I love this series, these are genuinely something I eat for lunch multiple times a week. They are filling, delicious and easy, perfect for keeping me balanced all afternoon. This prawn cocktail version is another HIT.

340kcal and 25g protein 

You will need to serve 1
1 wholemeal pita
Sweet gem lettuce
1/4 Avocado 

For the filling 
75g cooked prawns 
1 heaped tbsp thick yoghurt 
1 level tbsp low sugar ketchup 
1 tsp American mustard 
Dash Worcestershire sauce 
1 spring onion or chopped chives 
A little squeeze of lemon 
1/4 tsp smoked paprika 
10g feta 
2-inch cucumber, deseeded and diced 

Simply mix the filling ingredients together and season to taste with lemon juice, salt and pepper. Toast the pita, add the little gem, a Gem Lettuce, Emily English, Prawn Cocktail, Spring Onion, Worcestershire Sauce, Low Sugar, Smoked Paprika, Lemon Juice, Healthy Lunch
