When I was taught this in a cooking class in Tuscany, I was really kind of surprised, but felt that it made sense. To this day, this is how I make my pasta. ⤵️

Do not wait for the water to boil. As soon as you start filling your pot with water, add your pasta and begin heating it.

Once it’s at a rolling boil, spin it around and cook it for 1-2 more minutes until it’s all dente.

Be sure to drain the water and save a little for your pasta sauce and now your pasta is cooked!
