cake pan so the cake is presentable after baking.

Bake for 30 minutes at 375 degrees.

This cake will be topped with White 7-minute Frosting per Mom's request - AND IT IS HER BIRTHDAY so she gets to choose.

Make a Cake

For my daughters 1st Birthday, I wanted it to be special and very family oriented. I decided that I would make her birthday cake and smash cake...even though I had ZERO experience in cake decorating.
I had some family advice and a good instruction book from Wilton :

I was pretty proud that I can add cake decorating to my list of 'crafting' abilities:]
