just another monday

I got a lot of questions on where did I get them etc so I thought that I would share it here too.  I got them made at Paper Coterie.  They are called Memory Keepers and I have already filled both of the ones pictured above. I also ordered another one last night with wedding pictures on it, that way I can place DVD's, picture CD's, and pictures in them to cherish forever in one spot.  I found a coupon online that is VALID until November 13th, 2011.  Click here for the details and also go to Paper Coterie to check out the memory keepers.  I think that they are great quality and will last years to come.

~ One day last week I made Chicken and Dumplings in our crock pot and this meal was SO easy and yummy!
Rachel posted it on her blog a few weeks ago and so I thought that I would give it a try.  She found the recipe via Pinterest.  I am linking you to her post so you can see the recipe and try it out!  I added the wide egg noodles and it was so good!
She has a recipe for Sticky Buns that I want to try too!

~ This weekend we were very productive with Crew's nursery.  We ordered the crib and chest for his room and found a distressed baby blue dresser for his room.  I can't wait to get started in his room.

Grayson can NOW get on the toilet all by himself.  I found him on top of the seat on Friday afternoon.  I asked him how he got up there and he showed me.  I was shocked that he could get up there all by himself.

Proud Mommy Moment and Recipe

As I mentioned yesterday Grayson is in the local Peekaboo Magazine and I am one proud mommy so I thought that I would share it with all that cannot see it. 


If you like Girl Scout Thin Mint Cookies you will love this recipe!
Walmart has limited edition Dark Chocolate and Mint Baking Chips and so this week I picked them up and the recipe on the back is AWESOME!  I made the cookies on Monday night for some friends and they taste just like Thin Mint Cookies.

I also think you could make the recipe and add Toffee Chips or Peanut Butter Chips instead of the Mint Chips in case you don't like mint flavored cookies.  

Here is the recipe:
Mint Chocolate Delights



2 cups all-purpose flour
2/3 cup Nestle Toll House Baking Cocoa
1 tsp. baking soda
1 tsp. sea salt
2 sticks of butter
2/3 cup of sugar
2/3 cup of brown sugar
1 tsp of vanilla extract
2 large eggs
1 2/3 cups (10oz package) Nestle Toll House Dark Chocolate & Mint Morsels
 
Preheat oven to 325 degrees
 
Combine flour, cocoa, baking soda and salt in small bowl. Beat butter, sugar, brown sugar, and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by well-rounded tablespoon onto ungreased baking sheets.
Bake for 11 to 13 minutes or until cookies are puffed and centers are set. Cool on baking sheets for 2 mins; remove to wire racks to cool completely.

NEW DINNER IDEA

So for the past 15 weeks that I have been pregnant I have not enjoyed cooking or eating any other food but cereal, toast, grilled cheese, or peanut butter and jelly sandwiches. The more bland the food the better. I really have not cooked at all so Chad has been left either joining me in the bland foods or he stops and gets take out. Not tonight I actually cooked. Chad was missing home cooked meals so I told him I would cook for him tonight before he leaves for a business trip tomorrow. I made his favorite meal, Spicy Peanut Penne. If you like peanut butter and pasta you will love this meal! It doesn't take long to make you just have to have patients when making the sauce. So if you are looking for new recipes to try with your family give this one a try! I know that I am always looking for new recipes!

Spicy Peanut Penne Recipe
Ingredients you will need:
1 box of Penne Pasta
1 pound of boneless chicken
2 tablespoons of Cornstarch
2 tablespoons of Milk and you may need a bit more to help thin out the sauce
3 tablespoons of Peanut Butter
1 tablespoon of Soy Sauce
1 tablespoon of Honey
Dash or a Splash of Lime Juice
Garlic Powder for flavoring
Cayenne Powder for flavoring
Preparing:
1. Cook and Drain Pasta
2. Cook Chicken and set aside
3. In one bowl add 2 tablespoons of cornstarch and add the 2 tablespoons of milk just before you add it to the pan!
3. In another bowl add the following peanut butter, soy sauce, honey, lime juice, garlic powder, and cayenne powder. Stir and set aside
4. Once the chicken is fully cooked remove from the pan and lower your heat to low. Add cornstarch milk mixture to the pan and continue to stir as it will stick if you don't. Add the peanut butter mixture from step 3 to the pan and continue to blend together until it is a sauce texture. If you need it to thin up the sauce add milk and once it is warm add the chicken.
5. Add pasta to sauce and serve!
