Pineapple Tart / 风梨酥 
(Makes 65 cookies) 
Recipe:

Wet ingredient 
240g butter, room temperature
50g icing sugar
1 egg, room temperature

Dry ingredient: 
200g all purpose flour 
200g cake flour 
30g g cornstarch 
1/2 tsp salt

Filling ingredients: 
400g Pineapple, finely chopped or blend
3 tbsp sugar 
3 tbsp brown sugar 
1 star anise 
1 cinnamon stick

Method:
1) In a bowl add in wet ingredients, beat the mixture till fluffy. Add in the dry ingredients and mix until just well combined, then knead into soft and smooth dough. Cover and chill the dough for about 30 minutes. 

2) Meanwhile prepare the jam for filling. Add all the filling ingredients into a pot. Cook over low heat & stirring occasionally to prevent sticking to bottom. (It takes more than Pineapple Tart, The Jam, All Purpose Flour, Icing Sugar, Star Anise, Cake Flour, 1 Egg, Cookies Recipe, Corn Starch
